Rolling into Monday with Salad + Homemade Fries stacked up for lunch prep 🍟 (Recipe 🔜) Thick cut, tossed with smoked paprika and oven baked, I may have been “snacking” on these fries yesterday as I layered them up with chickpeas, cucumbers, tomatoes + greens 🤷🏻♀️ Am I the only one who “tastes” their through every recipe! Please tell me No!
✖️RECIPE for the Smokey baked fries 🍟:
2 russet potatoes, washed
1-2 tsp smoked paprika
1/2 tsp sea salt
Preheat oven to 450 degree. Cut potatoes into any fry shape you like. Add to a large bowl and toss with smoked paprika and salt. I use the upper limit of paprika because I love the flavor ♥️ Place on parchment lined baking sheets so that they are not touching. Bake for 30 minutes and then enjoy! ⠀⠀⠀⠀⠀⠀⠀⠀⠀

Southwestern Quinoa Mason Jar Salad
1 cup dry quinoa, rinsed
1 (15 ounce) can black beans, drained and rinsed
1 pint cherry tomatoes, halved
2 bell peppers, cored and diced
1 cup corn kernels
3 green onions, diced
diced avocado for serving (optional)
1 cup cilantro
1/2 cup lime juice (approx. 4 limes)
2 garlic cloves
1-2 jalapenos, depending on size
2 teaspoons cumin
1/2 teaspoon chili powder
1/2 teaspoon salt
2 tablespoons extra virgin olive oil
In a small saucepan, combine 1 cup rinsed quinoa and 2 cups water. Bring to a boil then reduce to a simmer and cook uncovered for 15 minutes, until all of the water has absorbed. Remove the pot from the heat, cover with a lid and allow to steam for 5 minutes.
Meanwhile make the dressing by adding all of the ingredients to a food processor or blender and blending until smooth.
Once the quinoa has cooled, divide it evenly between 4 (16 ounce) jars. Pour 1/4th the dressing into each jar and gently stir to combine. Next layer the black beans, corn, bell pepper, green onion and tomato on top. Seal with a lid and refrigerate for up to 4 days. When ready to serve, dump the salad out into a bowl and top with diced avocado (optional)•

Broiled salmon and boiled potatoes, side salad, cold tea I made from Peppermint☺️ Soup is done for the week and juices also. It makes perfect sense that I’m getting right into salads just as summer ends.... right? 😂
I’m not a huge fan of salads usually but lately I can’t get enough of them! It’s been a pretty busy week hence my lack of posting, but these salad jars have been a life saver 🙌 when I’m at work I just tip it all into the bowl and the dressing lands on top saving it from getting soggy, winning!!
I just added quinoa and some cashew nuts once it was in the bowl
