Tumeric water 🙌🏻 now that it’s colder, I’ve been eating a lot more grounding, heavier foods BUT because I’m eating heavier than usual, I’m getting bloated and pretty backed up (if you know what I mean). So instead of my usual water with lemon in the morning I’ve switched it out to warm tumeric water. If you want to go #2 Like NOW, I highly recommend it!!
Ritual: when I wake up, I heat up some water, add in some tumeric (fresh or powdered- whichever I have on hand), add a pinch of black pepper and a teaspoon of honey. I then stir it up and drink it slowly. After 20 minutes you will GO to the bathroom. BOOM vibrant soup on a cloudy fall day ☁️Vegan Borscht, or Hot Beet Soup, is a classic Eastern European soup. Even though this version doesn't have beef, it's pret-ty authentic with a Lithuanian and a Russian making it - yay @alisachka_markovna!🌿
The beets become so wonderfully sweet after simmering! The soup is so satisfying with some fresh dill, yogurt or sour cream and a piece of hearty toast. Dreaming of Lithuanian black bread right now...✨
3 medium beets, grated
1 large onion, chopped
3 garlic cloves, minced
3 carrots, diced
3 dried dried mushrooms (I used shiitake), but can also use fresh mushrooms!
2 bay leaves
8 cups vegetable stock
½ small cabbage, chopped
4 potatoes, diced
28oz can of roasted tomatoes
1/4 cup dill
1 tbsp apple cider vinegar
Salt & pepper
1. Saute onion and garlic until softened, then add carrots and beets.
2. Add the vegetable stock, bay leaves and dried mushrooms, bring to a boil, then let simmer for about 20 minutes to soften the beets and carrots.
3. Add the potatoes, cabbage and can of tomatoes and simmer for another 30min or so.
4. One the potatoes are soft, add dill, vinegar and adjust spices and liquid, if needed. Scoop out the rehydrated mushrooms and either chop them into smaller pieces to add back, or just eat them whole!
5. Serve the soup with fresh dill and yogurt or sour cream. I used coconut yogurt and that worked great.

We've been brainwashed to think we need to avoid sugar and carbs when it comes to drinking. Let me break it down for you. It's none of those. It's the alcohol that fouls things up in our bodies. Alcohol is a straight up toxin -- your body has no idea what to do with it so it send it's to the liver clean the liver say it doesn't know either and send it to your fat till it can deal with it. Looking to burn some excess body fat?? Welp when you drink alcohol it stops the body fat burning process in it tracks. Depending on how much you drink it can take 2-4 days of working out before you tap back into your fat storage. ⠀
Got hormone problems??? Alcohol raises your estrogen levels 11% with every drink. ⠀
Bottomline -- you can go out and have fun, have a few drinks, but if you are wondering where you results are you may need to look at the booze.⠀

Chicken Avocado Caprese Salad
Must follow. Yummy food
¼ cup (60 mL) balsamic vinegar
2 tablespoons (30 mL) olive oil
2 teaspoons brown sugar
1 teaspoon minced garlic
1 teaspoon dried basil
1 teaspoon salt
4 chicken thigh fillets, skin removed (no bone)*
5 cups Romaine (or cos) lettuce leaves, washed and dried
1 avocado, sliced
1 cup cherry or grape tomatoes, sliced
½ cup mini mozzarella / bocconcini cheese balls
¼ cup basil leaves, thinly sliced
Salt and pepper, to season
Whisk marinade ingredients together to combine. Place chicken into a shallow dish; pour 4 tablespoons of the dressing / marinade onto the chicken and stir around to evenly coat chicken. Reserve the untouched marinade to use as a dressing.
Heat about one teaspoon of oil in a large grill pan or skillet over medium-high heat and grill or sear chicken fillets on each side until golden, crispy and cooked through. Once chicken is cooked, set aside and allow to rest.
Slice chicken into strips and prepare salad with lettuce, avocado slices, tomatoes, mozzarella cheese and chicken. Top with basil strips; drizzle with the remaining dressing; season with salt and pepper; serve.

Caramelized Onion Spaghetti Squash Casserole • 1 medium spaghetti squash – use 2 1/2 cups cooked squash • 2 cups chopped scallions • 1 cup chopped baby Portobello mushrooms • 1 cup Rao’s Marinara sauce • 1/2 cup water • 2 tablespoons extra-virgin olive oil + extra to coat pan • 1 teaspoon garlic powder • 1/2 teaspoon salt • 1/2 teaspoon pepper • 3 eggs, whisked
1. Preheat the oven to 400°F and grease an 8x8 casserole dish with olive oil.
2. Cut the spaghetti squash in half lengthwise, scoop out the seeds and place the squash cut-side down on a baking sheet. Bake for 45 minutes, until the skin of the squash is fork tender.
3. While the squash is baking, prepare the caramelized scallions and mushrooms. Heat the olive oil in a frying pan over medium-high heat, then add the scallions and mushrooms. Lower the temperature to medium and cook the scallions and mushrooms until beginning to brown, stirring occasionally to prevent burning, for around 10 minutes. Add the water to the pan and stir the scallions and mushrooms to pick up the brown bits in the bottom of the pan. Cook the scallions and mushrooms for 8-10 minutes, until there is no more water in the pan.
4. Remove the squash from the oven, scoop out the flesh and place it in the casserole dish. Stir in the caramelized mushrooms, scallions, marinara sauce and garlic powder. Add the whisked eggs to the baking dish and mix everything together until you can no longer see the eggs.
5. Bake uncovered for 1 hour in the oven, until the top of the casserole has formed a crust that looks like cheese and is brown around the edges. Let rest for 10 minutes before serving.

First prepared meal in the new house!
Did a Paleo Style Oats and you won't believe what it's made out of Eggs and Banana. It's sooo good. I topped it with some Walnuts, Strawberries, and Unsweetened Coconut. Will definitely be doing this again.
Hoping I will get some meal prep done today but we will see because my house is still a mess and we're still trying to get stuff together around here.

Ask and ye shall receive 🙇🏼♀️ (Was that sac religious ? 😬) I feel funny calling this a recipe because it’s so basic and there are no measurements, but typing that makes me realize that that’s how all my recipes are 🤣 sooo here you go:
Bring chicken broth to a boil (I use water and chicken bouillon and add and taste til it’s how I like it.)
Add in chopped potatoes, carrots, (probably 2ish cups of each) and egg noodles (I use the red bag of Homemade Country and use 1/2 the bag. I’ve found it at just about every grocery store) and boil until everything is as soft as you want it.
Turn off heat and add 1 bag frozen peas, chicken (I cook 2-3 breasts in the crockpot so it shreds easily, but you could use rotisserie) and a bunch of black pepper. Done and done!
Almost 2 weeks into the 30 days to healthy living!
I feel amazing, no bloat, digestion is on point, down 2 lbs, skin is more clear, and I have more energy WITHOUT coffee. 🙌🏻

Dark Chocolate Chip Peanut Butter PerfectBar remake 🤤🍫 YOU GUYS, these are soo insanely similar to the original🔥possibly even better 😬🤫 *
Makes 10 bars: 😍
-1 cup peanut butter (used @traderjoes 1-ingredient PB)
-1/4 cup honey
-2 scoops @nuzest_usa “just natural” protein powder (love this one because it’s just one ingredient - pea protein)
-1 tbsp coconut milk
-1 tsp vanilla extract
-1/2 tsp sea salt -Optional: superfood powder - I used 1.5 tsp @moodbeli mushroom adaptogen (cacao & 🍄) - about 1/2 cup chocolate chips
1️⃣ Mix all ingredients (besides choc chips) together. Line a 8x8 dish with parchment paper and evenly spread mixture across bottom
2️⃣ Sprinkle chocolate chips over top and press down with a spatula
3️⃣ Refrigerate for 2-3 hrs, cut & enjoy ♥️
