How on earth did that happen!? We're already half way through January!!! That's crazy. But I hope things are already shaping around your goals for the year ☆
I felt a huge need to post today! Not only to check in with you all and hear how you are doing - but mainly because, as little as I use social media these days, I was on youtube the other day following a yoga class and I came across a vast number of well known people in this community posting videos about how they "are no longer vegan", for one reason or another. ☆ My intention with this is not to cast hate or shame against these people - and I feel it is wrong that people are doing so. The energy you put out is the energy you attract, and believe me when I say that this world doesn't need more hate and violence in it!
I'm just disappointed that people who have been so prominent within the community, and made much profit over touting the benefits of the lifestyle - then turning around one day and contradicting themselves.
This is where I believe the distinction between • vegan • and • plant-based • lays, and I feel it to be wrong and misleading to preach a lifestyle and then so casually brush it off.
So I wanted to say that I am still very much vegan - and that is something that is never going to change! 🌿 Given, I ate a lot of crappier foods over the past couple months out of convenience and really felt it 😂 But I'm back into a more nourishing, whole foods diet again and feeling a great deal more vibrant and alive! 🌸 🍃 Tell me all about yourselves now! Conception, construction, completion. My pieces are meant to be used daily and as such - are still considered a work in progress until they leave my possession and go off to live their lives in YOUR life. I am proud of this set. The shape, the way it feels when held, the randomness and spirit of the cobalt splatter, the intention behind it - but what it's missing is you. When I made it, I thought of how you would use it - pulling it down from a shelf, setting it on the counter to wait patiently as you chopped colorful ingredients for a meal that would nourish you and make you feel joyfully alive. A celebration of quiet times and staying connected to simple pleasures. If you didn't know that, now you do. .
Stir fry all those ingredients (potatoes, capsicum, broccoli, spring onions, ginger, garlic, chillies, onions, eggplant, coriander) with two teaspoon of curry powder, half a teaspoon of chilli powder (optional), a teaspoon of cumin and add salt/pepper to taste! My husband came In halfway and added mince to that mix because apparently “no meat,no eat” is a thing 🤦🏾♀️ Anyways the dish is ready when the potatoes are cooked, pop it into bread for a toastie OR spread it onto bread, add cheese on top of it and pop it into the oven till the cheese is grilled! .
This dish is brilliant for when you want to clear out your vegetable stash, are lazy, wanting a quick meal or simple want something different to try! It’s also versatile and can be eaten with rice, in a salad or on bread 👌🏾

Brazil Nut Pesto 🍝
1/4 cup Brazil nuts
1 tbsp nutritional yeast
Juice of 1/3 a lemon
2 garlic cloves
Big handful wilted kale
1/3 cup extra virgin olive oil
Sprig of rosemary
Serve with hearts of palm pasta, zucchini noodles, or any pasta you love and feels good.
I topped mine with shaved purple radishes, crushes Brazil nuts, wild shrimp and dill.
Brazil nuts are incredible for you. They are low carb, high in fat and an incredible source of minerals. They are particularly high in selenium. Just three a day will get you your daily dose of selenium which is crucial for taming inflammation, thyroid health, brain health and overall well being.
To make the pesto I first roasted my Brazil nuts in a dry pan for about two minutes. Just until you can start to smell the oils. Be careful not to burn your nuts! Then I put it in a blender and gently sauté my kale and rosemary until just wilted. I add that in my blender with my tbsp of nutrition yeast, lemon juice, garlic and olive oil. Blend to the texture you enjoy. I like my pesto a little chunky. Add salt and pepper to taste. (About 1/2 tsp each for me). Store in a air tight container in the fridge for a week and enjoy.

Fat is having a moment! At one point, fat was considered a very scary macronutrient. But with a surge of people going keto, many are incorporating more fat into their diets and reaping some benes. Though this is not permission to go buckwild on the fat. It is a dense, calorie rich macronutrient, but some should be included with every meal will help you stay fuller longer.
Not all fats are created equally, some are healthy and some are terrible. Fat doesn’t make us fat and we need a good amount of it for overall wellbeing. Vitamins A,D,E and K are fat soluble, which means they need a fat source for the body to assimilate/absorb them. Fat also helps us insulate our body and organs from cold, helps to reduce inflammation and improve brain function (hello fatty omega 3 rich walnuts that look like brains). TYPES OF FATS (VEGAN SOURCES)
*Monounsaturated fats, like olive oil, almonds, cashews, pecans and avocado can help increase “good” cholesterol (HDL) and lower “bad” cholesterol (LDL)
*Polyunsaturated fats, like sesame and flaxseed oils, seeds and walnuts help reduce total cholesterol, though they may increase “good” cholesterol.
*Essential fatty acids (omega-3s), like walnuts, flax, chia and hemp seeds, help the body with inflammation, arthritis, heart disease and high blood pressure due to their molecular structure. It is which also a type a polyunsaturated fat.
*Saturated fats, are a bit of an in-between fat. Too much can be bad for health, but there is a place for some in a healthful diet. We them it for our cardiovascular system, bones, liver, immune system and neurological functioning. Coconut oil is considered a saturated fat, though given it’s makeup high in fatty lauric acid (show to help boost HDL) and antioxidants, it has additional health benefits. Buy organic, cold pressed, unrefined.
*Trans fats, like margarine, should be avoided completely.

Double Chocolate Raw Cake
1,5 cup whole almonds
1/2 cup ground tigernut
1 cup soaked dates
2 tbsp cocoa powder
1 tbsp melted coconut oil
2 tbsp melted cocoa paste
1 tsp Maca powder
1/3 tsp vanilla powder
pinch of salt
1 cup cashew nuts / soaked for at least 3 hours
2/3 cup of water (reserved from soaking dates)
4 tbsp agave nectar
2 tbsp coconut cream
1 tsp instant coffee
1 tsp Maca powder
1 tsp freshly squeezed lemon juice
1/2 tsp vanilla
pinch of salt
1/2 cup cocoa paste (minus 2 tbsp I added to the crust) – melted

Chunky monkey waffle sandwiches . ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ 1.5 cups plain flour 1 cup oat flour 1 tbsp cornflour 1/2 tsp salt 1 tbsp baking powder 3 tbsp coconut sugar 1.5 cups coconut mylk, well shaken from a can 1 tsp vanilla extract
3 tbsp carob/cacao powder 1/4 cup avocado oil 1/3 cup aquafaba (liquid from a can of cooked beans) ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
1. Add all dry ingredients to a large mixing bowl and stir well. 2. Make a well in the middle and pour in all liquids apart from the aquafaba. Whisk to combine and set aside. 3. In a small mixing bowl, add aquafaba and whisk/beat on high until soft peaks form, about 5 mins. Now fold this into your waffle mix until just combined. Split into two bowls and stir carob powder through one bowl. 4. Preheat waffle iron and pour over alternate spoons of batter per waffle. Cook for 5 mins or so until golden and crispy. Stuff with almond butter and banana.

Sometimes I find myself hyper focused on all the things I could do better, should do more, wish I had done differently, and an overall feeling of being “not enough” 😔 ...but one thing I’ve been working on is learning to LET GO of my inner critic & instead try to treat myself gently ✨ with love, kindness & care ☺️ one thing that helps me get out of my own head?! Snuggles with Suki!! 🐶❤️ we got our little pup 6 weeks ago (she’s over doubled her size since then!!!) and I chose to name her Suki which is Japanese for LOVE 💕 very fitting for this sweet muffin!! ✨ anyway, sending lots of love to all of you! Today’s healthy tip?! 💁🏼♀️choose to be present, appreciate the little things, and hug someone (or some pup 🤷🏼♀️) that loves ya! 🎉

Into week 7 of NYC half marathon training already, with 8 weeks to go, so essentially half way- time flies!! There’s been some ups and downs already in this training block 💫 I got a 5km PB 💡I discovered I really love doing 80-100m sprints after my runs 🥳 It doesn’t tire me but it does make my legs feel funny and glutes/hammies burn, good to get those fast twitch muscles switched on 💥 I’ve had hip tightness issues which means struggle st on long runs. I think it’s due to my lack of stretching and yoga lately so I’m ⬆️ this!! Long runs are obviously crucial for achieving a time goal in a half marathon, so I NEED to do a 16-17km Sunday long run this week or I may be in a lot of trouble 🌪 that’s about it folks ✨❤️🗽🚕
