Having vegetables,protiens, carbs and fats all in one bowl,makes lentil soup more of a complete meal than just a soup. Plus it's always a good solution when you need to tighten up your food budget!💰 *
In a large pot ,heat 1 spoon of butter, add 1 onion,1 potato,1 carrot ،bay leaf and 2 garlic cloves all cut into cubes.Cook for a couple of minutes then add 1 cup of yellow lentils and 1 tomato. Add 5 cups of boiling water. Season with salt, pepper and cumin. Bring to a boil then leave for 15-20 minutes till cooked on medium heat then use a hand blender or a stand blender to puree.
Add 1/2 cup of cooking cream, bring to a boil then serve!

في حلة كبيرة على النار هنشوح في معلقة سمن بصلة و جزرة و بطاطساية و فصين توم وورق لورى،كله مقطع ،تشويحة سريعة و ننزل كوباية عدس اصفر و طماطماية مقطعة ونقلب ووراهم ٥ كوبايات ماية سخنة.
نسيبهم يغلو و نضبط ملح وفلفل و كمون..كمون كتير 😉
نهدي النار و نغطيها و نسيبها ١٥-٢٠ دقيقة لحد مايستوو.
نضربهم في الخلاط او الهاند بليندر و نحط شعرية محمرة تستوي فيها.
نزود ١/٢ كوباية كريمة طبخ بتفرق اوي في الطعم😍 غلوة و نطفي.

Este final de semana não foi fácil. Fomos apanhados todos numa gastroenterite que deixou a vontade de comer e de cozinhar a zero. Estamos a voltar aos poucos à normalidade, por isso partilho uma receita da semana passada. Super rápida:
Couve galega cortada para caldo verde cozida
1/2 lata de Feijão frade
Sementes de sésamo.
~ como já tinha a couve 🥬 cozida, a única coisa que faltava era cozer a batata 🥔 cozi às rodelas. Depois, numa frigideira, juntei a cebola com o azeite a refogar, adicionei a couve e salteei e juntei 1/2 lata de feijão frade. Foi só empratar e comer. Juntei os pistácios em cima e salpiquei umas sementes de sésamo e salsa nas batatas. Easy!

1) Cooking tomatoes is easier than you think. All you need is some fat (like olive oil or meat drippings) and spices and you are halfway there! 🥣
Easy: slice them up and throw them in.
Easier: cherry tomatoes can be thrown in the pan whole.
Easiest: canned tomatoes taste just as good.
With this you have a tasty base for just about anything. Add some spices and you’re good to go.
2) Tomatoes getting a little... meh? Even better.
When tomatoes get *too too* soft (not talking moldy soft, here) the best way to get rid of that acidic taste—and be more #zerowaste—is to sauté them with some spices and you won’t even be able to tell you forgot that entire container of cherry tomatoes. Again again. 🤷♀️

What are your favourite take aways? We barely ever get them because 1. No delivery out here and 2. If we pick them up they're cold by the time we get home! So I'm working my way through our favourites and making them at home! This sweet and sour pork recipe is one of our favourites...it's quick, easy and super tasty. And most definitely healthier than the bought one.
1/4 cup sugar
1/4 cup apple cider vinegar
2 Tablespoons tomato sauce
1 Tablespoon soy sauce
1 teaspoon oyster sauce (optional)
1/2 cup hot water
COATING FOR PORK
1/3 cup cornflour
400 grams pork steaks
2 Tablespoons olive oil
1/2 red pepper
1/2 yellow pepper
1/2 cup pineapple pieces
Add the ingredients for the sauce to a small jug or bowl and whisk together. Set aside.
PREPARE THE PORK
Add the cornflour to a small bowl and the egg to another small bowl and whisk. Set aside.
Heat the olive oil in a large frying pan over a medium/high heat. While it is heating up, pat dry the pork steaks and slice into 2cm pieces.
Add the pork pieces to the bowl with the cornflour and toss to coat evenly (you may need to do this in 2 batches)
Once the pork is coated in cornflour, dredge it in the egg mixture and then place it in the hot oil. Let it fry, without stirring for a few minutes to allow the coating to get nice and brown. Flip the pork pieces over and cook for a further 2 or 3 minutes until cooked through.
Add the peppers and pineapple and fry for 2 minutes.
Pour over the sauce and bring to the boil, and then simmer for 3-4 minutes until the sauce has thickened slightly.
Remove from the heat and serve immediately on white rice.
This one is an Eva favourite.

- Roast any veggies in sight for 10mins or so on high. - Fry some Bacon - Serve with your favourite dressing.
We love olive oil, balsamic and honey dressing. Shake it up!

Easy dinner tonight after a busy busy weekend. Half a sweet potato topped with pizza ground turkey (I added tomato sauce, Italian seasoning and red pepper flakes) and topped with mozzarella and Parmesan. 😍

I found out today that one of my classmates from high school was found at Strawberry Reservoir. Her and her boyfriend were fishing when their canoe tipped and they were flung into the freezing water. Neither survived 😔. Her dad was also my Spanish teacher and I have nothing but good things to say about her. Even though I didn’t know her extremely well, she was kind, and I’ll always remember her for that. My heart is breaking for her and her family tonight as we enter into the holidays this week. Tell those you love that you love them, take more pictures together, and enjoy the time you have with the ones you love while you have them 💛
Cheese Stuffed Chicken, Green Beans, and Potatoes 🧀🐔
Chicken breast sliced to form a pocket
Shredded Romano cheese, Italian seasoning stuffed in the pocket
Covered chicken in additional Italian seasonings then baked in the oven at 350 for 30mins
Washed, diced potatoes grilled in oil and butter (as well as garlic powder, onion powder, salt and pepper) for 7mins, stirred once, then an additional 5mins
green beans cooked on the stove top in butter, salt and pepper
Notes: potatoes were cooked too long and green beans needed more seasoning but chicken was PERFECT

A quick and easy dinner for us tonight after an adventurous day of potty training.
Tuna cakes and Brussels sprouts. I love these tuna cakes as a quickly thrown together meal for those crazy days that sneak up on us.
2 cans tuna
1/2 cup panko
Salt and pepper to taste
1. Mix ingredients in bowl. Shape into 5 patties.
2. In non-stick pan, heat avocado oil (or oil of your choice!) until shimmering. Cook patties on each side 4-5 minutes, or until brown.

-Salmon with coconut aminos + honey. 🐟
-Zucchini and peppers with sherry vinegar + olive oil. 🥒
-Sweet potatoes w Ceylon cinnamon (good for blood sugar). Aka healthy 🍟

Almond Flour “breaded” baked chicken over zucchini noodles
Don’t feel like slaving away over the stove tonight? Yup. 💯 me today 🙋🏻♀️ but also don’t want to eat out or put yourself in a sleepy carb coma (also me🙋🏻♀️) give this a try and please let me know if you make it! I love to hear from you guys!
•1 lbs organic chicken (I used dark meat)
• 1/2 cup almond flour
• 2 tablespoons organic butter (can be replaced with olive oil to make it paleo)
• 1 tablespoon salt
• 2 large organic lemons
• 3 large zucchini
• 2 tablespoons toasted sesame seed oil
• 1/4 cup bone broth (I used my own homemade broth!)
• 1/2 tablespoon cream of tartar
• spoon full of Italian herb spice mix
• a pinch of black pepper
• a pinch of dried chives
• In a bowl add the almond flour and salt then cover both sides of the chicken with it
• In a pan, slowly simmer the butter until it’s melted, then add chicken and cook each side for a minute or two. (Pro tip: DO NOT LET THE ALMOND FLOUR BURN)
• Set chicken aside
• Add the bone broth and spices to the pan and let it simmer until it becomes thick
• Add the sauce to the chicken and bake for 25 minutes on 350 degrees
• Meanwhile, spiralize the zucchini and once in noodle form, add one tablespoon of the sesame seed oil to a hot pan and toss in the noodles with salt
• once the chicken is ready serve over the noodles and add pumpkin seeds and walnuts

My husband was away on military orders this weekend. I wanted to make a nice dinner for his return, but I had plans to be at the Norfolk Grand Illumination festivities with my TRDance family. ✨ I found a recipe I thought about making, but I didn't have time for all the prep and stovetop cooking, so I decided to go my own way. 🤷♀️ ENTER CROCKPOT!
I threw this flavorful fall combo in the Crockpot just before leaving the house, and crossed my fingers... 10 minutes to prep, just with what I had on hand. Final product was great.
Maple Apple Chicken
2 lbs chicken breasts, cubed
2 sweet potatoes, cubed
3 apples, peeled and cubed
1/2 lb broccoli
1/2 an onion, chopped
2 handfuls of pecans/almonds
1 tbsp rosemary
1 tbsp dried sage
1/2 tbsp ginger
1 tbsp salt
1 tbsp pepper
1/2 cup pure maple syrup
1/3 cup water
Juice of 1/2 a lemon
Garnish with dried cranberries ❤
