Also, since this recipe doesn’t require baking, let your toddlers or kids help you! 🍪🍪🍪🍪🍪 @Kidzshake is a yummy protein drink too but these cookie treats make for a good activity and, um, bribe for when you want them to say, put their coats on. (I don’t know about you, but my toddler twins hate wearing socks and coats which is a little tricky in the winter time…) 🧤
Pumpkin pie cookie balls
1/2 cup pumpkin puree
1/2 cup almond butter
1 TBSP coconut oil
2 tsp pure maple syrup
1/2 tsp pure vanilla extract
1/3 cup coconut flour
3 TBSP @KidzShake vegan chocolate protein powder
1 tsp pumpkin pie spice
Sprinkle of sea salt
1/4 cup Food-processed sunflower or pumpkin seeds mixed with 1 tsp cinnamon and 1 tsp coconut sugar
Whisk wet ingredients until creamy (warm almond butter until soft if needed). Stir in remaining ingredients, roll into balls then roll in seed topping. Freeze or chill until firmed up a little and enjoy! Serve with protein drink mixed with water or almond milk for an extra protein-packed treat. *
this last weekend I had an epic getaway in Toronto and ate so many delicious plant based goodies! But I was excited to get back into my kitchen. No grocery shopping has been done for the week so it was a ‘clean out the fridge’ kind of dinner.
Organic quinoa cooked in a broth with pink salt and turmeric and then tossed in a Tamari based sauce with rice wine vinegar, sriracha and garlic.
Topped with turmeric fried tofu, steamed edamame beans, sunflower spouts, avocado and ‘Its Yumis’ vegan kimchi.
Lastly a drizzle of Just garlic mayo mixed with wasabi, lemon juice and a little water to thin.
Prepped enough to last me a few lunches this week. Love Mondays that feel like Sunday’s!

Today I carried in 10 bags of groceries AT ONCE because the freezing cold was hurting my teeth and face so one trip and ✅ done.
Yesterday I carried my 22 month old niece and nephew (25-35 lbs) up our back hill numerous times in snow boots on slippery wet snow in winter gear so they could whip down the hill, just to say “again”. Saturday I was at nursing home and Milly was practically laying in her wheel chair about to slide out. I told her to hang onto my neck and grabbed her body (85 lbs) and lifted her back into the chair so she was sitting upright so she could eat. This act took strength and gentleness as she is 95:)) On Saturday I filmed 4 All Strong Mom 5 in 25 workouts to help moms strengthen their bodies and minds so they can be great role models for their kids.
Taking care of yourself is not selfish - it allows you to act swiftly, carry others, and pick up those who are sliding downhill. If you aren’t exercising and eating healthy...you should be ....but you know that. Get up and get after it!! Stop making excuses. Others are relying on it!! FIRST TRIMESTER HEALTH 🌱.
I just shared in my stories what I’m doing differently this time with my health for a healthy and happy pregnancy and birth and to avoid the trauma from pre-eclampsia that I had with Orlando. So far so good! I’ve only craved real food and hot chips like twice and my stress levels are non-existent as I get to do what I love every day in the Gang 🙌🏼. I feel like normal, full of energy and mentally bright. I definitely wasn’t like that the first time around 😆.
So here’s what I do on the daily:.
💫 3 of each of my whole food fruit, veg and berry capsules a day for extra nutrients and folate and to bridge the gap between the 7-13 serves of fruit and veg I should eat each day and what I do actually eat a day. And I don’t know many people who actually eat that amount each day, especially with nausea! I don’t use any synthetic multivitamins like Elivite or folate - just the natural source from my capsules.
💫 3 of each of my vegan omegas a day which are so important for Fetal development, brain health, eye function and so much more.
💫 ACV and 1/2 a lemon in warm water each morning and once more in the afternoon. Amazing for reducing blood pressure naturally.
💫 Natural calcium and magnesium powder from the naturopath and magnesium spray. Research has found that calcium and magnesium levels are low in lots of pre-eclampsia suffers so I’ve been making sure to keep on top of that.
💫 Plant based protein each morning, with protein deficiency also being linked to pre-eclampsia, which I load with a banana, half an avocado and chia seeds which are all filled with potassium and great for reducing blood pressure.
💫 HIIT exercise x 3 a week which I’ve been doing for months now! I did have to stop for a week and a half after my shoulder dislocation but am back into it although I do have to wear a sling lol!.
💫 Dry body brushing daily which is amazing for blood circulation and removing toxins from your body. It’s also a great form of self care 🖤.
💫 Monitor my blood pressure daily when I’m sitting and relaxed. It now sits on 115/74 naturally when my old normal after I had Orlando for the first year was 140/90 on meds!

•pea pesto- cup of cooked peas, parsley, garlic, Marcona almonds, s&p, olive oil, in the food processor •organic brown rice pasta •balsamic roasted cherry tomatoes
•roasted zuchinni •once the pasta is cooked & pesto is ready reserve a little pasta water. Add the pesto and stir on the stovetop adding the water and let it heat up til creamy. I also drizzled the extra balsamic from the tomatoes on top for some extra flavor. 😋

Who grew up in a household that had a "clean your plate" mentality?
Or maybe you believed the notion that you should only take it if you're going to finish it.
The truth is this: while we eat with our eyes first, it's impossible to always know exactly how much food to take to get us to that perfect level of fullness. The one that's not uncomfortable, but leaves us feeling satiated, satisfies cravings, and doesn't leave you in that overstuffed food coma minutes later.
The idea that food is only wasted if we don't finish it is a huge contributing factor to weight problems and more importantly, it interferes with our ability to achieve our fitness goals.
How many times have you forced down the last few bites at a restaurant because it wasn't quite enough food to take home, but you just couldn't justify throwing it away? Or the way you cleaned your plate as a child because it was the universal signal that you could leave the table or - qualify for dessert.
Whether you're leaving it on the plate to be thrown in the trash or forcing it down when you've already had enough, the fact is that either way, it's wasted. You didn't physically NEED those last few bites, we're just accustomed to this moral obligation to not waste food, but forget that whether or not it's eaten - it's already considered consumed. Already paid for.
Next time you're enjoying a big meal, take time to notice when you're getting full and pay attention to the signals. This is a huge step in learning how to eat intuitively and become more in tune with how much food you actually need.

What are your favorite places in Charlotte to #explore?
Well, I’ve only been in Charlotte for about 6 months so I still have a lot of exploring to do. (She moved here from Denver, CO!) So far I have really enjoyed walking around #plazamidwood. I also really enjoyed spending an afternoon at @thebechtler; they have a really incredible collection. It’s easy to spend hours there. The pieces really make you think and give you so much to admire.
Where in the city do you go to #nourish your mind and body?
I really like @undercurrentcoffee in Plaza Midwood…the atmosphere is very clean and cozy at the same time. I feel really at home having an oat milk latte and just people watching out the window.
What are your favorite ways to #connect with the community?
When I first moved to Charlotte I decided I would connect with the environmental community here by simply showing up and saying hello. One of the first things I did when settling in was to go to one of @crowntowncompost’s community tables and introduce myself. Now I work for them! I also reached out the @bezerocharlotte, started attending their monthly social hours, and now co-manage their monthly events and social media.

I try to approach each meal as an opportunity to nourish myself. I don’t spend time counting calories and obsessing over how many grams of this is in that. I just make sure I have a colourful range of wholefoods available that allows me to whip up easy meals that tick all of the “nourish me” boxes. Carbs, healthy fats, protein, fibre, fermented goodies for gut health, vitamins and minerals - it doesn’t have to be a complex dish. Sometimes I batch stuff up (like this beetroot hummus and these grain free zucchini and carrot fritters) so that throwing a nutritious bowl together like this merely takes 5 minutes and keeps me satisfied well into the next meal. BUDGET FRIENDLY ✨ All recommendations from me to you are in mind to be very budget friendly. I know in this current world we can get very caught up with the latest and greatest ‘superfoods’, ‘elixirs’ and ‘powders’ but more often than not it doesn’t need to be this way! You can be rest assured that all suggestions are non judgmental and are made with respect to your way of life. To me, ordinary fruit and veg, grains, nuts/seeds, fish, meat etc are all powerful in their own right! To me, simple wholefoods are the key! My friend Jana came up with a collection of winter/Christmas smells to put in your diffuser! They smell incredible, but they're actually VERY therapeutic too. Here are just a few of the many reasons why you need to breathe them in daily:
CONIFER OILS: Pine, spruce contain phytochemicals that produce a calming, peaceful environment. They also stimlulate the mind and body. For further study, google alpha-pinene and limonene.
CITRUS OILS: bergamot, orange, neroli etc quiet the mind and help with occasional stress. They are extremely uplifting!
MINT OILS: peppermint, eucalyptus, raven all contain properties that support your respiratory system when diffused.
SPICES/HERBAL OILS: ginger, cardamom, clove, cinnamon...are all fantastic to support and strengthen the immune system.
Which one will you try first?
It’s 6:00 p.m. and I’m pretty exhausted.

I worked all weekend
I traveled today
It’s dark outside.
I hear people around me feeling badly about not getting much done, feeling rundown, tired, and not wanting to leave the house after 6.

slow down more,
What you were doing 3 months ago may not be best suited for you today.
So take the nap,
go to bed early,
drink all the hot tea,

snuggle up and know that you’re right where you’re supposed to be.

Smoothie bowl time 😋 1 cup frozen 🍓 1 cup frozen wild blueberry, 1/2 cup almond milk, 1/2 🥑 3 dates, 1 cup baby kale, tblspoon cacao powder, tspoon pomegranate powder, tspoon @animamundiherbals collagen booster + tspoon mangosteen hibiscus tonic, heaped tblspoon almond butter. a chillier night calls for a warm & nourishing bowl of spaghetti squash 🍝 paired with organic ground chicken in @montebene tomato basil sauce and some fresh basil. to make this meal more ideal, serve with a dark leafy green like arugula, kale, or bok choy 🥬 #granolabarregirl
Just me and my boo-thang, @baeisforbacon. Bacon did not love this hike, as he prefers to snooze on the couch. It was a practice in patience and mindfulness as we worked our way up the mountain. What if we allowed ourselves to takes breaks when we were tired? And did so with out judgement. Bacon is amazing at this- taking a seat whenever he needs and having absolutely no shame in being carried. This week it’s my intention to take more breaks and allow my loved ones to pick me up if I need it!

3/4 cup chocolate chips
heaping 1/2 cup (about 10) medjool dates, pitted⠀⠀
splash of vanilla
dash of salt
1/4 cup peanut butter, melted
12-16 pretzels (can sub gf pretzels)
Sea salt flakes (optional)
STEP 1. Place the pitted dates in a bowl. Cover with hot water and allow to sit for 5-10 minutes, then drain.
STEP 2. Melt the chocolate chips in 30 second intervals until creamy (or use a double broiler).
STEP 3. Line a mini muffin pan with 12-16 mini muffin liners.
STEP 4. Fill each with 1-2 tsp chocolate.
STEP 5. Freeze until solid (5-10 minutes). STEP 6⠀⠀
Make the caramel by mixing all the ingredients in a food processor.
STEP 7. Top the chocolate in each cup with ~1 tbsp caramel.
STEP 8. Top with a few peanuts.
STEP 9. Then top with ~1 tsp peanut butter then ~1 tsp chocolate. Swirl with a toothpick.
STEP 10. Press one pretzel on the top of each.
STEP 11. Sprinkle each with a few salt flakes.
STEP 12. Chill. Keep a batch in the freezer for a tasty treat whenever the craving hits! Enjoy!

if ya didn’t already know, fall is my favorite season! it’s something about crisp air and the changing colors of the leaves...it makes me feel alive. like i can have a fresh start or a new beginning 🍁
conflict has never been my strong suit. while i may seem open and vulnerable on social media, i have a hard time expressing my emotions face to face. and as we all know, when you bottle everything up...you’re bound to explode at some point. we all deal with conflict differently. at the end of the day, who do we blame — others or ourselves? i truly believe this says a lot about our character as human beings. during times like these, i tend to deal with my demons internally. you might see me smiling on the street walking from class, but you won’t ever see me silently sobbing alone at night. sometimes it’s easier to imagine a new start — moving to another city to escape all my problems and fears. but the truth is, running away doesn’t solve anything. reaching out to others doesn’t make you weak. being vulnerable doesn’t make you weak. facing conflict head on is what makes you STRONGER. you’re not alone, i promise. during the lowest of lows, remember that there is always light at the end of the tunnel. there is always opportunity for growth and change, just like the colors of the leaves during the fall 💛
