A quick batch of tofu fried rice for dinner adapted from @minimalistbaker ✨ I made a ton so I have lunch for a few days this week. So good and so simple, just search fried rice on her website, I believe it’s the second recipe down! 🌿 #sundaymealprep

I now do this to my girls - much sometimes to their annoyance 😜it really is the best feeling and it’s totally free. How bloody lucky are we to be in such an awesome environment- I just pray and will do whatever I can to make sure it stays this way for my girls and if there is ever any change in the future it’s only for the better 🙌💓

아침 먹고 자두 하나 무화과 하나 아몬드라떼 마시면서 후무스 만들고 팥앙금 만드느라 땀빼구🤧💦
나가려고 했는데 또 갈 곳은 없구 집에서 할 일은 많구 해서 그냥 집에 있기로 .. ㅎ.. ㅎㅎ.. 집수니가 어디 가겠어 ~~ 내일 바뿌니까 에너지 축적 ~~
You just can't go wrong with a quick spag bol. This time using @funkyfields_official mince, with #zoodles & sweet potato noodles.
Saute onion, garlic, capsicum and chilli. Add in the mince. Stir through tin tomatoes, red wine vinegar, & "beef" stock. Add dried basil, oregano, smoked paprika, nooch & stevia. Simmer. When almost ready to serve, stir through fresh basil.
So basic, but soooooo delicious.

We are so lucky to have such yummy VEGAN Japanese food available here in Melbourne... but I really do love cooking so I had a go and got it just the way I like it! Honestly I'm not a big curry fan, but I love love love Japanese curry! It captures the idea of curry but carries a lighter less pungent perspective that is just right for me! I kept this dish very Japanese making Shiitake mushroom the star of the show... talk about perfection 😋🍛

Topped with chia, amaranth, pistachio, coconut, flaxseed and fresh blueberries... this mornings breakfast has my body prepared for an active sunny winters day! I'm not the biggest fan of eating anything sweet for breaky, but the amount of goodness you can pack into one of these easy to prepare bowls is hard to go past! My eyes honestly feast on the colours alone 🌈👅

I love experimenting according to my taste buds desires! I wanted to make a zesty zingy soup (to ease my body back into winter) that felt herbal/medicinal, whilst packed with green fresh veggies. So I made a VEGAN tamarind and ginger soup inspired by the Filipino favourite "sinigang", filled it with some fresh rice noodles, broccoli, green beans, Bok choy and white radish! Seasoned with some fresh lemon juice, grated fresh ginger, fried scallions and chillis to serve! SARAP 👅💗
Kale, hemp seeds, baked potatoes, avocado and the ultimate tofu scramble!

Happy Sunday!! If you don’t know what to mealprep this weekend to save time during the week: ✔️Wash veggies ✔️Make pesto ✔️cook black beans ✔️roast some veggies in the oven.
With these bases, you can put together tacos like this one👆 or colorful bowls together under 5 minutes.

Tag a friend you’d make this Avocado + Sriracha Hummus Toast for! 👯♀️🥑🍃💚🙌🏻 Tthis toast is SO delicious. And so packed with flavor. Savoring the remainder of the weekend the best way I know how...and currently that is with a bowl of maple hazelnut oats. I kind of threw a bunch of other optional things in it too, but the base alone was all the yum one could want. 🤤
Maple Hazel Nut Oatmeal
1/2 cup rolled oats
2 tbsp chopped roasted hazelnuts, divided
2 tsp maple syrup
1/2 tsp cinnamon
1 tsp ground flaxseed
1 tsp maca powder (optional)
1 tbsp chopped dried cherries (optional)
1/8 tsp salt
1 cup almond milk
1 mashed banana 🌱
In a saucepan, add in all listed dry ingredients and mix together evenly. Add in the remainder of the ingredients, reserving 1 tbsp of the chopped hazel nuts to top oats for serving. Bring mixture to a simmer and allow to cook for about 3-5 minutes. Mixture will continue to thicken as it sits to cool, so if you need to adjust consistency to make it a little thinner, add 2 tbsp at a time of extra almond milk. Top as desired, but I highly recommend some of the remaining hazel nuts and extra maple syrup for some extra yum. 🥣

I think by now you guys probably know that I take my breakfast/brunch pretty seriously, it’s my favorite meal of the day,😁 but there’s a reason for that! Your body spent the night burning calories and it needs a good breakfast to not only replenish itself but to fuel you through your morning. I know a lot of people who skip breakfast, many thinking it’s an easy way to eat less calories throughout the day but usually you only end up eating more calories throughout the day because you skipped the meal and are way hungrier. It’s so much better to at least eat something small that contains: 1. Healthy Fats 2. Healthy Carbs 3. Fiber. This combo will keep you super satisfied and feeling great! On my plate: ✨De-constructed Breakfast Tortillas✨ with a crispy #glutenfree@sietefoods cassava flour tortilla, soft scrambled eggs with spinach (fiber hack: add nutritional yeast for 3g of extra fiber! & it gives it a cheesy flavor) and @kitehillfoods chive #vegan cream cheese, sliced avo with @traderjoes everything but the bagel seasoning, and raspberries! 😋😋😋
