SUPER-EASY MIDWEEK MEAL ~ Mirin & Ginger Tray-Bake Salmon with Greens for 2
Combine in a bowl:
• 2 tbsp mirin
• 2 tbsp soy sauce (or gluten free soy or tamarind)
• 1 tbsp honey or syrup (fruit/maple/rice malt etc)
• 1 crushed garlic clove (or 1 tsp garlic purée)
• 1 tsp grated ginger (or as much as you fancy if you love ginger like me!)
You'll also need:
• 2 salmon fillets
• 2 pak choi, quartered lengthways
• a handful of other greens - I used green beans
Place the salmon fillets in the dressing and coat, and leave in the fridge for half an hour to soak up the flavours (perfect to prep this when you get the kids' dinner on, ready to cook when they go to bed!)
Once the kids are in bed (😂) heat the oven to 180C fan (200C otherwise).
Arrange the salmon and green veg in a baking tray and pour over the remaining dressing over the fish and veg. Cover in foil and pop in the oven for 20 minutes.
Meanwhile, cook your rice or noodles - I used jasmine rice tonight which took 15 minutes - perfect timing! 👌

Today it’s the turn of Padstow- second of the West Country set I am doing. I confess I am only halfway through the set at the moment with the next two pieces still being in the early stages so it’ll be a few weeks before they appear. Anyway, swipe to see the poster version and guess what? I need your help again with a Padstow strapline! I believe ‘Padstein’ is a common one but I think I might swerve that one for now as much as I’m sure Mr Stein would enjoy the reference!
I think people must think of this as responsible fly tipping!! I’m mean are people so stupid that they think leaving a double glazed window at a clothing bank is ok ? Just because you haven’t chucked it in a lay-by doesn’t mean it doesn’t have to be cleaned up and that all costs money . Half of the things left here could have been recycled. If you can’t make it to your recycling centre ask someone to take it for you . These bins provide a great service for people in need so if you have old clothes and it’s full . Take them home and try another time , don’t just dump them by the side . They get wet and are of no use to anybody . 🌖 Waning gibbous moonrise in real-time, filmed over Barnstaple
Apparently, during the total lunar eclipse on the 20th, a meteor hit the moon. Researchers are now working to narrow down the crater's location.
It's estimated that the meteor was about the size of a football and left a crater around six miles across! 😮
Unfortunately, I didn't capture any of the eclipse, because it was cloudy 😒
