Celebrating Tino’s 4th Birthday this week so spent today putting together Star Wars themed goodie bags for his classmates, grocery shopping for the week (found awesome vegan school friendly muffins that were 🚫🥜 nut/🚫🥛dairy/🚫🥚egg free) and meal prepping for the two days we’re at home before heading to Disneyland and California Adventure!
It’s been awhile since we’ve been to both theme parks but Tino’s been wanting to do the Jedi Training Academy at Tomorrowland. Any must-see/things-to-do for 4 year olds 👦🏻 and babies 👶🏻?

Sunday night meal Prep. 😜
I been craving warm foods in the morning for breakfast that fills me up. .
So this week....Blackerry and Banana overnight oats. I added flax seeds and chia seeds, plus almond milk and whole organic yogurt for some added protein.

This buffalo chicken mac + cheese was seriously so easy and quick to throw together! I just used a @leancuisine white cheddar mac in each container, threw some chicken breast on top then drizzled over some buffalo sauce. Threw some steamed broccoli on the side bc #vegetables 🥦

I’ll have it up on my website soon, but here are the deets: sauté red potatoes in cast iron skillet w/ diced garlic. in separate pan, sauté breakfast sausage (I got mine from the farmers market). once potatoes have cooked, add in bell pepper & onion. sauté for a few more minutes. remove from heat & add in cooked sausage & chopped apple + fresh dill 💯
Finding comforts in cozy food recently 😌 I’ve been busy as heck recently and not really sitting down to mindfully eat, more like shovelling food into my mouth as fast I can 😅 This fast pace has caused me to be more anxious than normal, but trying to fuel my days with cozy foods like stews, porridge, and soups has help me find comfort on hectic ones 🙆🏻♀️ This cozy lentil curry stew is similar to the recipe in my feed except for I added corn, peas, hints of lime, and fresh ginger to it inspired by @gkstories Haitian corn and carrot stew which has a really cool motive behind the recipe; to help others ✌🏻I’ve been trying to thinking of ways our community can work together for the greater good with passion for wellness and food recently 😌 Let me know if you have any ideas, and happy Sunday friends! x

🍌Snack 1 - medium banana + 3 tsp peanut butter = Banana peanut butter sandwiches 🤤
🍕Snack 2 - rice cake with 1/4 cup marinara & sprinkle some mozzarella cheese
🍇Snack 3 - seedless grapes or freeze them and eat it like popcorn watching a movie!
🍳Snack 4 - 2 eggs + raw bell peppers
🥝Snack 5 - 1/2 cup kiwi berries or sliced kiwi if the berries can’t be found
🥕Snack 6 - celery + almond butter.
