This week, as I continue my 4 weeks of pure vegetarian diet, I remembered the time when I was a vegetarian for 6 years 🐿
When I was at university and decided to simply not eat meat. I thought it was bad and unnecessary and that I would be healthier. Somehow being “healthier” collided with my student life which had other priorities than nourishing myself well. So, my replacement for meat was cheese sandwiches with occasional Quorn sausages. Sure enough, a while later I could hardly get out of bed due to severe lack of energy. I was then diagnosed with anemia. I recovered by improving my nutrition and was able to lead a normal meat-free life until my mid 20s when I decided to incorporate meat.
For the last few years when I become a vegetarian for abt 4-5 weeks before Easter, I really put my thought into how can I nourish yourself healthy without some of the nutrients which meat/fish contain such as hemo Iron, B12.
I increase my intake of these foods: 🌾 cereals such as oats, wholegrain rice, quinoa, millet, buckwheat and rye 🍄 tofu 🌱seeds including pumpkin, sunflower and sesame 🥬green vegetables like spinach, kale and Swiss chard 🥜beans and lentils 🥒seaweed 🔍 What foods you incorporate to be a healthy vegetarian? Not from a health perspective or confidence perspective, but from a survival instinct.
When you diet your body will do all it can to hang on to that precious fat because fat is an energy store. Your body remembers; winter’s coming! It’s gonna need that fat!
It sees that nothing is coming in and it tries hang on to what it’s got to stop us dying. Thanks body, but that doesn’t help me get abs.
Your body will reduce its caloric spending (metabolic rate) and increase hunger levels way past the point of maintenance. That’s right, your body will hormonal trigger hunger cravings to signal over consumption. It wants it’s fat back. This is a very complicated subject that I’ve tried to keep simple but it’s one of the many reasons that fad diets fail, because the reverse diet is so important. -
That’s also why the reverse diet is hard, because you have to fight these cravings and eat the right amount to minimise the body’s desire to grow and even create new fat cells.
Short term goals are great, but not life changing by definition. Make it last, do it smart, change your life

’Cheesy’ pasta with white beans (cannellini) and greens by @cookingforpeanuts 💚
Recipe: Cook pasta as per packet directions. Whisk: 2 cups plant milk (I like using oat milk), 1 tsp garlic powder, 1/2 tsp dried thyme, 2 tbsp tapioca (or arrowroot). Heat in saucepan while whisking. Once warm, keep whisking and add 4 tbsp nutritional yeast. Continue to cook and whisk until sauce almost reaches desired thickness. Reduce heat to low and whisk in 1 to 2 tsp mellow miso (or to taste) until all dissolved. Add salt and black pepper to taste. Stir in some chopped greens and mix until greens just wilted. Remove from heat. Mix with about 3 to 4 cups cooked pasta and about 3/4 cup cooked white beans, or preferred amount. Top with fresh thyme leaves and red chili flakes...yum! #bestofvegan
