Hi everyone🌱. I don’t know why but for some odd reason I can’t use 5 or less ingredients to make a buddha bowl😅, I guess I’ll have to try harder next time!, but here it is my rustic mixed buddha bowl!☀️with Aubergine, asparagus, yellow pepper, chestnut mushrooms, blueberries, spinach, birds eye chili, radishes & pumpkin seeds🤗 mixed with some rosemary pearl barley!✨ —————————
So what I did was, Slice the aubergine into quarters and fried in a pan with a tablespoon of extra virgin olive oil until golden brown, to that I added the yellow peppers (I sliced into cubes), chestnut mushrooms ( sliced in half) & asparagus (I sliced into quarters). When everything is nice and golden you can add the rosemary pearl barley, then add salt & pepper to taste!.😁 How I made the tasty rosemary pearl barley is, I used a half a cup pearl barley to one full cup of water, and let that boil until all the water is gone, to that I add a teaspoon of extra virgin olive oil and a half a tablespoon of chopped fresh rosemary.
Just mix everything together and top with a hand full of blueberries, sliced chili and radishes!🙌🏻 Serves: 1-2

PALEO BANANA OAT WAFFLES
1/4 cup oats
1/2 mashed banana
1/4 cup @birchbenders banana paleo mix
Pour in waffle maker and when finished top the waffle with banana slices, peanut butter, and maybe granola for some added crunch! 🙉
