Good morning! How to Make CREAMY STEEL CUT OATS is up on my website ☺️ I’ve been loving steel cut oats for breakfast and for me, they NEED to be creamy! It’s a super simple recipe, 4 ingredients and naturally sweetened. I like to blend medjool dates into the milk, it takes an extra step but it’s totally worth it as it adds a natural sweetness throughout the porridge 😍

Staple US diner food - veggie burger and sweet potato fries
Last nights Zucchini Fritters, also called Frittelli in Italian! 🇮🇹 These are a #glutenfree version! We used #chickpeaflour instead of regular flour & it tastes great plus gives the same desired texture!!! 💁🏻♀️ We used zucchini and zucchini flowers from our garden 🌿 Also these can be made #vegan by omitting the eggs as the chickpea flour holds well! ————————————————————————
Fritter ingredients: grated zucchini, chopped zucchini flowers, garlic, parsley, basil, salt, black pepper, #parmesan cheese, chickpea flour, 2 eggs and baking powder... ALL the ingredients get mixed together in the same bowl, then warm a pan up with oil... you can use #coconutoil or #sunflower as they are both recommended for higher temperature cooking and better for you than vegetable oils such as Soy or Canola 🙅🏻♀️... We used a scooper to evenly portion our batter, cooking 2 minutes per side on medium heat or until browned! These are so yummy with dipping sauces as well 😋 #ketchup

🥗 Salad with Quinoa & Chickpeas
⏲ Under 30 mins | Serves 2-3
I’ve been so busy these past two weeks moving & haven’t been to the store in so long 😭 Finally ran to @heb during my lunch break & picked up a few things for tonight’s dinner! Definitely satisfied with this delicious salad 😋
Salad Bowl Deets👇🏼
1 bag (6 oz) Baby Spinach Spring Mix
1/2 cup Tricolor Quinoa
2 Zucchini’s, cubed
8-10 Cherry tomatoes, halved
2 Avocados, sliced
1 can (15 oz) Chickpeas, drained
Set the oven to 400 degrees. Drain and rinse the chickpeas & add to a mixing bowl. Add in avocado oil, smoked paprika, & garlic powder (I honestly just eyeball it & base it off of how flavorful I like it!) Mix together, spread in a baking sheet, & pop it in the oven for roughly 25-30 mins!
While that’s going, cook the quinoa in 1 cup of water until all is absorbed. Chop all the veggies!
In a plate, place mixed greens, quinoa, zucchini, cherry tomatoes, avocado, & roasted chickpeas. Sprinkle over some more smoked paprika & garlic powder. Drizzle hemp seeds, lemon juice, avocado oil & TADA!

🍒 Vanilla crepes filled with coconut yogurt and raspberry sauce 📷 by @xanjuschx 🚨🚨Recipe: Vanilla-Crêpes:
75g spelt flour
70ml almond milk
70ml sparkling water
vanilla extract to taste
mix everything and Let the dough rest for 10 min.
Heat a 10-inch crêpe pan or nonstick skillet over moderate heat. Brush the pan with some coconut oil. Pour in a scant 1/3 cup of the crêpe batter and immediately rotate the pan to evenly coat the bottom. Cook the crêpe until lightly browned on the bottom, about 45 seconds. Flip the crêpe and cook until brown dots appear on the other side, about 15 seconds longer. Transfer the crêpe to a large baking plate covered with parchment paper. Continue making crêpes with the remaining batter, brushing the pan with coconut oil as needed.

Savoring the remainder of the weekend the best way I know how...and currently that is with a bowl of maple hazelnut oats. I kind of threw a bunch of other optional things in it too, but the base alone was all the yum one could want. 🤤
Maple Hazel Nut Oatmeal
1/2 cup rolled oats
2 tbsp chopped roasted hazelnuts, divided
2 tsp maple syrup
1/2 tsp cinnamon
1 tsp ground flaxseed
1 tsp maca powder (optional)
1 tbsp chopped dried cherries (optional)
1/8 tsp salt
1 cup almond milk
1 mashed banana 🌱
In a saucepan, add in all listed dry ingredients and mix together evenly. Add in the remainder of the ingredients, reserving 1 tbsp of the chopped hazel nuts to top oats for serving. Bring mixture to a simmer and allow to cook for about 3-5 minutes. Mixture will continue to thicken as it sits to cool, so if you need to adjust consistency to make it a little thinner, add 2 tbsp at a time of extra almond milk. Top as desired, but I highly recommend some of the remaining hazel nuts and extra maple syrup for some extra yum. 🥣

In my salad → 1 cucumber, 1/2 avocado, big handful of baby tomatoes, some chopped red onion, homemade banana peppers, and lots of salt, pepper, apple cider vinegar, and olive oil 🥒🍅🥑

Creamy Kale and Leek Pasta Sauce
(Serves 4-8. Makes 4 Cups of Sauce)
375g chopped raw cauliflower florets
1 onion sliced
1 leek sliced
2 Tbsp coconut oil (or soaked cashews)
1/4 tsp dried thyme
1/8 tsp cayenne
2 and 1/2 cups vegetable stock
1/2 tsp kala namak salt
2 Tbsp nutritional yeast flakes
2 crushed garlic cloves (or 2 tsp crushed garlic)
100g torn kale leaves (hard stalks removed)
Place the cauliflower, onion, and leek on a lined baking tray and drizzle with the coconut oil.
Sprinkle over the thyme and cayenne and mix around until coated.
Bake at 180C/350F for 25 minutes, stirring occasionally.
Transfer to a pot and add the vegetable stock.
Bring to the boil and then lower heat to simmer for 10 minutes.
Add the kale leaves and cook for another 10 minutes, stirring occasionally.
Transfer to a high speed blender or use a stick mixer and blend until smooth.
Add more stock as required to your desired consistency.
Pour over your pasta of choice (I used gluten free).
I topped with baked kale chips and lightly toasted pine nuts.
Freeze any remaining sauce in portions for later use. #bestofvegan
