Trying out another homemade Japanese dish...hot soba. Using already pre-made dashi stock just needed to add saki, mirin, light colored soy sauce, then finished with seaweed, fish cakes, bamboo and spinach. Let’s chat about books for back to school. As a parent my all time favourite book I have shared with my own children is The Kissing Hand. A beautiful heart warming story that will support any children (or parents!) nervous about making this big transition. I will read this at the end of the first school day so the story stays fresh in my student’s minds so they can share with their families. I normally begin the day with The Things I Love About School but this year I’m going to use Old Friends New Friends with my grade 1’s. There are so many back to school books I’d love you to share some of your favourites below! 🤗

Who doesn't love chocolate chip cookies! Crunchy on the outside and chewy on the inside... my fave! These cookies are a take on Almond Joy candy bars. I especially like that these are made with 4 ingredients! Husband & kid approved! 🙌

You know what makes me happy? Seeing my boys ♥️love♥️ the food that I make! Paul had seconds and then thirds and Keoni only had room for seconds. This is my favorite instant pot taco/burrito ground beef recipe now!
Instantpot Taco Meat:
2 lbs grassfed grass finishes beef
1 red onion
4 garlic cloves
1 red bell pepper
1 green bell pepper
1 yellow bell pepper
2 tsp chili powder
2 tsp oregano
1 tsp salt
1/2 tsp turmeric
1/2 tsp pepper
1 tsp paprika
1 tsp cumin
1/2 tsp cayenne
Sauté all ingredients except for beef for 5 minutes. Add beef and brown till almost done. Cook then for 10 minutes.

1 bundle of spinach
5 kale leaves off the stalk
Few handfuls of #basil
1 garlic clove
1/2 cup olive oil
1/3 cup sunflower seeds
Blitz in food processor.
Toss with cool pasta. I used Kamut penne noodles.
Add cherry tomatoes.
Bake w for 50 min at 375F.
Top with cheese, if that’s your thing.
Still on the breakfast kick. I needed to finish up some cottage cheese, so I made these cottage cheese and applesauce pancakes. Definitely a 👍👍 all around and only around 30 calories per pancake #daddybakes2
Tonight’s 🍽 was pork chops and my favorite...applesauce🍎🍏 I whipped up some homemade apple sauce that is the💣 Okay, I didn’t actually whip anything but I did slow cook and blend🤷🏻♀️ Sweetened with coconut sugar🥥 and the natural sweetness of apples😋 It’s a delicious, healthy alternative to store bought and it’s soooo easy to make! Super fun baked eggplant “fries”. My daughter polished 75% of the batch I made tonight! Super duper easy. Here’s how you make em:
Slice a medium sized eggplant in matchsticks with peal on ( you may peal if you don’t like the texture ). Prepare two bowls.
Bowl one : two eggs whisked
Bowl two: almond flour with spices.
You can make the spices extra sweet or extra hot by adding chili or brown sugar. It’s customizable. Here’s the spice blend that went with the flour :
One Tsp salt
One Tsp pepper
1/4 cup almond flour
One Tsp garlic powder
1/2 tsp onion powder
Dash of chili flakes
One Tsp paprika
What to do :
Dip into egg then flour mixture and place on tray , with enough space in between the fries. Spray with avocado oil ( to get crispness). Bake on 400 for 20 degrees. Enjoy with your favorite dipping sauce. We made an easy creamy mayo dip ( mayo, honey, garlic, salt and pepper, oil). Oh , of course there’s always ketchup. Duh .. Enjoy !

Tonight's dinner was another family favorite with all its cheesy goodness. Baked "ziti" made with cauliflower. Cauliflower is a huge staple at our house because of its versatility. This is an easy weeknight dinner to throw together!
Brown 1 lb of ground beef with some diced onion. Mix in a 28 oz can of crushed tomatoes. Season with salt, pepper, basil, & oregano. In another pot steam a head of cauliflower florets (or 6 cups frozen). Once soft, drain and mash slightly so there are no large pieces. Mix the meat & tomato mixture into the cauliflower. Layer half of the mixture in a lasagna pan. Put dollops of ricotta cheese and spread. Sprinkle grated mozzarella cheese. Top with the rest of the meat & cauliflower mixture. Put more of both cheeses on top and bake at 375 degrees until cheese is bubbly.

Ok so these certainly don’t look like much, but they are! Earlier this week I boiled over a pound of chicken livers with an onion, then blended them with some ghee and then froze into those cubes. Tonight I popped 6 in the spaghetti sauce I made, along with a pound of sausage/ground beef. It was delicious, and nutritious. These delicious banana bread 🍌 muffins are kid approved and only 92 calories each.
3 ripe bananas (about 370g)
1 whole egg + 1 egg white
1/8 cup Swerve brown sugar substitute
1 packet of stevia
1 tsp vanilla extract (I was out so I improvised and used torani sugar free vanilla syrup)
50g oat flour
50 g rolled oats
2 scoops vanilla casein protein powder (I used muscletech)
1 tsp baking soda
1 tsp baking powder
1/8 tsp salt
Optional: chocolate chips .
Preheat oven to 350 and use paper or silicone liners in a muffin tin.
Mix together mashed bananas, egg and white, swerve brown sugar, vanilla, and stevia packet. Whisk with a fork until smooth. Combine in a separate bowl the oat flour, oats, protein powder, baking powder, baking soda, and salt. Add to wet mixture. Fold until combined. Evenly divide batter between 12 muffin cups. Top with chocolate chips.
Bake for 12-15 mins or until toothpick comes out clean. Let cool before enjoying.
Homemade Pork Rind Chicken Tenders from my Story last night. I crushed pork rinds, added seasonings, dipped chicken in egg wash then the rinds. I cooked the outsides in a hot pan with butter then finished them off in the oven. Pretty tasty. Almost like the real thang! Even my 13 year old son liked them! 👌🏽 .
yup-this is what dinner looks like some nights. it looked pretty amateur but tasted pretty great. buffalo turkey/beef meatballs with sliced veggies, tessamaes ranch and a smoothie.
1 lb ground turkey
1 lb ground beef
**its what I had on hand and I used it all to ensure leftovers
1/3 cup panko breadcrumbs
1 tsp salt
2 tsp pepper
3 cloves minced garlic
1/4 cup shredded (finely) carrot
combine mixture and roll in 24-26 small meatballs
Put into 400 degree oven for 22-25 mins
Once out, pour buffalo sauce over and serve
2 ripe bananas
1 red apple
2 TBSP cocoa powder
1/2 tsp cinnamon
2 pitted dates
1 scoop vanilla collagen powder
1.5 cups unsweetened vanilla almond milk
1 handful ice cubes
Blend and serve

Peas and corn, dressing, salad with turkey, pretzels, blue berries and an oatmeal banana raisin cookie

Dinner on the go doesn’t always mean peanut butter and jelly!! We eat on the go one night a week, dance! I was sitting in traffic but now we leave 5-10 minutes earlier and get there early enough to eat!

We’re all having dinner a little later this evening when daddy is home from work & there was 1 lonely pinwheel left in the freezer so I thought I would use it up so I can make another batch the weekend.
Joe had his pinwheel with sweet potato chips, cooked in the oven with a little fry light & smoked paprika, cucumber & 1/2 a tomato.
I think this is the first time he’s had a proper tomato, he’s always had cherry tomatoes, but he had so much fun eating it & ate the lot!
