Yesterday I baked these Oatmeal Stuffed Apples with Pine Needle Syrup and Rosted Almonds (or should I say burned almonds? 😂). They were really tasty and they made my tummy happy. ☺ The only thing that made me unhappy was this photo. I was in such a hurry (almost late for work) that I didn't had time to take a proper photo. So I ended up with this. Instagram allows bad photos too, right? 😱

If you've been following the daily oracle readings you might recall that a few days ago this card presented with a message about nourishing your soul and feeding ALL of you. 🦉
A card presenting itself again in a reading can mean a great number of things. It may return because the message was unclear; has been forgotten; was not listened to or has just been plain ignored. Cards can also come back in a reading to gently remind us of their initial message. Or to encourage us to act - maybe we listened and acted the first time, but was it enough? Did we do enough? I'd say not.
Whatever you have done this week to feed your soul, keep doing it. Your soul is tired and needs replenishment, so let yourself have at it. Feeding your soul could mean planning for the week ahead so you're organised. Or enjoying the sunshine from under the tree. Soulfood is different from person to person. What is yours? Make time for it. Nourish yourself. Recharge your energy. We are all tired - it's just whether or not we choose to succumb. 🐻

can’t get enough of these oatmeal chocolate chip cookies 😋 made with real, whole food ingredients, just how I like my treats! they’re my fave straight out of the oven with a glass of almond milk 🙏🏼recipe below!
1 cup oat flour (blend up old fashioned oats to make your own if you don’t have oat flour!)
1 cup almond flour
1/2 cup coconut sugar
1/3 cup Greek yogurt (I used 4% fat, not fat free!)
2 tbsp almond milk
2 tsp vanilla
1/2 tsp baking soda
1/2 tsp baking powder
1/4 tsp cinnamon
Pinch of sea salt
1/2 cup dark chocolate chips
Optional: sea salt for topping
1. Preheat oven to 350 and line a baking sheet with parchment paper.
2. Combine yogurt, coconut sugar, and almond milk.
3. Mix in all dry ingredients until well combined, then fold in chocolate chips.
4. Scoop out dough onto parchment paper into about 12 cookies. Slightly flatten cookies and sprinkle with sea salt (optional). Bake 11-12 minutes.

1/2 cup cashews
1/2 cup water
Juice of 1 large lemon
2 tbsp olive oil
Handful fresh basil
1 garlic clove
1/2 tsp sea salt
Few cracks black pepper
1. Blend all ingredients on high in a powerful blender until smooth. Optional: add more water for a thinner sauce if desired.
2. Taste, adjust seasonings, serve or store in an airtight container in the refrigerator.
