Low Carb Marinated Korean Beef Ribs Convection oven baked!
It's also called LA ribs because supposedly Korean Americans in LA area developed this recipe.
Traditional Korean beef ribs are grilled or pan fried, but I wanted to make it really easy and mess free, so here we go:
600 g sliced beef short ribs (I got them bones attached)
1/4 cup soy sauce (gluten free if necessary)
1 tsp honey (if on more strict diet, skip this, but honey adds great flavor)
1 packet stevia
1-2 cloves crushed garlic
Bit of chopped green onions
Ground black pepper
1 tsp apple cider vinegar
Steamed cabbage (optional)
Mix all the ingredients except beef to make a marinade. Cut the beef into bite size and mix in the sauce and let it sit 4 hours minimum, preferably overnight.
Bake in a 375 degree convection oven for 25 min or so, or till your desired doneness.
You can also pan fry quickly.
Serve with lettuce or steamed cabbage

Today I'm getting my workout back on. The last 10 days I was focusing on getting my diet kickstarted, now I feel solid in how I'm eating I can focus some of my time on fitness. I ADHD and this have serious trouble focusing on more than one thing at a time I also have an obsessive nature which also makes it hard to focus on more than one ares of my life at a time. My goal is to get balanced and healthy and I've realized to do this I need to take small managable steps to improve my health, body and mind, rather than taking huge leaps that are not sustainable for me. Because every day is different I'm setting my intention on a daily basis.
Today I felt strong, even though I took 10 days off working out, my energy is great, so is my mental clarity, I've also noticed changes in my body, I can see my muscles now that the water and inflamation are gone, and I can see the pockets of fat in certain areas sitting on top of my muscles. .

Crocantes de chocolate com canela
1/2 xicara de farinha de linhaça usei @bobsredmillbrasil
1/2 xicara de agua filtrada
2 colheres de sopa de cacau em po sem acucar
1 colher de cafe de canela ou a gosto
Gotas de adocante Stevia em po ou liquido ou qualquer adocante liquido, ponha bastante que quando assa fica menos doce ( 6-8 gotas)

Misture tudo, passe no papel manteiga a massinha e asse em potencia alta por 1 minuto e 30 seg. A partir desse tempo, va fazendo de 30 em 30 seg ate ficar crocante ( faça em porcoes pequenas de cada vez ). Guarde em pote fechado. .
You'd surely have come across the coconut roti recipe. We just added garlic and methi for a little extra yum ☺️. We were cooking for 4 and you can 1/2 or even 1/4 it as you like 😬. Be sure to use warm water and also don't forget to allow the dough to sit for at least 5 minutes before you roll 😃
The dough should not be too tight as the psyllium husk will absorb water when it is kept to rest and may end up too dry. So if you feel you need a little more water, go ahead and add warm water a spoon at a time.😊

Recipe ( makes 16 rotis)
150 gm Coconut Flour
30 gm Psyllium Husk
1 cup warm Water
1 tsp Coconut oil
Pinch of Salt
6-8 Garlic pods minced
2 tbsp Kasuri Methi
1. Mix all the dry ingredients well before adding the warm water and oil.
2. Combine to form a dough and keep aside for 5 minutes.
3. Divide the dough into separate balls
4. Roll the dough ball between two baking sheets, in to the shape of your choice 😋
5. Jazz up your rotis with minced garlic and methi. Press in to the roti
6. On a hot tawa, spread a little ghee and place your roti over it for two minutes. Pat some ghee on the top as well.
7.Turn over and cook for another two minutes.
8. Repeat for all rotis and devour with your favourite curry 😬
Note: Do not expect free hand perfect circles. It.will.crack at the edges ! It will still taste fantastic. I cut it out purely for photo purposes 🙈
It was my first food out after a long time. We're still keeping ourselves in ketosis.
After 12 weeks and 12kg down I'll don't mind breaking ketosis from time and not being so strict. Being keto has a powerful effect on the body and mind.
