So we cooked some proper authentic Chinese dish in our kitchen tonight
Chong qing spicy chicken
For those of you who don’t know, Chongqing is located in the Sichuan province of China and has over 30 million people living there. Imagine how much Chongqing chicken and other spicy hot food is being consumed there, and people over there love their spices.
This dish is made up with dry red hot chilli peppers, garlic & ginger and to top it off with a touch of peppercorns to give it extra kick of spice 😁🌶️ If you think our spicy box is hot, this is the next level 🔥🔥🔥 Hands up who'd like to give this dish a try? 🙋♂️🙋♂️🙋♂️😁 #authentic#spicy #limavady#tastyfoods

Every school boys dream..16 year old Sam McClelland from Limavady signs full time this week for Chelsea FC. A remarkable achievement by a local lad who first started training with me when he was 10 years old. Sam's father Ricky McClelland brought him to me 6 & 1/2 years ago looking for guidance on developing his son physically because he saw potential. My first conversation went along the lines of "developing a long term plan to build Sam for the future not a 6 week programme." And possibly not seeing any drastic physical changes over the first 1-2 years due to being pre-adolescent, but every session completed was going to be one in the bank for the future.
So many people in and outside of the gym who are aware of Sam and his progress always ask what has Sam done to achieve the level of physical conditioning he is now in.
At 16 he can squat 120kg, deadlift 130kg, clean & jerk 75kg all for reps..and can shift on the pitch as well as he can lift..These lifts were accomplished by progressing from basic bodyweight exercises and drills, movement and coordination drills, to band resistance and light medball drills that sometimes had a game component involved. Dumbbells were then introduced and then barbells. Exercises were carefully chosen to match Sam's level of physical development and maturity, from 10 years old up to 16, not the other way around.
Everything was completed with the goal of mastering each exercise at each level before progressing onto more technical and challenging exercises. And never did we lose sight of the fact that practising football skills daily were absolutely essential. But also never fogetting that developing key physical competencies would enable Sam to reach a higher level of technical proficiency.
I can remember Sam with one injury in over 6 years which was a contact injury. His committment to excellence whether it was the strength & conditioning component, or the flexibility and mobility areas of the programme that were laid out meant that he had developed resilience to withstand anything thrown at him on the pitch.
