Cornmeal Crusted Baked Potatoes + Picked Jalapeño Cilantro Sauce Recipe🥔✨ .
4 large baking potatoes, cut into wedges
2 Tablespoons tahini (possibly a little more)
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon sweet paprika (+ more used later)
1 Tablespoon medium grind cornmeal (+ more used later)
1 teaspoon sea salt (+/- to taste) *
Sprinkle black pepper
Preheat the oven to 400 F. Place the oven rack towards the middle, avoiding the lower oven rack placement.
Line a 14 x 20 baking sheet with parchment paper, set aside.
Mix the seasonings listed above, garlic powder, onion powder, sweet paprika, sea salt, black pepper and cornmeal in a small bowl and mix well. Set aside.
Cut the potatoes into wedges, and place in a large mixing bowl. Note: You should be able to get between 6-8 wedges per potato.
Coat the potato wedges with the tahini, using your hands to get some tahini on all sides of the potato wedges, then once thoroughly coated with a thin coating of tahini, dump the potato wedges onto the parchment covered baking sheet.
Picked Jalapeño Cilantro Sauce
1/3 cup raw cashews
¼ cup + 1/8 cup pickled jalapenos (we used Mezzetta Deli-Sliced Tamed Jalapeno Peppers)
½ cup cilantro (lightly packed)
1 Tablespoon lime juice
3 Tablespoons unsweetened plain plant yogurt
¼ teaspoon onion powder
¼ teaspoon garlic powder
½ teaspoon sea salt (+/- to taste) *
1/3 cup water
In a small bowl, cover the raw cashews in boiling water, set aside to soak for 20 minutes.
In the meantime, measure out all your remaining ingredients and set aside.
After 20 minutes, drain the cashews and discard the water, then add the cashews and all the remaining dressing ingredients into a high-speed blender and emulsify until smooth. Taste test the dressing and add more seasoning, if needed.

Tonight we have a special treat!! Dinner is being served by my babe, Chef João. He sent me pictures of this AMAZING dish that he cooked and I couldn’t wait to share it with you all. It is, pan seared salmon with Cubbanelle peppers, Mexican Jalapenos, capers, kalamata olives, Moscato wine sauce, red and white pearl onions and chili peppers. Served on a bed of all fresh roasted fingerling potatoes. I’m a little devastated that I wasn’t there to eat this 😆. How about you? 😋❤️💛💚

Today in my kitchen we have SENEGALESE food! This dish is called “Poisson Yassa” or fish Yassa, and I used salmon in my version, with baked potatoes. See recipe link below 👇🏾. I did not use Maggi powder in mine, the recipe said it was optional. I’ve made this dish a few times before with chicken, fish and even a vegan version with BREADFRUIT [SWIPE to see], but I think this is my best attempt so far. 😋

Today the spotlight is on my love and biggest culinary inspiration by far, Chef Joao. This dish was cooked 6 years ago in September 2012. It is an original dish of his own creation that he called “Ras Salmon Papaya.” The first picture is the finished product and the second picture is a process shot. As you see in the second picture, he baked the salmon INSIDE the papaya on low heat for a few hours, then he used the papaya as a serving dish adding rice and fries for the final presentation. How is that for creative plating guys? Even though all these years have passed I still remember this dish clearly and can you tell that it is the most delicious salmon dish I have had in my life. You can feel the passion that he has for cooking in every dish that he makes. Love goes out to you babe, you never cease to amaze me. ❤️💛💚🌊🌊🌴🌴🌍☀️✨

And dinner by the wonderful chef Joao, also my husband, pan seared salmon with roast fingerling potatoes, assorted sweet and chilli peppers in a moscato sweet chilli sauce. Amazing!
Finally got a chance to visit the new branch of @casatuagastro in King's cross and owner Giuseppe has down a fantastic job translating the homely charms of the original onto a bigger canvas.
The menu seems to be larger as well as the venue but it was equally popular with the locals with not an empty table in sight.
The plating is even more gorgeous than the original branch such as the burrata with anchovies pictured and you cannot miss their homemade pasta, which is as good as ever!

Found this super realistic looking recipe from @elsas_wholesomelife a while ago and had to recreate...I wouldn’t say it’s the most realistic tasting ‘egg’ replacement (I’m a big fan of scrambled tofu) but it certainly looks impressive 🍳
170g pumpkin, de-skinned (I used carrot instead)
1 tbsp nutritional yeast
2 tbsp corn flour
2 tbsp water
2 tbsp olive oil
1/4 tsp black salt
1/4 tsp black pepper
Pinch of salt
1/4 cup rice flour
1/4 cup non dairy milk
1 tbsp water
Large pinch salt
1. Place a pot of water over high heat. Bring to the boil, add the pumpkin pieces and boil until soft (fork glides through it).
2. Meanwhile make the ‘egg white’ by whisking together the ingredients in a bowl. Set aside.
3. Once the pumpkin in cooked, add to a food processor or blender with the rest of the ‘egg yolk’ ingredients. Blend until smooth. Mix should be thick but still able to run off a spoon.
4. Heat a large fry pan over medium-high heat. Once hot, add a drizzle of olive oil (1 tsp) to the pan, let oil get hot before adding 2 tbsp of the ‘egg white’ mix to the centre of the pan.
5. Place the lid on for 10 seconds. Remove lid and add 1 tbsp of yolk mix, poured into centre of the white. Return lid for another 30 seconds or until the ‘egg white’ starts to get a bit crispy on the edges.
6. Scoop egg onto serving dish. Continue steps 4 & 5 until all egg white is used up/you’ve cooked the desired amount.
