Champagne or Ataulfo mangoes are in season right now so I puréed some up to flavor my kombucha. The mangoes are so naturally creamy and sweet that it needed a kick of tartness, so I added some passionfruit. (I haven’t yet encountered a fruit that couldn’t be enhanced with a little passionfruit!) The result was a lovely sweet brew with a kick of acidity and smooth, thick mouthfeel. It’s like the smoothie of your dreams. 😍
I’m sitting out here reflecting on this warm breezy Easter, surrounded by freshly planted herbs and a yummy cold brewed green tea. Friday I spent my birthday getting my entire intestinal track biopsied. This morning I made my breakfast, lunch and sides for the week and prepped my dinners.
I’ve had to eat gluten for the last 6-8 weeks for testing purposes. And Friday, 6 months of testing and doctors has come to a conclusion. I hurt from the gluten. I have systemic reactions to gluten; from my head to my toes. But I can officially stop eating it - forever.
I couldn’t be more excited. It is the beginning of a new year for me. 2019 has been a year of choices based on the question...is it healthy for me. It led me down the testing route. It led me to eat gluten again so I could get answers. It led me to say no to potential commitments. It has led me to new friendships. It led me to start yoga. It is leading me back to full blown elimination AIP. The fact that today is also Easter makes me think that all these months have been leading me to this day. A day of rebirth. The first day of embracing health even more completely. I feel so positive today. I feel alive in a way I couldn’t have anticipated after these 6 months of questions. I hope everyone finds a path of rebirth today and enjoys this time with their friends and family and self. Embrace today and more importantly, a healthy tomorrow.

Spending the day doing work for grad school and I am SO thankful my family is bringing Easter dinner to me so I can focus on my work! 💖💖💖 Thank you to everyone for the sweet encouraging messages for my last 3 weeks of grad school. This has been one of the biggest challenges of my life working full time and grad school full time. I am at my end and mentally exhausted. Crossed one more paper off my list this morning! 4 T olive oil
4 T @seedsofcollaboration tahini
4 garlic cloves
1/2 t @frontiercoop smoked paprika

Salt & pepper to taste

CUCUMBER, TOMATO, AND ONION SALAD
1 red onion
½ cup feta cheese
2 tablespoons olive oil
2 tablespoons red wine vinegar
Salt, to taste
Black pepper, to taste
1 tablespoon lemon juice
1 cup kalamata olives
1. Cut cucumbers into discs, and then quarter the discs. Place into the bottom of the salad bowl.
2. Cut tomatoes into quarters, lengthwise, and then rotate and cut into large chunks. Place in the salad bowl.
3. Cut the red onion in half, removing the skin, stem, and bottom. Slice into thin strips (julienne), and place in the bowl.
4. Add feta cheese, olive oil, red wine vinegar, salt, pepper, lemon juice, and olives to the salad bowl and toss gently.

Don’t just take my word for it though
1. feb 2019 Randomised control trial, ultra-processed diets caused excess calorie intake which in turn led to weight gain unlike the unprocessed food diet
2. feb 2019 study published in the journal of the American medical association linked an increase in consumption of ultraprocessed foods with a higher risk of all-cause mortality. (About a 14% high risk of all-cause mortality for every 10% increase in processed foods)
