These Berry Bombs truly made me feel like I was cheating. Soooooo good! 🍓🍫. . .
- Berry Bombs 💥 :
Mix Cream cheese with granular monk fruit and vanilla extract. Cut off bottom tip of strawberries so they can stand properly. Cut off top and curve out a little bit of strawberry center and stuff those babies full. Sprinkle with almond flour as a crust/nutty topping or with cacao...live a little and do both - your taste buds will adore you for it 💕 You can also use whipped cream cheese and powdered sugar sub for a lighter fluffier bomb 🍓 . .
It is so incredibly easy to look at this photo and criticize everything about myself. My arms look too big, my double chin is peaking, I look too wide, the list could go on.
Instead, when I take a photo, I don't want all of my insecurities about myself to come through. Everytime I take a photo of my body, I want to remind myself that I'm doing a good job and that I'm grateful to be alive, and grateful that I had my awakening to a healthier lifestyle.
Tonight was a challenge, not gonna lie. With this low carb and low sugar intake life I've decided to lead, sometimes food options at restaurants are limited. Especially tonight. My sister wanted to go to an Italian restaurant for her birthday tonight. Pasta and garlic bread galore. It took every single bit of my will power to say no. Instead, I stuck with vegetables and meat. This is a photo an hour or so after making that conscious decision and feeling proud that I actually had the will power for once to say no. Breaking my food addiction in this journey has been the hardest thing. I have definitely been an emotional eater for most of my life, anytime something depressed me, I would eat something I knew wasn't good for me just to feel satisfied.
Tonight, I am proud of where my body is right now. I am proud of my will power. I am proud of my choices. I am proud of my commitment to becoming healthier.
I hope you'll be proud of yourself too.
Funny that I've finally decided to try and make a Keto version of porridge and the weather warms up.
That's OK though, I would gladly make this any season for breakfast, it's that delicious!
I've topped mine with some frozen Blueberries, a tsp of shredded unsweetened coconut and a tbsp of sugar free maple syrup.

Please note that the macros do not include the toppings.
OKAY ONE MONTH UPDATE.
I've been doing this low carb thing for a month now and I'm starting to feel like this is second nature. I mean, I'm not going to turn down a cinnamon roll or anything. Don't get CRAZY. But I don't keep cinnamon rolls around or have much occasion to eat them, is what I'm saying. I have learned how to make regular low-carb, low-sugar choices. I feed myself more efficiently than before.
Stats-wise, in the last month, I've lost 1" around my arms, 2" of my bust, 1.5" around my waist, and 2" around my belly. Which is A LOT of fat loss on my curvy, athletic frame. I'll take another progress photo soon. I'm feeling more comfortable in my clothes too, not so squished, and I'm loving it.
I'm also lifting and running, so I'm building lean muscle. Enough that my thighs and ass have not shrink AT ALL and I'm so happy about that! I love my nalgas. On the scale, I averaged 165 when I started and I'm averaging 161 now. Which is incredible, considering how many inches I lost. Goes to show how much heavier muscle is than fat. So the number on scale isn't the best indicator of my progress, but I'm tracking it anyway and it's nice to see that downward trend toward a healthier BMI. Even if BMI isn't a perfect indicator of health either, haha. BUT GENERALLY, I'm getting more fit and healthy and I'm loving it. Yay!
Dinner out with hub and my baby. 8 oz Flo’s filet with asparagus and a Caesar salad (no croutons). I hate about half the steak and like two stalks of the asparagus. At all the salad thought, my favorite 😂 7 net carbs for what I ate.
