A slice of Blueberry Cake!

Cinnamon waffles with vanilla cinnamon glaze 🌸✨bananas 🍌 and hazelnuts 🌰 Light, fluffy, crispy on the outside - these waffles are my new favourite! 🤩 You know I love aquafaba in recipes by now, well these combine whipped aquafaba with an overnight yeasted batter, the result is a super featherlight waffle that is simply irresistible! 🌸
Overnight cinnamon waffles (makes 6)
1 cup plain flour
1/2 tsp baking powder
1 tsp cinnamon
1 cup dairy free milk, warm
1 tsp instant yeast
1 tsp agave/maple syrup
2 tbsp oil
1 tsp vanilla
3 tbsp aquafaba
Vanilla cinnamon glaze
1/2 cup coconut milk
1 tsp vanilla
1 tsp cinnamon
2 heaped tsp cornflour
3 tsp water
The night before, mix flour, baking powder, salt and cinnamon in a medium bowl. Make a well in the middle and add warm milk, yeast, agave, oil and vanilla, stir well with a fork then gradually bring in the flour to combine. Cover with a tea towel and allow to sit overnight. In the morning, whip up aquafaba using an electric whisk in a mixing bowl until peaks form (around 5 minutes). Heat up waffle iron. Stir whipped aquafaba through batter. Add 1/4 cup batter per waffle and cook until golden and crispy.
To prepare the glaze, add coconut milk, vanilla and cinnamon to a small pan. In a small cup, mix cornflour and water together to form a paste. Bring glaze to a gentle simmer, then stir through cornflour mix and stir until thick. Pour over warm waffles and top with bananas, nuts and cinnamon.
