Pounding boiled potatoes for making Rildok
Sherpa didi at Himalayan Sherpa Food House, Boudha has a new set of large wooden mortar and pestle. Potatoes, sourced from the high altitude, are boiled and then pounded in this mortar with a large wooden pestle to make dumplings for Rildok. It requires lots of effort and should be pounded for a while until it becomes a gooey sticky paste. No wonder why potato dumplings are so soft, silky, light and creamy. It literally melts in your mouth. With some fermented 'somar' with a funky smell, it makes a bowl of heavenly soup.
