I have had so much pumpkin in the last 2 months and I had to share one of my favorite pumpkin snacks.
These energy balls are full of flavor, fiber and good healthy fats.
Josie helped me roll some and ate much more than she rolled so they are definitely #kidapproved
Ill share a quick video tutorial in my stories later but the recipe is below.
They take like 15 minutes to make and require no baking!
BTW if you have never had one degree sprouted puffs you will love them added to all kinds of baking recipes!
1/4 cup cacao nibs
1/2 tsp black strap molasses (optional and can sub honey, but love it)
3 tablespoons maple syrup
3/4 cup gluten-free organic rolled oats
1/4 cup almond butter or peanut butter (I don’t eat peanut butter but kids love them this way!) ~~ 1 cup canned pumpkin puree
2 tbsp coconut oil
2 tsp pure vanilla extract
1 tsp pumpkin pie spice
1/4 tsp sea salt
1 cup @onedegreeorganics One Degree sprouted brown rice cacao crisp cereal (to roll balls in to coat.) 🌰
Pulse the oatmeal and cacao nibs in a food processor until the size of small crumbs.
Add the remaining ingredients, and pulse until well-combined and mixture holds its shape when pressed together.
Roll the mixture into 1 inch balls.
roll the finished balls in organic cacao rice crisps and place in freezer for an hour.
Then store in fridge
These #stuffed#portobello#mushrooms were the bomb. Super filling and satisfying. It's such a versatile dish.
What you'll need :
*portobello mushrooms *tomato puree *ground sausage
Cook ground sausage.
Preheat oven for 350°
Add tomatoe puree, garlic, italian seasoning or whatever you want in your sauce.
Prep your mushrooms. Clean the insides out and bake for 12 min have them cool then stuff. Cook for 15 min then add cheese and cook for 5 more min! Cool then enjoy!

The kiddies couldn’t decide whether they wanted an omelette or scrambled eggs for brekky. So I made both! Didn’t take me any longer than two omelettes would have, and they loved it! We’re going to Jord’s mums this afternoon for Thanksgiving dinner because on the actual day we’ll be in DISNEYLAND🎇 I cannot wait to see Theo’s face as he takes everything in😍
6 slices @daveskillerbread raisin bread
1/4 C milk, I used @ripplefoods
1 tsp vanilla extract
A bunch of cinnamon
Whisk together eggs, milk, vanilla, and cinnamon. Pour in a casserole dish and add your slices of bread. Let them soak in the egg mixture for a good fifteen minutes, flipping them halfway through. Add butter to a pan and let it warm on medium heat (make sure the pan is well-heated before you add your bread). Place the slices on the pan and cook for about two minutes on each side, until they are nicely browned. Top with your favorites and enjoy! I topped with pomegranate seeds, banana, and sautéed pears.

I’ve been very quite here over the last few weeks – November means the end of the teaching semester at the University which has meant exams for my students and assignments and marking for me ✏️📓 Add to that a 5 yr old birthday party 🎂 and crafting for the school fair next weekend and a couple of guest blog-posts ✏️✏️✏️ , and that has left very little time for writing posts . This is definitely not a complaint! I love being busy 😊 and cramming as much as I can into life, but I want to make sure I give you quality 😇 So with plenty of ideas ready 📕📗📘 , it’s back into it…once I knock together another 60 Christmas decorations 🎅 for the school fair 🎪

Definitely the coldest farmers market we’ve ever been to, but it was worth it! ❄️ We got lots of fresh organic vegetables, king trumpet & oyster mushrooms, apple cider 🍎, tart cherry concentrate 🍒, raw buckwheat honey 🍯, and fresh raw organic peanuts to soak and make homemade peanut butter with in the Vitamix 🥜 Organic pastured turkey & beef for Dazzle & Gabi 🐶🐕 and Hailey Tzu will enjoy some of the bok choy, carrot tops, arugula & spinach 🐰💚 The beets went into the Instant Pot, as soon as we got home and the sugar rush peach spicy peppers are in the dehydrator to make crushed chili flakes with tomorrow 🌶💚
