We stayed in Pokolbin during our trip in Hunter Valley, NSW. It is the heart of the wine region, home to award winning wine makers, restaurants, picturesque vineyards and 2 star hat restaurant the Muse.
Don't miss a trip to the Smelly Cheese Deli when you are here. We got some yummy #glutenfree goodies for our picnic (Swipe 👈for more pics). Accommodation: Windarra Lodge, Pokolbin.

Picturesque vineyard @ivanhoewines 🍇
We really enjoyed our wine tasting experience which was extra special as it was Lewis, the son of the owner/head wine maker who did the tasting with us. Had some great wines. The real surprise packet was an amazing big Shiraz that blew us away! I also couldn't resist bringing home a bottle of their delicious sweet muscat for us to enjoy with our desserts @huntervalley 💕
Through the years there is always the quest for the best #glutenfree savoury pie. You know the one that taste like a normal pie - not soggy bottom and crispy flaky top crust. Although I bake only glutenfree I am not coeliac or glutenfree so my gauge for best glutenfree baked goods should always be like close to the real thing if not you should never be able to tell the difference! I have to say that this chicken mornay pie from @theblindbakernewcastle blew me away! My #coeliac daughter and hubby @thegffoodie devoured this, even me!!! So if you're in New Castle, this is a #musteat. Our heart and tummy are full💕

We are big foodies! Checking out great cafes and #musteat places during our roadtrip is something we always look forward to. But- the place should be or has #glutenfree options. Having a #coeliac family (hubby and daughter) definitely is challenging when eating out. But with a little bit of research (I mean google, blogs, insta hash tags, and Facebook community) you can enjoy a glutenfree holiday with your family @thegffoodie ☺️
We checked out these donuts @doughheadsnewy. Great flavours, glutenfree, and vegan.
The Maitland gaol (1844 -1998) is one of the 20 must see gaols in Australia. Also known for housing the hardest of the hard criminals. We try to include historical sites in our road trip and it is great for Bella to learn about our history. Now a museum and listed in the New South Wales National Heritage Register.
Big smiles all around when you can have #glutenfree cheese burger and chips🤗
I found this guys on Facebook under #glutenfreenewcastle. I got really excited when I saw so many gf options on their menu. It also mentioned that they have a dedicated fryer for glutenfree!
Having a child with #coeliac disease can be quite challenging when you are travelling. So when you find places like this it feels like you won the lottery 😂 Here's Bella so happy with her meal and she reckons it's the best burger she ever had!
Next photo is hubby's meal - a double cheese burger with beef brisket and I had the pork ribs and everything was deliciously glutenfree.
Every year, our family goes on a roadtrip while the cafe is closed during the Christmas holidays. This year we are doing the Brisbane to Jindabyne route with a few stop over the litlle towns, country, and city like Taree, Hunter Valley, New Castle, Sydney, Bowral, Jindabyne, Canberra, Port Stephens, and Coffs Harbour 🤗
Crispy Pork Belly Lechon 😋
In the Philippines, Lechon is pretty much a Christmas tradition. The whole pig is slowly spit roasted over charcoals. The skin is super crunchy. In 2009, the late Anthony Bourdain hailed #lechon 'the best pig ever!' This elevated Lechon in a global spotlight. The best part to eat are the ribs and belly where the taste is so flavoursome due to the fat and stuffings inside.
This is my first time to roast #filipino style lechon using the oven. I rolled the belly myself and stuff it with lots of lemongrass, shallots, garlic, salt and pepper. I will have to work on my tying techniques nevertheless it was a success and a hit among friends and family😍
Bella asked me to make cupcakes for her class party along with a letter from her teacher mentioning all the food allergies and intolerance to consider when preparing food. She definitely gave me a challenge! 😅(Second pic)
Surprisingly this was really good. Delicious enough to make for the cafe as a vegan chocolate cake ☺️🎂🎄
A big bowl of Korean bibimbap for dinner after an exhausting one on one Kung Fu training🤛
Steamed rice with Wagyu Beef in bibimbap sauce, shitake mushrooms, spinach, bittermelon, fried egg, and grated carrots.
I have some left over pastry and this rainy morning is making me crave for a warm fruit pie. So I looked into my pantry and I saw peaches and fig jam.
Perfect! Into the oven it goes! Peaches and apricot galette it is 😋

I am so happy and proud to be able to share a bit of my #Filipino heritage with this delicious 'Buko pie'. It's a delicacy in the city of Los Baños, Laguna in the Philippines. The custard pie is filled with young coconut and a crisp buttery crust. Great warm or cold.
Forgive me for not being able to contain my excitement on this one. It's that same happiness when I baked that first perfect cinnamon rolls you have grown to love. Yes, it is up there! And it is 100% #glutenfree. We will be making more next weekend. Today we have a sneak preview of this @dovetailonoverend until sold out.
All my love- Rejoice
They say 'the proof is in the pudding'. It might look good but it all comes down to taste and is it as close to what a regular 'buko pie' (specialty pie from Laguna, Philippines) should be but #glutenfree?
Result: It is 90% in terms of texture. The pie came out whole after removing from tin. Taste is 100% what a buko pie should be! (my favourite Filipino dessert pie). It is great warm or cold! Taste even better after a few days 😍
Note: wait more patiently for the pie to cool down for the custard to set @thegffoodie (my #coeliac hubby is too excited to eat this special pie for the first time). What now: Keep an eye out for this 'Buko pie' @dovetailonoverend cafe soon. So excited to share this little dessert piece from my #Filipino heritage.

Test Kitchen: Pie #2 Using a different mix of flours this time I wanted to replicate this specialty coconut pie in Los Baños, Laguna province in the Philippines.
Test Kitchen: Glutenfree and Refined Sugar-free Apple pie. I am putting all my hope in this pie that it will turn out what a perfect regular apple pie should be...crisp, flaky, buttery, apple goodness. * I have a confession to make, it's embarrassing actually, I haven't made an apple pie since 2010. That monumental evening when my hubby @thegffoodie tasted my first apple pie and cried with tears of joy after not having one for 6 years since he became #coeliac. The night when I made a promise that I will only bake glutenfree, ever! And so tonight, 8 years later 🙈 you can imagine why I am feeling nervous and waiting for this pie to bake in the oven. Also this time, my daughter who is recently diagnosed coeliac will have her first #glutenfree apple pie 😍
