Channa masala! My own twist (duhhhhhh)! First I always toast whole spices and some ground spices, from my masala dabba! Then I grind them myself to make a curry powder (coriander, cumin, fenugreek, cinnamon, star anise, Chile powder, tumeric, dried Thai Chili, so on...). Sautéed onions, ginger and garlic, tomato paste, tomato sauce, the curry powder, chic peas and also red lentils all sautéed in ghee! I added some Greek yogurt to cut the spice. The rice is my favorite method thanks to @altonbrown for toasting in butter and salt first, then adding boiling water from my trusty electric kettle! It comes out PERFECT every time! I swear! Every year, I make spiced #pecans for #holiday gifts. For 2018, I made two kinds; Za’atar and mint, and cinnamon and ginger. (I got my Za’atar and mint @edhyders.) It’s an easy #recipe. Two pounds of pecans fills 10 jars. (Not shown: my jar). #snacks#nuts#savory#sweet#herbs#spices#cooking
Ideally, roast half a pound of nuts at a time. For savory nuts, use 1T Za’atar, 1 T dried mint, 1T honey, 1T olive oil, 1t salt. (For sweet nuts, 1T cinnamon 1T ginger plus honey, oil and salt.) Mix thoroughly. Place on a cookie sheet with non-stick coating. Roast 10 minutes at 350F. Stir. Roast 5 more minutes. Stir and cool on waxed paper. Then, fill your containers.

I use the whole berries and spice them up with anise, cinnamon sticks, sugar, lime juice and salt. By using the gentle heat to just melt the sugar and infuse the mix with the beautiful mix of spices 🐲
The aroma is so nice that it brings you the memories from your childhood when grandma was cooking something special for you 🤗
My submission for @bispirits Winter Spiced Cocktail competition The Warwick Sour.
My inspiration for this cocktail comes from my memories during college in upstate NY, when during the brick Winter months we would all hang off campus at the homes of several friends and we would drink mulled wine to sooth us from the cold weather. I wanted to present those familiar flavors of a mulled wine in the format of an Applejack sour. To me that is the epitome of Winter and the holiday season with friends and family. I was very pleased with the end result and I'm glad everyone at the competition enjoyed. On to the next one!
1.75 oz Barking Irons applejack
.5 oz Lime juice
.75 oz Spiced Rioja wine
.25 oz Sugarcane syrup
1 egg white
1 warmed rosemary sprig
Star Anise infused Angostura Bitters

A new Food and Drug Administration report, "Pathogens and Filth in Spices," says that 12% of U.S. spice imports are contaminated with bug parts, rodent hairs and other ingredients more appropriate to a witches' brew than your mother's favorite recipe. 🙈🙈🙈
The FDA study also found that 7% of spice imports the inspectors examined were contaminated with salmonella. Salmonella, toxic bacteria that can trigger diarrhea, fever, and abdominal cramps.
The amount of "filth" the FDA found in imported spice was twice that found in other kinds of imported food. The report characterized this as a "systemic challenge." ☠️☠️☠️ Since most spices cannot be grown in the United States, much of the supply comes from countries like India and Mexico -- the two countries that have the highest rate of contamination. 😞😞😞 let's not forget though that whether or not these products come from countries apparently high in the contamination list ...
