WAKE SHAKE WAFFLES RECIPE:
2 lg eggs
1 scoop unflavored protein powder (I used unflavored whey protein isolate)
1/2 scoop WakeShake (protein shake w/collagen from @superbodybreakthrough- see notes)
2 Tbsp almond flour
2 Tbsp heavy cream (can use half & half)
1 Tbsp Brain Brew (MCT oil) or other oil/melted butter
Small sprinkle baking powder
Splash vanilla extract
Sweetener of choice
Made 5 mini waffles using my Dash mini waffle maker (bought on Amazon). SWIPE⬅️ thru the pics to see the macros for 1 mini waffle, and for the whole batch! Macros calculated using the app “LOSE IT” with the ingredients I used- if you make substitutions or use different brands your macros may be different so always calculate your own for accuracy. I provide them for general reference 🙂.
NOTES: the only flavor of Wake Shake that’s still available to buy is the caramel latte, which is DELICIOUS, but if you don’t have any (I still have some left from a while ago) or don’t want to order any, you can sub 1 Tbsp cream cheese & 1 scoop collagen peptides.
By using WakeShake instead of cream cheese in the batter, they aren’t as dense and dry as other variations I’ve tried. They got crispier on the outside and were softer and more moist on the inside (that’s what she said...). Like a “real” waffle, not just a waffle-shaped egg (you know what I’m talking about!).
I drizzled half a packet of @adaptyourlife vanilla coffee shot over the 2 mini waffles I had. For my ENTIRE breakfast (2 big coffees w/half & half and heavy cream, 2 mini waffles, & the topping) it was only 3.5 net carbs but packed in 21g of protein!

Random look at what my weekly shopping looks like. Yes, it was just these items (I’m lying, there was a can of biscuits at the bottom of the cart but they weren’t for me, I swear!). I typically bulk buy organic meats at Costco once every month or two months and plan my menus around that. (Let me know if you want to see a typical Costco cart from me.) I’d say that usually comes up to about $100? Throughout the month, I usually just need veggies or other small things, and I spend $20-30 max, depending on where I shop. In case you don’t feel like doing the math, that’s about $220 per month on groceries at the higher end. #winning 💰
Also, I definitely preach eating very clean and unprocessed. 92% of the time I adhere to that. BUT I’LL NEVER GIVE UP MY CAN OF EXTRA CREAMY REDDIWIP!!! Idc idc. When those sweet cravings hit and you don’t have room in your macros for a fat bomb or keto cookie or whatever, a squirt in the mouth of some whipped cream does the job for only 15 calories and 1 carb lol. @reddiwip is a lifesaver and near and dear to my heart. You can pry that can out of my cold, dead hands 🧟♀️

But just be aware of some stuff. If you're adding 4, 5 or even 6 pumps of Sugar Free Vanilla syrups from Starbucks to your drinks, it's going to make your blood sugars sky rocket. Their sugar free Vanilla syrup is indeed sweetened with sucralose which has a GI of Zero. Buuuuuuut, it also has maltodextrin. Maltodextrin is a zero calorie sweetener, but it has a GI of over 2xs what sugar is, coming in at a 110 on the glycemic index 😥😮😯. Pure table sugar has a GI of 43.
Mocha and Cinnamon Dolce are sweetened with Sucralose. Their chai syrup is sweetened with honey and sugar.
If you want to avoid the spike in blood sugars, my advice is you use the cinnamon dolce or bring your own sweeteners. I get the @wholeearthsweetener at Starbucks. I noticed they no longer carry packets with fructose in them. At least, they don't here anymore and I saw other people mention it as well. So, I'm thinking it is the same everywhere now. But, as with anything, always check your labels.
So, yeah, just a head up in case you didn't know. :) .

You'd surely have come across the coconut roti recipe. We just added garlic and methi for a little extra yum ☺️. We were cooking for 4 and you can 1/2 or even 1/4 it as you like 😬. Be sure to use warm water and also don't forget to allow the dough to sit for at least 5 minutes before you roll 😃
The dough should not be too tight as the psyllium husk will absorb water when it is kept to rest and may end up too dry. So if you feel you need a little more water, go ahead and add warm water a spoon at a time.😊

Recipe ( makes 16 rotis)
150 gm Coconut Flour
30 gm Psyllium Husk
1 cup warm Water
1 tsp Coconut oil
Pinch of Salt
6-8 Garlic pods minced
2 tbsp Kasuri Methi
1. Mix all the dry ingredients well before adding the warm water and oil.
2. Combine to form a dough and keep aside for 5 minutes.
3. Divide the dough into separate balls
4. Roll the dough ball between two baking sheets, in to the shape of your choice 😋
5. Jazz up your rotis with minced garlic and methi. Press in to the roti
6. On a hot tawa, spread a little ghee and place your roti over it for two minutes. Pat some ghee on the top as well.
7.Turn over and cook for another two minutes.
8. Repeat for all rotis and devour with your favourite curry 😬
Note: Do not expect free hand perfect circles. It.will.crack at the edges ! It will still taste fantastic. I cut it out purely for photo purposes 🙈

I'm weighing in 2 days early as I'm off to LA in a few hours. This is my shittest week yet. I think its because I was so unorganised, really busy and knew I was going to stuff it all up in a few days.. there's something to be said about mindset. I'll still weigh myself once I'm home and start the program from week 1 on Monday 4 Feb. If you dont hear from me I'm busy getting my face tattooed on Vegas 🤣
It was my first food out after a long time. We're still keeping ourselves in ketosis.
After 12 weeks and 12kg down I'll don't mind breaking ketosis from time and not being so strict. Being keto has a powerful effect on the body and mind.

Hi, my name is Keri and I'm addicted to iced coffee. 👋 My iced coffee addiction is legit the only reason that fasting is hard for me during the work week. I "need" it to get my brain working. I have heard the phrase "dirty fasting" thrown around quite a bit lately, so I suppose I'm dirty fasting with my iced coffee. It has 1.5 TBS of sugar free vanilla syrup and 1 TBS HWC. Very low calories, but still not a true fast. It works for me though! I won't be eating anything until after 11.
It’s been a rough month for me with Keto. I gained a lot of weight on our cruise & I haven’t been feeling well since we got back so I haven’t been sticking to my intermittent fasting schedule. I’ll be honest I feel a little down about my body. I never thought Keto would work, I mean I hoped it would clear up my candida symptoms & help with my infertility & hormone issues. I thought there was a chance I could get off my thyroid medication. But I didn’t really BELIEVE I was going to lose weight. It’s weird. I feel like I had accepted being obese. Like in my mind I was just taller than most (6ft.) and a little thicker. 🤷🏼♀️Boy am I glad I had other motivators. Because Keto has changed my life. I RUN & PLAY with my daughter now without feeling like I need a nap after (well not this week 🤦🏼♀️ but usually!) I wake up feeling energized & alert now. I know I will fit in chairs now. I know I can buy clothes at any stores now. I know I can handle outings with my active husband & friends without knee & foot & back pain. I KNOW I can do things. It feels good. I may not have the perfect relationship with food, or with my body yet, but I’m working on it. I’m going to keep going for my daughter, and for myself. I think this is around the time where New Year’s resolutions lose their shine a bit. So if you’re like me & struggling right now, please stick with it. In 9 months from now think about where you could be. Don’t give up on yourself. Don’t beat yourself up if you’ve already fallen of the wagon. Give yourself a little grace to stumble at first. But KEEP IT UP. For you now & for future you. 💪
