Qualche volta bisogna aver il coraggio di spingersi oltre le proprie capacità in cucina, anche se, si sa, in questo modo l'insuccesso è dietro ogni passaggio... Forti di questa consapevolezza, oggi ci siamo cimentati niente-popó-dimeno 😬 che nella cucina molecolare (si, lo sappiamo, vediamo troppi video di cucina 😂) , per valorizzare questo taglio di carne di Agnello davvero spettacolare.
La carne è stata cotta intera a bassa temperatura, per poi essere tagliata e servita su una spuma realizzata con funghi Finferli e parti verdi di Catalogna spigata ed il tutto è poi stato arricchito di un filo di Olio evo, sale e Pepe appena macinato. La preparazione della spuma, se si ha a disposizione un po' di Lecitina di Soia, è abbastanza semplice ed il metodo ci ha suggerito un mucchio di idee per le prossime ricette, perché si presta bene ad unire i sapori, mantenendo al contempo una leggerezza gradevolissima.
Che dire, a noi sembra di essercela cavata bene come primo tentativo 😏.
Si, l'impiattamento è un po' anni 80, ma il sapore fa perdonare la presentazione... Ci miglioreremo 😄 nelle prossime ricette, perché oramai ci abbiamo preso gusto 🤭.

Family recipes are the best recipes, and they’re passed down from generation to generation for one reason: they’re freakin’ amazing. Big on soups lately so I made a slow cooker mexican-style shredded chicken soup. This recipe is particularly easy because you throw all the ingredients in a slow cooker (except for the rice), set it on high for 4-5 hours and let it do the work for you. You then take out the cooked chicken breasts, shred, and throw them back in the cooker. I make my rice seperately & add a few spoonfuls in the bowl when serving. •
3 small chicken breasts
4 cups chicken or veggie broth
1/2 cup onion, chopped
3 garlic cloves, minced
2 cups tomatoes, chopped (canned is fine, too. But chopped is healther 😉)
1 cup bell pepper, chopped
1 1/2 cups black beans (canned is fine)
1 small can green chiles
1 1/2 cup rice
1 tsp tomato paste or 1/2 cup salsa
1 tsp chili powder
1/2 tsp coriander
2 tsp cumin
1 tsp paprika
S+P to taste
Garnish of your choice

Not super glamourous. But this is how my eggplant parm cakes ( from my stories on monday!) came out! Non fat parm @traderjoes and for breadcrumbs, I used my homemade clean Breadcrumbs and flax egg replacement. No oils were needed. Leaving this savory lil cake, clean clean cleannn. Next time, i’ll bake it on less time, I just love my cheese well done! Yah know what i’m sayinnnn’

Bliss balls, energy balls...whatever you like to call them, can you ever have too many recipes? We always have a batch in the fridge to grab on the go and this is the current favourite ~
Ginger & OJ Bliss Balls
🍊3/4 cup dates
🍊1/4 cup raw cacao
🍊3/4 cup almonds (or nut milk pulp)
🍊3/4 cup rolled oats
🍊1/2 cup shredded coconut
🍊1/2 cup sunflower seeds
🍊5 drops ginger essential oil
🍊7 drops wild orange essential oil
Process everything together adding a little water to bring together if needed. Roll in desiccated coconut.
Other essential oils you can add to raw snacks are peppermint, tangerine, cinnamon, citrus bliss, lemon, lime, so many options to add extra flavour😋
