I made this Peach/Lime sauce to go with some chili chicken. I didn't bother photographing the chicken since the sauce was so gorgeous it deserved its own picture.
Here's what I did:
1/2 cup of peach preserves
zest of one lime
juice of one lime. (If you microwave the lime for 15 seconds before juicing you will get a lot more juice out of it) ⠀⠀⠀⠀⠀⠀⠀⠀⠀
I just whisked it all together and warmed it up in the microwave until it was runny like a sauce instead of thick like a jam. I used it as a dipping sauce since not everyone in my family wanted to try it. Otherwise, I would have poured it over the chicken.
All I did for the chicken was cover it with salt, pepper, and chili powder. Then I seared it in a pan and added some butter and about 1/2 cup of chicken broth. I let the broth cook down until it left a yummy golden brown layer on the chicken. Then we ate it with rice. Yummy!
I added a behind the scenes shot just for fun. I used a light in the back and some black cards to narrow it down. There was also a flashlight off to the right with a piece of foil wrapped around it. I squished the foil down so that only a sliver of light was coming out. I pointed it directly at the glass so that I could light up the front and side. Then I moved the camera around until I found a really good angle. So much fun!
