We had people over last night, so tonight was Valentine's dinner over here ❤️
My goal was to make enough of Christophers favorite things (like fish, stuffed mushrooms and bok choy) that he would have to stop eating it because he was too full instead of because we ran out. And I just say... Mission accomplished. 😂
I tried out a new idea: Salmon Wellington! I checked out a few different recipes on Pinterest, and improvised. And used the pastry crust from the apple tart recipe. YUM. .
I think the boys were happy 😍 .

Spent the week assisting with acoustic tagging juvenile winter run Chinook salmon at the Livingston Stone Fish Hatchery. Each tag emits a signal uniquely identifying each fish which is recorded by recievers deployed along the river to track movement and survival. #JSATS#Salmon#FisheriesScience
Ending this long week of winter weather with a tropical inspired food escape!
Grilled salmon steaks with a spicy mango marinade. Grilled pineapple skewers. Pineapple rice and a mango, tomato, jalapeño, onion, radish & cilantro salad.
Even though it appears so light and fresh, I mixed everything together, added a little soy sauce and enjoyed a big plate of comfort food! 🤣
Have a fantastic weekend my friends... you deserve it!!! 👌
Never met a salmon I didn’t love.... this one... I think I’m ready to run off and marry ❤️
Salmon with Tomato Cream Garlic Sauce and Spinach (Deliciousness inspired by @delish )
Watch my stories to see how I made!
2 tbsp. olive oil
4 salmon fillets
salt and pepper
3 tbsp. butter
3 cloves garlic, minced
2 c. halved cherry tomatoes
2 c. baby spinach
1/2 c. heavy cream
1/4 c. freshly grated Parmesan
1/4 c. chopped herbs
In a large skillet over medium-high heat, heat oil. Season salmon all over with salt and pepper. When oil is shimmering but not smoking, add salmon skin-side up and cook until deeply golden, about 6 minutes. Flip over and cook 2 minutes more. Transfer to a plate.
Reduce heat to medium and add butter and melt. stir in garlic and cook 1 minute. Add tomatoes and season with salt and pepper. Cook until they begin to burst then add spinach. Cook until spinach is beginning to wilt.
Stir in heavy cream, Parmesan, and herbs and bring mixture to a boil. Reduce heat to low and simmer until sauce is slightly reduced, about 3 minutes.
Return salmon back to skillet and spoon over sauce. Simmer until salmon is cooked through, about 3 minutes more.
Garnish with more herbs and squeeze lemon on top before serving.
