🔥Cheesy Broccoli Stuffed Chicken Breasts 🔥
Tender cheesy and creamy chicken breasts stuffed with broccoli, garlic, parmesan, cheddar, and cream cheese.
4 chicken breasts
1 teaspoon Italian seasoning optional
1 teaspoon paprika optional
1/2 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon olive oil
For the filling:
2 cups broccoli florets
1/4 cup bell pepper minced
1/2 cup cheddar cheese or melting cheese of choice
4 ounces cream cheese softened
¼ cup grated Parmesan
2 cloves garlic minced
salt and pepper
To steam broccoli: Chop the broccoli florets into small pieces. Put all the broccoli in a microwave-safe bowl and about 2 tablespoons water. add water. Cover with plastic wrap and microwave on high for 2-3 minutes. Alternatively, steam on stove-top or blanch in boiling water for 1 minutes. Use a sharp knife to slice each chicken breasts horizontally to form a pocket. Be sure not stop cutting about 1/2 inch from the ends and sides. Season chicken breasts with a generous sprinkle of Italian seasoning, garlic powder, paprika, salt, and pepper.
In a large bowl, combine the steam and chopped broccoli, bell pepper, garlic, cheeses and salt & Pepper; set aside. Spoon the mixture into each chicken breast evenly. Secure with toothpicks if needed.
Preheat oven to 400F. Heat 1 tablespoons oil in a large cast iron or oven-safe pan over medium-high heat. Add the chicken breasts and cook for 2-3 minutes per side or until golden. Cover with aluminum foil and transfer to preheated oven for 15-20 minutes or until cooked through.
After so long... I've finally able to get up and make simple breakfast for myself wuhoo!! So today is blueberry waffle topped with Greek yoghurt, cherries and a heap full scoop of my favourite @amazingraze.co longan macadamia spread. It's the best, seriously! Happy Monday, people.

Friends and family bbq today and @raggedtoothbarbecue smoked a delicious #brisket and chicken thighs. Smoked meat plus a delicious strawberry salad, roasted new potatoes and @steph_gaudreau beet, carrot, and apple salad. Best Sunday ☺️

This breakfast platter offers Sliced Banana, Dal Roti Cut outs with Mint and Coriander Chutney 🍀For the Chutney, take
Half a bunch each of Mint and Coriander leaves 🍀🍀
+ One small onion🌰
+ One lemon 🍋 + One green or red chilli🌶
+ 1 tsp sugar + 1/2 tsp cumin seeds
+ 1/2 tsp dried pomegranate seeds + Salt to taste
Just add everything into the blender, mix mix mix and your chutney is ready😀
For Dal Roti cut outs, I took left over dal from the dinner, added some multi-grain flour, some ajwain (carom seeds), dried fenugreek leaves, amchoor (dry mango powder), black pepper powder & some salt
and kneaded everything into a dough.
Rolled a ball of this dough and using the cookie cutters cut it into different shapes.
Cooked these shapes on a hot tawa applying some ghee (essential for toddler's growth) and the chapati cut outs are ready to go.
These are healthy, high in protein and rich in fibre. A wholesome package for your kids 😊

Another throwback because I’m out and about living life today so no time for cooking 🤗 Double avocado because some days just call for that and I don’t remember exactly when I had this bowl, but it was definitely one of those days 😜 Paired with salmon which is probably my favorite source of protein 😋 There’s nothing better than a buttery piece of salmon in my opinion 😍 We just finished lunch after dress shopping and making a full day of it 💕 Connie lives about 8 hours away so the fact that she’d drive all the way here for two days is just unbelievable ❤️ Plus my future mother in law and friends for coming along too- feeling so loved and thankful today.
