Here's my take on seafood sauces: saffron and passion fruit! It's such a happy coincidence that the smell of both saffron and passion fruit do not overpower each other but rather give complexities of food within your mouth. Scallops can be removed from this dish to make it #vegetarian though I would rather have it in there.
A lot of people did ask me how I came up with this dish but it is very serendipitous! I once took classes with Gamberro Rosso and one of the dishes that we learned were new takes on the classic pasta dishes. At the time, one of the students in class brought in his home grown passion fruit. I asked the teacher whether it's possible to mix passion fruit into the cream sauce because I was not the biggest fan of creamy sauce. (I couldn't eat much of it without feeling bloated). Turns out it worked! Everything balanced out and I can keep on eating the wonderful dish.
