Coconut brown butter cookies from @smittenkitchen
I think these cookies are the best thing I've ever baked. I used to skip over recipes that called for brown butter because I couldn't be bothered. Then I googled it and learned that it's just heating butter until the milk solids brown. An easy enough step that made me reconsider every brown butter recipe that I had passed on. Apart from letting the brown butter re-solidify, these cookies were fast and easy to make. More importantly, they used up an entire bag of coconut that I've been dying to get rid of. These cookies will fill your kitchen with an unrivaled toffee aroma. But the taste. THE TASTE. They taste like caramel popcorn and potato Lays had a baby. Ok ok, not my best description, BUT THEY TASTE REALLY GOOD. The excess of coconut flakes gives the cookie a lacy, crispy, crunchy texture. The brown butter lends it a flavor reminiscent of butterscotch. Not unlike the caramel popcorn, these are on the sweeter side but the perfect amount of salt keeps you coming back for more. Pre-bake, I was peeved that I STILL had another bag of coconut in the freezer. Post-bake, I'm lamenting that I ONLY have one bag left.

There is something about when I spy the first bag of cranberries of the season in the stores. It sort of signals in my brain the beginning of the Holiday Season!
Cranberry Oatmeal Crumble Bars
(Totally amazing recipe inspired by @averiesunshine 🙌)
2 cups fresh cranberries
2 teaspoons orange zest
1/4 cup orange juice
3/4 cup granulated sugar
2 teaspoons corn starch
1/2 cup (1 stick) unsalted butter, melted
1/2 cup granulated sugar
1/4 cup brown sugar
1 teaspoon vanilla extract
1 cup all-purpose flour
3/4 cup old-fashioned oats
pinch salt *
Cranberry Filling – To a medium Pot, add the cranberries, orange zest, orange juice, white sugar and bring to a boil over high heat, stirring often to incorporate the sugar.
Once mixture has come to a boil, reduce the heat to medium low, add the corn starch, stir to combine, and allow mixture to simmer for about 15 minutes. While it simmers, make the bars.
Bars – Preheat oven to 350F. Line an 8-inch square pan with aluminum foil or parchment.
Melt the butter and add the sugars, vanilla, and whisk to combine. Add the flour, oats,salt and stir to combine. Set 1 heaping cup mixture aside to be sprinkled on later as crumble topping.
Transfer remaining mixture to prepared pan, and using a spatula or your fingers, pack the mixture to create a flat crust.
Add the cranberry filling over the crust making sure there’s complete coverage but leave a 1/4-inch bare margin around the edges. Evenly sprinkle with the reserved heaping 1 cup crumble topping mixture.
Bake for about 30 to 35 minutes, or until edges are set and center has just set and is lightly golden browned.
한 6개월은 홈베이킹에 손을 떼고 지냈다. 힘들고 생각이 많을 때 마다 이것저것 구우면 마음이 편해지곤 했는데 한 번 놓고 나니 다시 손대기가 너무 어려웠다. 손이 굳은 것 같고, 능숙하지 못할 것 같아 사실 무서워서 선뜻 다시 시작하지 못했다.
용기를 내고, 시간을 내서 새롭게 시작한 베이킹은 나에게 선물 같은 하루 하루를 선물해줬다. 내가 힘들 때 위로가 되는 건 바쁘게 무언가를 구워내는 것, 그 구워진 결과물을 맛보고, 내가 좋아하는 사람들에게 나누고 또 그걸 먹은 사람들이 즐거워 하는 것. 이런 소소하면서 소소하지 않은 취미가 나에게 너무 소중하다.
어제는 게시물을 올렸던 쿠키 외에도 당근 케이크랑 또 다른 쿠키 이렇게 세 가지를 구웠다. 새벽까지 계속된 작업에 피곤했지만 나는 너무너무 행복했다.
이게 나를 행복하게 해주는 것 중 1짱이다☝🏻 나를 행복하게 해주는 것이 뭔지 잊지 말고 살아야겠다. 그 동안 너무 잊고 지냈다.
다시 시작한 베이킹의 첫빠따 당근케이크는 딱 구상했던 디자인대로 완성되었다. 뿌듯했다. 아직 아쉬운 맛이라 조금만 더 레시피를 손 보면 원하는 맛이 나올 것 같다.
아까 친구를 한조각 선물했는데 친구가 로또 당첨되면 내 가게부터 차려준다해서 너무 기분이 좋다. 얼토당토한 말이지만 덕분에 더 즐거운 밤이 되었다. (@cae.yeon96 💓🙏) /

Resepnya buanyak banget. Bikin gatel pengen eksekusi. Jam 9 malem, liat bahan2 yg ada di dapur, akhirnya bikin cupcake ini aja deh. Selain cheese yg disukai seisi rumah, bikinnya juga gampang dan ga membutuhkan wkt lama. Kuenya lembut dan ringan. Ga seperti cupcake kebanyakan yg padat. Sukaaaaa... .

Today I would have been at work if I wasn't part time. People often say 'enjoy your extra day off' today I've sorted packed lunches, breakfasts, school run, taken littlest to play group, went to Sainsbury's, made lunch, emptied all the bins, did 3 loads of washing and hung them up, hovered downstairs, made two different batches of cupcakes, tidied up the million piece wooden train track 76 times, unloaded and reloaded the dishwasher, prepped and cooked a chicken casserole and another school run. Then brownies this evening. Extra day off? Happy starter, happy bread 🍞 Mostly King Arthur bread flour, with a little spelt and buckwheat flours mixed in. Everything bagel seasoning folded in during shaping and sprinkled on top for a hint of sesame and onion flavor.
This one developed quite the ear! Super happy with the amount of oven spring. I think I’d like to try something more decorative with the scoring next time though.
I had a gross over-ripe banana languishing in the fruit bowl so... Mary Berry’s banana and chocolate chip loaf 🎉
My favourite recipes are ones that are uncomplicated, quick, and most importantly they don’t involve a pinch of something I’ll have to buy especially for the recipe and then never use again. This ticks all the boxes. It’s probably supposed to have risen a little higher than that but it’s not like I’m Meghan Markle 🤷♀️ .

SPONGE CAKE CAPPUCCINO

SPONGE CAKE CAPPUCCINO
- 8 telur ayam
- 180 gr gula pasir
- 200 gr tepung terigu
- 1/2 sdm meizena
- 1/2 sdt BP
- 25 gr bubuk cappuccino
- 2 tetes pasta chocolate
- 1/2 sdt ovalet
- 120 ml minyak goreng
- loyang 24 cm
- loyang olesi margarin & tabur terigu
1. Panaskan oven 175*
2. Kocok telur, gula & ovalet sampai mengembang & pucat.
3. Masukkan terigu, meizena, BP, aduk perlahan, aduk putar balik (fold).
4. Masukkan minyak & aduk rata, bagi adonan menjadi 2 bagian, satu normal & satu lagi dengan cappuccino pasta choco.
5. Tuang adonan satu titik, lalukan sampai habis.
6. Siap di Oven/panggang, temperatur oven 150*-175*, kira 30-45 menit sampai matang & mengeluarkan wangi yang harum, angkat & siap di sajijkan.

Baked Glazed Pumpkin Spice Donuts with Vanilla Cream 🍊. Yay or nay?
This was my first attempt at baked donuts, that's a yay from me! Yup, there's real pumpkin in the dough. But I don't dare share the recipe yet, gonna have to make them again and make sure it wasn't a fluke, boo!
