So we witnessed this year the birth of a second flower from our Yucca, after only one single flower last year, following several decades of no flowering at all. So the strong magic of nature can be right under one's nose, but one must be willing to see it. Not that one can see past this enormous sized flowers, but stiil... 😹
As I was focusing on first flower already, I was in time to see the second one peeking up it's head in it's first day or so, and as you can see in these shots, these flower stems are born white, but quite soon turn into other most stunning colours 😻

Well it’s almost half way to the weekend! Woohoo! Work has been busy today so late again with the post... better late than never, right? So soak it up.... well here is my little sidekick, soaking up the sun!! 2 lb cubed beef (or lamb or pork)
1 large onion
2 Tablespoons olive oil
3 tsp chopped fresh mint
3 tsp chopped oregano (optional)
salt and freshly ground pepper
8 ounces very ripe tomatoes, or 1 large can of chopped tomatoes
1 large clove of garlic
2 tsp ground cumin
Preheat the oven to 350 F
Cut the meat into 1 inch cubes. Cut the eggplants into cubes about the same size as the meat.
Heat the olive oil in a Le Creuset @Le creuset or dutch oven and sweat the sliced onion. Add the meat and allow it to brown, sprinkle with mint and marjoram and season. Transfer the meat and onions to a plate while you fry the eggplant.
Toss the eggplant in olive oil in the pan, season with salt and freshly-ground pepper and cook for 10 minutes. Add to the meat and cover. Blend the tomatoes, chop them up and put them into the Dutch oven with the meat mixture. Add crushed garlic and the cumin. Cook on a gentle heat or in a moderate oven for 1 hour approx. Taste, correct the seasoning and de-grease the cooking liquid if necessary. Serve with rice.

The white long border is really pulling its weight this year. I don’t remember a year when it has bloomed and looked so consistently good for so long, I think I finally have got the balance of early bloomers to late bloomers in balance. Thanks for the inspiration Vita 😍
