📌But, you can still enjoy many good local foods, homemade freshly-baked sweets from the freshest ingredients, have a cup of quality coffee here tho!😋☕️🍪 while walking in this small but cozy town, enjoying and learning their living and different cultures which I think they're the one of best parts to learn from traveling😊🌎Both Trondheim and Alesund are so charming and pretty! and Norwegians are always nice, i mean everywhere😊❤️

I've made these cauliflower bites to replace chicken in various plates like chicken tenders and like what you see in the pic. It's some stir fry veggies + coconut aminos.
Cauliflower holds the best texture and these aren't fried either 😉
-All you need is 1 1/4 cup of your flour of choice. (I use spelt)
-Then add seasonings of choice. (I used onion powder, cayenne, s&p)
-Add enough water to make the consistency like a waffle batter. Not too much water though. -Cut the cauliflower to the size you prefer then dip in batter and place on a lined baking sheet to bake at 425 for 35min. 🍚

You know that scene in Despicable Me when Agnes is like “IT’S SO FLUFFY I’M GONNA DIE” in regards to the stuffed unicorn? 🦄 Well that’s pretty much how I feel about these fluffy peanut butter cookies 🍪. And unicorns. Both really. Just saying. 😜
Peanut Butter Cookie Details:👇
Based this recipe off of my friend @wellnesswithcourtnie pb cookies and man are they a home run 🙌🏻🤤
1/2 cup peanut butter
1/3 cup regular flour (other flours should work. Except coconut four)
1/4 cup maple syrup
1/2 tsp vanilla extract
1/4 tsp baking soda
1 bar of dark chocolate melted with 1/2 tsp coconut oil
Pre heat oven to 350 degrees. Combine all ingredients into a large mixing bowl. Mix well. Place large spoonfuls of batter onto a cookie sheet lined with parchment paper. Using the back of a greased fork, press down to gently flatten the cookie slightly, leaving imprints from the prongs going down the middle. Repeat, this time at a perpendicular angle to the last imprint. Sprinkle a pinch of sea salt on top and bake for 10 minuets. Remove from oven a place on a cooling rack for a few minutes. Once completely cooled, dip in your melted chocolate. (I found it was more successful if I stuck the cookies in the freezer for about 10 minutes before I dipped them in chocolate. It made them more sturdy). Let chocolate harden (or not) and enjoy!
(Note: These cookies are not overly sweet especially if you use super dark chocolate. If you like things sweeter, I would recommend adding in 1/4 cup of some sort of granulated (Not More Liquid!) sugar: coconut sugar, brown sugar, cane sugar, etc)
We’re back to regular scheduled programming over here. I woke up this morning feeling pumped to get my life organized, clean my room, water the plants, respond to a mountain of emails and all kinds of other fun stuff like that. But first, I’m heading to my favorite yoga class to get my mind right🧘♀️. I made a new goal to set aside one hour each day for uninterrupted time for myself. Whenever I do that I’m able to focus a lot better and get more work done👌🏼. In today’s bowl we have @hilaryseatwell veggie bites, onion, tomato, roasted crinkle cut sweet potatoes, cucumber, dill and romaine lettuce seasoned with olive oil and Trader Joe’s everything but the bagel seasoning. Happy Monday my friends!
