The Raiders Ransom - 2 oz Black Magic
- 0.75 oz Lime Juice
- 0.5 oz Rich Simple Syrup (2:1 ratio of granulated sugar to water)
Combine the ingredients into a cocktail shaker filled with ice. Shake well. Strain into a chilled glass.

Picking lemon balm with my son in my parent’s yard this past fall is a seasonal tradition. Excited for spring so I can teach him how to plant herbs as he learns to walk 😁 Have you ever used lemon balm in your cocktails before? It has such an amazing flavor profile! Fresh lemon balm tastes refreshing, bright and citrusy, like lemon with a hint of mint or lemon grass. Flavor is sweet but strong. Leaves are rough and a bit dryer than mint, while stems are juicy. 🌱

Elephant Gin with Tangelo & Golden Beetroot Tonic - fully counts as a part of your daily fruit and veg intake!
50 ml Elephant Gin
50ml of tangelo juice
Shake, strain & top up with Golden Beetroot Tonic.
How to make a Golden Beetroot & Tangelo Tonic:
Combine 2 boiled and quartered golden beetroot with 3 cups of water and blend until pulverised. Without straining, add 45 grams of citric acid, peels of 2 tangelos, 2 lime husks, 2 lemon husks, a pinch of whole allspice berries, a pinch of lavender and a pinch of salt. Let them sit for 48 hours or so, then strain through coffee filters. Add equal parts of this to a 2:1 sugar syrup and top up with sparkling water.

Created by bartender Chris Jepson at London cocktail institution Milk & Honey in 2002 as a simple twist on a gin sour, this cocktail is the only one to appear on every version of their cocktail menu since.
The addition of dry sherry to a gin sour demonstrates perfectly that a new ingredient can deliver new combinations and truly delicious libations.
Light, fresh and quaffable, we think this contemporary cocktail could well be a future inductee to the canon of gin classics.
