first post goes to my breakfast this morning, sweet potato waffle inspired by @choosing_balance 🥰 recipe from her blog with my own twist on it • medium sweet potato- cooked and mashed, 1 egg, 2 tbsp of coconut flower, 1 tbsp of pb2 and a whole lot of cinnamon 🤪 mix in a bowl and cook for 10 mins. i added maple syrup, raspberries and a little more pb2 on top

🍅 Cooking Adventures 🍅
Saw some really fat 🐷and ripe tomatoes at NTUC finest and decided to make some tomato stew. No dairy or flours added. Instead cauliflower is used to thicken the soup. This dish is gluten-free and vegan 🌱
1. Tomato basil stew 🥣
Stir-fry garlic and sweet onions in neutral flavour coconut 🌴 oil @naturesglorysg . Then add chopped cauliflowers and tomatoes 🍅to stew. Add vegetable dashi and bring to a simmer. Then throw in some fresh basil 🌿 . I used a immersion blender for this.
2. Crispy skin salmon 🐠
Fork tender and so good! Serve with fresh lime 🍋 wedges.

So I’ve got to be honest…2019 has been a bit of a mess for me so far. Most days have been filled with 12 hours of desk work, staring at a screen. I haven’t been making time for my workouts, I’ve deprioritized sleep, and self-care has kind of been off the table. I’ve been in a major work mindset, and HYPER focused on getting ahead in this way 💻 I keep telling myself that if I can just suck it up, but this milestone and get this far ahead on work, that I can spend the rest of my days finding balance...but I cross that bridge, and it doesn’t feel like enough
B a l a n c e has always been a major struggle for me. Being driven and focused is an amazing quality, but one that can quickly turn unhealthy and result in an unaligned life 🌪
I started out the new year conscious of this character quality, and decided to place an intentional focus on changing this about myself. I also made a conscious effort to not put pressure on myself to have it all figured out by January 1st.
So this week, I sat down and made a list of everything I was accomplishing in a day. Then I made a list of everything I WANTED to accomplish in a day (self-care, work, goals wise), and realized these two lists were vastly different. I’ve made it my goal this week to slowly reimplement the things that center me, and make me feel fulfilled in all aspects.
I haven’t been in the mood to jump back into my intense HIIT workouts, so I’ve been doing daily yoga, balance, and inversion work 🧘🏼♀️ I love writing and have been feeling like my brain is cluttered with 1 million thoughts and ideas; so I began journaling an entire page after work. 📔
I’ve placed my vacation vlogs as a last priority for the last few months, so I have been diving back into my love for editing and being creative.
I have been missing diversity in my diet, so I have begun reintroductions. 🥕🍝🍪
I decided this week to begin realigning with what makes me feel like Madi. I’m tapping back into my intuition, and filling my soul with what matters…and it feels so good 🌿🌻

It feels so good to be in the kitchen again! 👩🏻🍳 I’m starting to feel alive and well after two bouts of the winter cold. I’m feeling great and intend to keep feeling this way with some clean eating.💪
I’ve been craving my mom’s cooking and remembered the stuffed bitter melon soup she would make. 🥣 Like many other kids, I didn’t like bitter melon. I would eat some but hide as much as I could in my napkin and toss it when my parents weren’t looking. One time I brought the filled napkin upstairs because I couldn’t sneak over to the trash can without my parents catching me. I flushed that nasty thing down the toilet! 😂 Man, I hated the taste! 🤢
It’s a different story today - I really love it now! Luckily for me, it is so incredibly healthy and fits nicely into my meal plan. Today was my first time making Canh Khổ Qua, and thankfully it came out just like Mom’s!
Cored bitter melon is stuffed with a ground pork mixture, boiled in a clean chicken broth, and garnished with cilantro and green onion. Perfect over rice. 🍛 My pork mixture included some minced white fish and shrimp, as well as wood ear mushrooms and a bit of thin glass vermicelli noodles. 🐟 🍤 🦐 I had extra so I rolled the mixture into meatballs and dropped them in the broth to cook.
Omit the noodles and rice if opting for a low carb version.
The only change from tradition was the use of ground pork tenderloin instead of regular ground pork. This was to keep the fat content down a bit. I used my trusty meat grinder, but I’m sure the butcher counter would be able to assist if you’d like to try it this way. I didn’t notice a difference at all. 👍
HEARTY VEGGIE BOLOGNESE PASTA🍝 It’s so hard to get good pictures of my dinners because it gets dark so early but this pasta was too good not to share! I used to make this all the time buts it’s been months since I last had it.
dEATs: red lentil pasta with a sauce I whipped up real quick made from red onion, garlic, peppers, seitan, broccoli, tomato paste, and spices. Topped with a ton of dried tomatoes and nutritional yeast💛 Quick, cheap, healthy, and delicious👍

I always try to have greens of some sort as a foundation. (Iceberg lettuce 🥬 is not really cutting it with me tbh)
• stir fried brussel sprouts in a touch of extra virgin olive oil with broccoli sprouts + spring onion
👉🏼 step 2 - more veg
Cooked starchier vegetables of some sort being either mediterranean or spuds 🥔🍠 or other root vegetables such as parsnips, celeriac, swede
• I roasted these baby new potatoes in avocado oil with rosemary in the oven for around 30-40 mins until skin is crispy
👉🏼 step 3 - protein
Protein is a vital component for our bodies. I tend to rotate my sources which also includes plant based sometimes and use only sustainable farming methods and highest animal welfare or organic standards. Where we choose to spend our money on food has a powerful influence on the environment we inhabit
• Ground turkey thigh + streaky bacon pieces + dried rosemary + thyme + garlic
👉🏼 step 4 - Fat
Like with everything else I rotate my fat sources to broaden my micro nutrient intake. This allows me to naturally have a diverse fuel source for every enzymatic reaction / process in the body. Also, allows me not to spend money on a synthetic multi vitamin mineral. I always will believe in a food and lifestyle approach first!
• smashed avocado with tbsp Extra Virgin Olive Oil + apple cider vinegar.
Finally season with a unrefined salt of your choice I vary between Celtic sea salt or pink Fairy Dust.

back from the most incredible week in Peru! missing everything about Peruvian food, weather, and people, but excited to be back in the kitchen!
Been having this a lot lately because it’s just TOO GOOD. Zucchini and Sweet Potato noodles with a little Angel Hair Pasta and Bourbon Chicken!!
Marinate the chicken in 1/3 c honey mustard, 1/3 c teriyaki sauce, little splash of white wine, salt and pepper to taste, minced garlic, and red pepper flakes.
Cook in a skillet over high heat for 8-10 mins .
For the noodles, start by sautéing half an onion and half a strip of chopped turkey bacon over medium heat. Add 1/4 c white wine and 1/4 c Marsala wine. Allow it to reduce for a few mins before adding about 1/4 of the chicken marinade.
Mix in 1/3 c zucchini noodles, 1/3 c sweet potato noodles, and 1/3 c cooked angel hair pasta.
Cook over medium heat for about 5 mins

Throwback to the best damn thing to ever happen to potatoes! 🥔🥔🥔 Truffle aioli is my favorite dipping sauce, for something so gourmet it just takes seconds to make! I would make a few batches of this recipe, 'cause you'll want to put this on EVERYTHING. 😍
1/2 cup mayonnaise (I use @followyourheart mayo)
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon mustard (dijon/spicy brown)
1/2 teaspoon truffle oil
1 1/2 teaspoons lemon juice
1 tablespoon water *Whisk till combined, DEVOUR.

1/3 cup of oats .
Use a food processor to make the oats into oat flour
While this is happening, mash up a banana and mix in the egg.
Mix in the oat flour.
Add whatever toppings you want! Cook on medium heat ~2-3 mins/side
This berry topping was in my story the other day- frozen berries and 1/2 tsp agave reduced on the stove.

FISH & CHIPS - DINING OUT VS HOMEMADE ⠀
I’m a huge fan of Friday night fish and chips and I wanted to demonstrate how some simple swaps can transform this favourite into a weeknight meal.
LEFT (Pub style/take-away option)
2 medium fillets (white fish, coated & deep fried)
200 Regular chips (probably more since a large KFC fries is 243g, I’ve been kind here)
Target sauce ~ 2 tablespoons
I didn’t count the salad or dressing (could have counted the dressing)
200g lightly coated pan fried blue spot emperor (white fish)
40g store bought birds eye oven baked chips (Deli seasoned chips)
2 tablespoon home made tarter sauce (let me know if you want the recipe)
I counted the salad with salad dressing (white wine vinegar and lemon juice) for this example
The option on the left to me is a supersized portion, HOWEVER it is a normal portion at most restaurants/pubs/bars/takeaway joints.
The option on the right is a homemade version. It follows a more balanced approach. Not everything on the plate is home made and that’s ok 👌🏼
You don’t have to eat perfectly all the time BUT I believe it is important to understand how you can make better choices/options at home.
My belief around food is - SURE eat whatever you like, BUT you can still be informed around the choices you make for YOUR lifestyle.
Can you make the the dining out option better? Of course you can, reduce the portion of chips and opt for grilled/pan fried.
