If you’ve been following me for the last 6 months, then you’ve probably seen the 12x12 squares of black card stock hanging in our hall at some point! 🙈 Well, I am happy to say, we FINALLY hung our pictures in their place and I could not be happier with how it looks! One thing I want to do in 2019 is get more pictures printed to display and place in albums so that we can continuously look back on special memories we’ve shared over the years ❤️
In this week’s episode of cooking we have #MexicanFrenchToast. Now before you get all judging and saying this is weird, you haven’t even tried it yet. I’m not sure where this came from but supposedly from some family we knew when we lived in Germany. I was somewhere around 3 years old... I don’t remember much of that era. Wherever it came from, what I do know is that this is a family favorite. I mean who doesn’t love a little cheese, some bacon, and tortilla pan fried in an egg-milk mixture. It’s pretty amazing. Growing up when it was my birthday my grandma would always prepare my favorite meal, Viva la Chicken. It’s nothing fancy but a classic chicken casserole of the 70s. I wanted to share the person that inspired me with her cooking, my mom! Her physical presence is no longer here with us, but her food that she taught me is still celebrated! I’ve decided to make a few changes in my life, since my mom passed, I’m hanging up my apron strings. I’ve been cooking as a living for 10+ years, it’s time to move in a different direction with food. I want to write a cook book, to leave to my children, keeping my mother’s recipes as well as my grandparents and other family passionate recipes to delight and bring fond memories to our hearts. Quinoa, veggies and roasted almonds!
I was making quinoa so I could make yummy quinoa bowls for lunches for tomorrow. But once it was cooked an hot I needed to eat some right away! It smells fantastic! And when you roast the almonds it really releases some amazing flavour too! This was super fast and easy to make!! I made lots of quinoa so I can put it in the fridge and eat it all week long! Quinoa is the only grain that is a complete protein and it really fills you up and keeps you satisfied! Give it a try! .

52 Keto Friendly Friday Night Dinners in 2019, Week 1: Hamburger Stroganoff! This was a favorite of mine growing up, and it was one of my family’s go-to meals. I omitted the ketchup and cream of mushroom soup, and added a few things, recipe below (swipe to see the original recipe). And instead of egg noodles, I used the mandolin side of my dad’s old cheese grater to slice some zucchini (heat them in the microwave for 30 seconds...that’s all it takes to cook them).
1 lb ground beef (I used 80/20)
2 cups sliced mushrooms
3 medium zucchini
1 onion, diced
2 cloves garlic, minced
1/2 cup dry red wine
2 tbsp Worcestershire sauce
1 cup sour cream
1/2 cup heavy cream
2 tbsp butter
1 tbsp xanthum gum
Salt, pepper, garlic powder, and ground thyme to taste
Dried cilantro for garnish
Sauté onions and garlic in 1 tbsp of butter until translucent.
Add the ground beef and brown, breaking it up as you go.
Once the beef mixture is cooked through, carefully drain off excess liquid.
Add in the mushrooms and wine, cover, and let simmer for a few minutes.
Add in the seasonings, Worcestershire, xanthum gum, and the other tbsp of butter and stir until absorbed.
Add in the sour cream and heavy cream, reduce heat, cover and simmer until the sauce thickens, stirring occasionally.
Slice and heat your zucchini noodles. 1/2 zucchini per plate. Spoon sauce over top, and garnish with dried cilantro.
Makes 6 servings: 383kcal; 28.17g fat; 16.89g protein; 8.85g net carbs

Not even going to lie! The holidays are full of laughter, love and traditions
And plenty of indulgences!
So today was the day to get back to basics! Back to my #veggiesmost 🥦🥕🥒🥬and simple basics I’ve lacked having in the fridge this last week! These simple additions are a necessity for my diabetes, my energy levels and my daily nutrition!❤️
And can I say, these are for the lil’s to grab and go too! I know when prepped, the “I’m hungry’s” and the “what can we eat’s” are easier!🙌🏻😉🙌🏻

Hi Chef I can’t come in my moms cat is stuck in tree and I’m very sick 🤣🤣🤣🤣
2 ½ cups dates, pitted and chopped
1 cup of water
2 tablespoons lemon juice
2 tablespoons brown sugar
½ teaspoon of baking soda
1 cup quick cooking oats
1 cup flour
¾ cup brown sugar
¼ teaspoon baking powder
¾ cup butter, softened
Preheat the oven to 350 deg F. Line an 8" square baking dish with parchment paper, leaving it longer on two sides. Butter the other two sides.
In a saucepan, bring to a boil dates, water, lemon juice and brown sugar. Add the baking soda and simmer for about 5 minutes, stirring constantly with a wooden spoon until the dates are pureed. Let cool.
In a bowl, combine oatmeal, flour, brown sugar and baking powder. Add the butter and mix well.
Spread half of the crisp in the baking dish and press firmly. Spread the date mixture evenly over the layer of crisp. Cover with the rest of the crisp pressing lightly.
Bake for about 55 minutes or until the crisp is golden brown. Cool on a rack about 4 hours or overnight. Unmold and cut into 9 to 16 squares.

Take some time before jumping into a diet learn serving sizes don’t stress macros just know avg serving cups some qualified people such as our chef used a hand rule to measure her own meal prep meals unfortunately we have to scale every thing so we know how annoying that can be to stress about calorie counts we hate it after an hours 🤣 #mealprepnorthshore
Anyone else remember eating Nutter Butters as a kid? I was obsessed. Well I turned them into a healthy bite! My entire family went crazy over these. 😋
NUTTA BUTTA BITES 🥜
2 c quinoa flakes (can sub oats)
1 T coconut oil
1 T @nikkiscoconutbutter dark chocolate coconut butter
3 T honey
1/2 c smooth peanut butter
1/2 t cinnamon
Pinch of salt
1/4 c chocolate chips
1/4 c pumpkin seeds
1 T chia seeds
1 scoop chocolate protein powder (I used @welleco)
Combine all ingredients in a mixing bowl and stir it up! (If you’ve got picky kids, use a food processor/blender to grind up the pumpkin seeds & quinoa flakes). Roll into 1.5 inch balls. I store these in a glass container in the fridge and they make the perfect snack for a kids lunch or snacks on the go! Makes approx. 23 balls.
Another fun morning playing My Little Scythe. The girls really enjoy this game and Olivia was so close to winning, but Ben didn't hold back (classic dad). I would highly recommend this game for kids (great Christmas present!). There are fun things like pie fights for battles and within the game there are trophy's each player can win (Olivia's favorite). The art in this game is beautiful and the player pieces are really well made! The only difficulty we've had is telling Elsa what cards say (can't keep cards secret in your hand) since she's can't read yet. But that really isn't much of an issue and they still love the game. (Elsa is asking to play as I write this 😊). .
Whenever I see people post boardgame photos they are always in a fancy boardgame room, or a bunker with a fancy table, surrounded by games. Or at least that's how I see it compared to our messy kitchen in the background. Doesn't matter as long as there's room for the game 😊. .
After saying Orleans was my favorite several people suggested Concordia, so we got it back out for a game. 3 players (Ken joined in as part of our Gloomhaven game break) and we re-read the rules (only played it once in 2015) and finally got a chance to play. All 3 of us really enjoyed this game! You guys were right, it's a fun one! I really enjoy that is seems like there are so many different ways to plan, as strategize your win. I did not think I was doing that great and at the end I realized I had way more blue cards and it helped me BIG TIME! .
I agree with everyone who recommended the game, it's a good one! Now to get you the other game suggestions...
