Who loves Lemon Hummus 🤤😍?! I know I always tell you guys that my food is creamy (and it really is 🤣) and most certainly half of you stopped believing me some posts ago BUUUUT this Hummus was just the definition of creaminess! And the lemon zest makes the flavour simply unforgettable🍋❤️
•1 1/3 cup dry chickpeas
•2 tsp baking soda
•1 1/2 tbsp tahini
•1/2 cup cold water
•1 garlic clove
•juice of 1 lemon
•lemon zest of 2 lemons
•salt & pepper
1. Put the chickpeas in a bowl, cover with water, add 1 tb of baking soda, whisk.
2. Let it soak overnight (12 hours).
3. Rinse the chickpeas, put them in a saucepan, add 1 tsp baking soda bring to a boil, and then cook at a low temperature for 45-60 minutes (the water should NOT be boiling or you‘ll have a chickpeas puree instaed of cooked chickpeas!).
4. Once cooked, rinse the chickpeas and let them cool down completely.
5. In a food processor add the tahini, and process it for 1 minute.
6. Add the COLD water and process for another minute. Then add the lemon juice, salt, garlic clove and lemon zest and process for another minute.
7. Add little by little the chickpeas and process until it reaches the perfect consistency
8. The hummus you‘ll get should be quite thick (that‘s how I like it) if it‘s too thick just add a little bit of water ;)
9. Serve with a drizzle of olive oil, some thyme & pepper!
10. Enjoy! ❤️😘 .

i’ve talked with lots of people lately and everyone sounds so busy! and as much as i love healthy, made-from-scratch meals, even i’m looking for quick fix dinners. also, i love asian and japanese food 🙌🏻 there’s no doubt about it. but i’m not a fan of ordering take-out from the local restaurant anymore. i guess i’m just to the point where i want to know exactly what’s in the food i’m eating. for example, i’m not entirely comfortable that their brown sauce doesn’t include fish sauce in the list of ingredients 😰 i’m sure you’ve experienced this a time or two yourself — when people offer a “vegetarian” soup or sauce that includes meat-based broth in it.// i never buy “fake meat”, i consider it heavily processed and not what you could categorise as healthy, plus i’m usually satisfied with veggies, whole grains, and tofu anyway. but if you are like me, sometimes you are craving something with a more “meaty” texture. then this 🍛 VEGAN TERIYAKI CHICKEN RICE 🍛 certainly won’t disappoint! growing up, chicken was one of my favourite food and i used to always order some sort of chicken chop or burger when i dined out at restaurants eeks 🤢// teriyaki chicken stir-fry is to easy dinners what the beatles are to music. classic through and through. something everyone knows about…. and either loves or hates. personally, i’m on the love end of it all… for the stir-fry and the beatles. but here is the thing about classic vegan teriyaki stir-fry…. its not all that healthy 🙅🏼♀️ i know, i know. that “chicken” and lovely sweet and sticky sauce are almost always accompanied by veggies (yay!), but that amazing sauce that kind of pulls the whole dish together is…well, not that great for you. lots of soy. lots of sugar. lots of boooooooooooo 👎🏻 (recipe in comments)

If you're not excited about eating vegetables, you're probably not eating the right sauce. Sauces are the key to making everything taste AMAZING. I like to make one or two at the beginning of the week and use 'em to toss together dinner or lunch in a pinch all week long. This is just some easy veggies roasted in olive oil and sea salt, topped with a Turmeric Tahini sauce I've been playing around with 💃 (about 1/4 cup of tahini whisked with 1/2 tsp or so of powdered ginger, 1/2 tsp powdered turmeric, 1/8 teaspoon salt + more to taste, juice of 1 lemon, a pinch of cayenne, a quick drizzle of honey and a glug of olive oil, all whisked together and then thinned out with water until its a good texture for drizzling). I also have a bright green avocado and herb sauce I ADORE. Do you want the recipe for it? 🙋🏻♀️🙋🏻♀️🙋🏻♀️Also, what are your favorite sauces, tell me in the comments!!👇👇
Tibetan Pray Bells - "Tingsha"
When you knock together the two bells of a Tingsha, you get a wonderful, bright bell sound.
Because the two bells of a Tingsha are usually slightly out of tune with each other, the frequencies they emit interact in interesting ways to create sounds that are quite hypnotic. No two tingshas are ever the same.
Tingsha are great for space clearing and for the start/finish of a meditation session.
Here's another great recipe I've been making these last two weeks. We had these on our girls weekend and they're quick and delicious! You could even do them on the grill if you wanted.
SPINACH & FETA TURKEY BURGERS
16oz ground turkey
1/3 c crumbled feta
2 c baby spinach, then finely chop
Sprinkle of onion powder (optional)
Salt & Pepper to taste
Preheat skillet over medium heat.
Combine all ingredients in a bowl and divide evenly into 4 patties. Spray skillet with non-stick cooking spray. Cook for patties 4-6 minutes on each side until cooked through. Done! Super simple! Enjoy!
See that girl on the left? That was me this Christmas trying to hide how I looked. I wasn’t doing too good of a job at that. The worst part? I felt worse about myself than I ever had. Some people say I put too much pressure on myself to succeed. Some say that I reach for the impossible while others say that I simply can’t do it.
See that girl on the right? That’s me this week. Not only has my body started to finally reflex how I feel on the inside, but I’m glowing. Never again do I want to go back to how I looked and felt that Christmas.
But how did I do it? I hustled. I worked hard. And I followed a schedule that was foul proof to achieve these results. Because of my own transformation, I’m opening up my group this month to ten new challengers instead of five. I want to see you reach your goals. I want to see you be happy and healthy. It starts on Monday, so what’s holding you back? Message me and I’ll give you all the details about it.
SEMANA 3! 👇
