It seems like ages since my last post. What do I say? Life happened and I was not able to post although we didn't stop eating or cooking as a matter of fact 😁😅. I appreciate everyone for understanding.

Today's toddler snack box vegetable cutlets, a great way to sneak in all veggies in these yummylicious patties and some butter popcorn.
I have used very less oil to shallow fry the cutlets on a tawa and veggie list - Beetroot, Carrot, Beans, Cabbage, Ridgegaurd, SweetPotato, Spinach, Fenugreek, deseeded Green chillies, Cumin Powder, Chat masala, Turmeric Powder, Chopped Coriander leaves. Like I said any combination of vegetables will work. I've used Chickpea flour & Rice flour as the binding agent, use very less binding agent just enough to hold them together.
Dinner leftovers for lunch. My husband is an amazing cook! He tried a new Mac and Cheese recipe tonight and it was F*CKING. GOOD. Perfect little noodle pockets of smooth creamy cheese sauce, overcooked crunchy bits on the tops and side. Literally perfect Mac and Cheese. Next time he's making it with smoked Gouda and I'll probably die.

- wholemeal sandwich. Half with vegemite, half with chickpea salad - strawberries
- raw sugar snap peas, celery and green beans
- mini lunchtime harvest muffin (see yesterday's post for the recipe)
- banana (though I actually did a swap and put an apple in instead)
⭐️ Quesadilla Lunchbox 😋
Quesadillas are a firm favourite in this house. We have them lots and like to have different fillings in them! That’s the great thing about quesadillas, you can fill them with whatever you like and they’ll always be tasty 😍
Last week in my stories I shared the girls lunchbox and I had so many comments about it, I thought I would share one on the grid. This one isn’t the best looking lunchbox as it’s a bit of a fridge raid but the girls really enjoyed it and finished most of it, only leaving some of their trail mix.
In this lunchbox we have -
Trail mix - I make trail mixes for the kids and keep them ready to go. I’ll share the recipe of these later this week 😀
For the quesadillas we used -
2 tortilla wraps
1/2 cup grated cheese
1/4 cup sweet corn
1/4 red pepper, diced
2 cherry tomatoes, diced
1/4 tsp ground cumin
1/4 tsp ground coriander
I also usually put black beans or red kidney beans and fresh coriander but didn’t have any of these!
Put all of the ingredients into a bowl and using a potato masher, lightly mash together. Put this mixture onto one of the tortilla wraps and put the second wrap on top. Transfer this onto a frying pan on a medium heat. Cook on both sides for a couple of minutes, flipping half way to cook on either side.
When at home we serve with guacamole, sour cream and homemade sweet potato fries.

First days can be hard depending on how your little one transitions. .
My guy likes things to be predictable, so I helped him look forward to his first day by giving him some control, some choice over his lunch and snack.
He got to pick out a new towel and a snack at the store. He picked out chocolate animal cookies. (There was a 💯 % chance of him picking out something chocolate 🍫.)
I also let him pick his “main” lunch. He picked his “FAVORITE, seed butter and jelly” sandwich 🥪. I picked the sides, but stuck with his favs today. Fruits and veggies will almost always be 2 of the 3 snacks I provide, and then 1 will be something sweet or crunchy. .
Here are some great ways to give your kids some choice, but within your limits.

🌱What shape should we cut your sandwich 🥪? (PS - highly recommend sandwich shape cutters. Super easy way to make a sandwich special.)

For 8 and younger, I recommend giving your child ONE of the choices above⤴️, not all. As they get older, you can start getting them more involved in the whole process, teaching them the categories (main, fruit, veggie, crunchy or sweet) and adding in more choice. .
