So very proud of myself! In just one month I’ve seen such a change in my body!! Everyday like literally everyday I hit the gym - from an hour plus cardio, weights and whatever else I know. I’m still not comfortable using everything but in time the comfort will come! I’ve lost 50lbs before the gym and now 6 after joining. I don’t feel right if I don’t squeeze in a work out. Best part is - the gym I go too has amazing people!! Just as friendly as me and always whiling to help when you ask. Whether it’s for advise or spotting you!! It’s been a few weeks since I’ve made a meal prep post — looking forward to getting back into routine. Back on my bullish*t 🍽 This week’s meal prep is trying to maximize veggie and whole grain intake and keep my cutting macros in mind. Carbs and fats were cut a few weeks ago (not drastically, but it makes a difference) for awhile as I focus on body recomposition for performance. Here’s what I’m eating this week:
Breakfast: maple cinnamon quinoa oatmeal (mix of steel cut oats and quinoa) topped with Granny Smith apples and sliced almonds. This will be paired with a protein shake or a cup of egg whites in the morning (obv with a generous amount of hot sauce)
Lunch: a spin on Thug Kitchen’s 5-spice fried rice (I added more sweet potatoes, edamame, and mushrooms) with baked ginger-sesame marinated tofu
Dinner: Instant Pot broccoli & beef with roasted sweet potatoes, green beans, and Brussels sprouts. Hella nom. •
Bonus goodie: Thug Kitchen’s whole wheat carrot & apple muffins (with pineapple added to the batter to sweeten them up 😋😋😋)

Sundays are for grocery shopping and food prep! And juicing 🍏🍐Years ago I never used to wash my produce 😳 not that I really purchased much produce to begin with... that's all changed now and I love the @eatcleaner I heard so many good things about. •
Look how dirty the water is after soaking celery and asparagus for 30 seconds! Gross. This stuff is my new favorite. I prefer to use the wash powder in a gallon of cold water in the sink, I can get everything in clean in 30 seconds, with a quick rinse after. The spray is handy if I only have a few things to clean. How do you wash your produce?

Im not gonna lie I have been eating pretty badly over the past couple months due to being holidays and all and I can’t seem to snap out of it. (Anyone else with me?!?) This has left me with regular breakouts, feeling fluffy and bloated along with low energy levels. Don’t get me wrong I love treating myself to chocolate, pizza and chips but that’s all it should be, a treat. •
Time to snap out of holiday mode and eat less processed treats 😅 not to physically look better but to FEEL better 💚
What is Ketosis?

All forms of carbohydrate – fruits, vegetables, grains + starches, are broken down into glucose by your body, increasing your blood sugar. Your body considers raised blood sugar as being toxic, so it releases insulin (a storage hormone) to push the glucose into our cells. When this occurs, your blood sugar decreases, making you hungry again.
This crazy cycle of blood sugar highs and lows is why you feel ongoing hunger and cravings.

Beet Fettuccine Alfredo by @3.bunnies ❤️ Recipe:⠀
1 3/4 cup of almond milk⠀
3/4 cup of soaked cashews⠀
1/4 cup of nutritional yeast⠀
1 clove of garlic ⠀
1 thumb size piece of yellow onion⠀
1 thumb size piece of beet root⠀
2 tsp of lemon juice⠀
1 tsp of pink salt⠀
A few dashes of black pepper ⠀
3/4 cup of vegan parmesan⠀
16oz of fettuccine pasta⠀
How To Make:⠀
1. Combine all ingredients excluding parmesan and pasta into a blender. Blend until smooth.⠀
2. In a small pot on medium heat pour in sauce and add parmesan. Lower heat and stir until cheese has melted.⠀
3. Bring a large pot of water to a boil and add pasta. Cook until fork tender. Drain and pour in sauce. Garnish with chopped mint. Serve and Enjoy! #veganfoodspace#vegandinner#dinnerideas

A couple weekends ago @the_nourishedwoman and I roadtripped to Tahoe. These days finding a gluten free bun ain’t no thang. But finding a burger joint where I can ALSO eat the French fries? RARE! Normally, there isn’t a designated gluten free fryer, but we found a GEM in the mountains that had both!! I let out a literal SCREAM when we found out. Haha!
The trials & tribulations of traveling with Celiacs Disease is...tiresome.😑 It used to be much worse with the lack of knowledge in the general public, my own insecurities around it, and simply a lack of options. Traveling now still has its many annoyances, but with every trip, it seems to improve. It’s a normal I’m used to now and can easily live with.
Anyway, this photo perfectly captures my literal JOY as I’m chowing down on a burger and fries for the first time in years.♥️
PS. Soon, I am traveling to Vietnam. In my head, I always pushed aside the option of traveling to an Asian country with my allergies...but here we go!
