Happy Friday! Loving this fall weather!
I’m also loving getting my superfoods in every morning! Can I tell you I was so skeptical, I was! I did not believe it, I thought it was “just another protein”. I said no for a long time because I was happy with my plant based one. But this one is plant based too, and SO much more!
Replacing one meal a day with a shake isn’t hard it gives your body one meal a day that is SUPER-CHARGED with natural ingredients that will give you natural energy, reduce cravings, immune system support, and help you stay full for the next 3 hours.
I love the flexibility, I take it with me in the car, it actually keeps me full and I make it on the weekends too, because it’s GOOD!
Oh and it’s hubby approved!
Hands up if you want to try it 🙋🏼♀️.
Over night oats is a great option for a plant based breakfast! It’s perfect for a quick on-the-go meal. It contains 5 grams of protein and you can add anything you want to it!

-banana slices -coconut flakes -blueberries -apple slices -peanut butter -honey or maple syrup -chia seeds
Add oats, non-dairy milk, and your additions into a container. Mix them together and place in the fridge for at least 5 hours. Can last up to 3 days. This recipe give you one serving of whole grains and fruit! Perfect for a whole food plant-based diet!

This definitely rings true for me! I can think about something I want to have or do, but until I actually take the steps to achieve it, earn it, or do it, I really haven't done anything! 💁
It's easy to get caught up in "having everything just right " before we just START!! I've always been one to research and learn everything- I've always loved books 📚, but I've also realized if I don't put that knowledge or in some cases desires to good use, it's really just a waste! The last thing I want is to get to the end of my life and have regrets 🤦♀️
Date night! Daddy is in class so G and I went out for tacos 🌮 and a walk. Let me tell you, though, I’m DONE for the week. Almost murdered the dogs on our walk 😂 and G forgot to tell me he had to pee so he walked home in wet pants 🤷🏼♀️ but we’re cozied up by the fire tonight watching a movie with the dogs 🐕 #toddlermomlife#cattledogs#friyayvibes
Cheese Pav Bhaji Pull Apart Bread -
Every Indian who loves street food certainly enjoys their share of the famous spicy Indian vegetarian dish, Pav Bhaji. This delicious dish is usually eaten by dipping pieces of bread or pav as we call it in a spiced vegetable mix garnished with coriander and chopped onions. I created a new and tasty way of enjoying this traditional recipe by mixing it up with the recipe for cheesy pull apart bread giving you Cheese Pav Bhaji Pull Apart Bread! Enjoy the same flavours by pulling each piece of bread from the boule covered with a cheesy spiced bhaji.
My favourite go-to, one-pot meal ☝🏼
Kabocha coconut curry 🍛😍 This should be no surprise to anyone that knows me well. Chances are if you’ve been to my house for dinner you’ve tried it 🙌🍽 We are in the height of squash season, so if you haven’t tried this one, give it a go!! I’ve taken too long of a hiatus from posting recipes, so here’s my first of the fall to get kick-started. Recipe is posted on the blog crystalhiggins.com
However, it’s so easy, you don’t really need a recipe!!
🔸1 can full fat coconut milk 🥥 (+ same can filled with water 💦)
🔸1 cooked kabocha squash
🔸3 T red Thai curry paste 🔸1 package extra firm tofu *optional substitute chicken or shrimp 🍤 🍗 🔸3-4 cups vegetables of choice; peppers, green beans, mushrooms, zucchini etc.
Bring to a low boil and simmer for 15-20 minutes. This one does get better the longer it cooks!
Serve over brown rice, quinoa or keep the carbs lower by serving over spinach or mixed greens.
When lasagna slice is the size of your head 😋😂 Got to fuel up for tomorrow’s long run 🏃🏻♀️ + when lasagna is layered with half zucchini, it’s totally acceptable to have triple the serving, right? Right! 👌🏼
Happy Friday! 🎉

I woke up on the wrong side of the bed this morning...poor sleep and being woken up for the day at 4:50 AM will do that to yah 😑🤪 Anyway, had a crummy morning but managed to turn things around with a good sweat session and then dance time at the library with my kiddos. Now home and settling into lunch!
