Just made @ketogenicgirl ‘s cheesecake fat bombs...and added a twist! Took our LAST @stokabars, crushed it in its wrapping and made a crust for this incredible cheese cake. Such a wonderful pairing!!!! Super easy and absolutely filling.

Last night’s dinner. We always hit Yard House when we’re here, but this was my first visit since starting keto. This chicken isn’t the most keto friendly option on the menu but Polynesian food is one of my faves and I craved a nod to it, so made the conscious decision to order it. I omitted the delicious pilaf that normally accompanies it and replaced it with the broccolini. My husband ate the grilled pineapple spears (except for the one bite I had!) and I only used a bit of the amazing (sweet and tangy sauce ... I’m sure loaded with sugar and pineapple)! Delicious and barely a deviation off plan as I’d only had a couple of carbs earlier in the day. #ketodinner#ketorestaurantoptions#ketoonvacation
Today’s #nsv: i bought these clothes for myself when i was 5 months pregnant with my daughter. I needed something comfortable that i could wear later. However, these pants were tight even after i had my daughter. Which tells me the weight didnt go anywhere but up!🤦🏾♀️ But today my victory came in the form of being able to use the bathroom without needing to unbutton my pants. Its a small success but i am soaking it up. For someone who always had to “suck it in” in order to get pants on, and feel complete “relief” when i got to take pants off, this lil victory is everything. I didnt take pics from the beginning, i think i was too ashamed, and i was terrified of weighing myself. I know my victories will come in the form of inches and clothes because ya girl aint stepping back on that scale unless it’s life or death 💀. So i guess ill just #ketoon

1 large head cabbage, leaves separated
2 tbsp. extra-virgin olive oil, plus more for baking dish
1 onion, chopped
2 cloves garlic, minced
1 1/2 lb. ground beef
1 (28-oz.) can crushed tomatoes
1 tbsp. balsamic vinegar
1/4 c. torn basil leaves
Freshly ground black pepper
3 c. ricotta
2 eggs, beaten
1/4 c. grated Parmesan, plus more for serving
3 c. shredded mozzarella .
Preheat oven to 350°. In a large skillet over medium heat, heat oil. Add onion and cook until onion is soft, about 5 minutes. Stir in garlic and ground beef, breaking up meat with a wooden spoon. Cook until beef is no longer pink, about 6 minutes; drain excess fat. Add crushed tomatoes and balsamic vinegar. Bring mixture to boil then reduce heat and simmer for 20 minutes. Season with salt and pepper then stir in basil.
In a medium bowl, combine ricotta, eggs, and Parmesan.
Grease a large baking dish with olive oil. Spoon a thin layer of sauce into bottom of baking dish. Add a layer of cabbage leaves, then top with more sauce, ricotta mixture, and mozzarella. Repeat layering twice more.
Bake until cabbage is tender and mozzarella is bubbly, about 25 minutes. Garnish with more basil.
