Baked Enchilada Chicken Thighs with sautéed veggies. -
I cooked the chicken thighs in the oven for an hour at 350 degrees and covered them with taco seasoning and red enchilada sauce. Super easy and only 3 ingredients 😉
Zucchini roasted in olive oil with Parmesan, mushrooms cooked in butter, & the last of the chicken wings 🥰

My heritage is that of a Polish and Ukrainian background. It is an all time favorite and although the ingredients are familiar the flavor varies with the type of potato, sauerkraut, onion, kielbasa and method of preparing. This frigid weather 🥶 is making this Florida girl really miss home 🏡 . I grew up with mangos as a staple in my home (with a 🥭 tree in our backyard!), and eating the fruit always makes me happy 😆.
Instead of normal comfort food, I was craving a light seafood/mango dinner to enjoy in this "balmy" 30-degree evening ❄️ . This is a great dish to make if you are trying to sneak in some seafood 🦐 into your diet if you aren't a huge fan. The sauce and the mango flavors are the highlight of the dish so you don't even notice the shrimp. You can always sub with tofu or 🐔 if you really cant stomach the shrimp (but then you are missing out on that wonderful DHA!). .
These lettuce wraps are made with a ton of veggies that are loaded with goodies that help keep you healthy during the winter months 😷.The mangos provide an additional punch 🥊 of natural Vitamin C.
On the side, I ❤️ to serve fresh mango slices sprinkled with cayenne pepper for some HEAT 🔥 ! We are eating this tonight pretending to be oceanside in 70-degree weather...and then we take our dog 🐶 out for a walk and remember that it is freezing.
. * 1 tablespoon sesame oil
* 1 pound wild shrimp, peeled, deveined, and diced
* 2 cloves garlic, diced
* 1 small yellow onion, diced small
* 6 oz button mushrooms, washed, dried, and diced
* 1 small orange, yellow, or red pepper, washed, dried, and diced
* one 8-oz can water chestnuts, drained and diced
* 1 fresh mango, peeled, pitted, and diced
* 2 Tbsp Hoisin sauce
* 2 tablespoons low-sodium soy sauce
* 1 tablespoon sriracha
* 3 green onions, sliced into thin rounds
* Salt and pepper-to taste
* Iceburg lettuce leaves, chilled
. * * In a large skillet, heat oil over medium-heat. Add shrimp, garlic, onion, #mushroom , pepper, and water chestnuts and cook 5 minutes (ensuring shrimp is cooked through).
* * Add mango, hoisin sauce, soy sauce, sriracha, and ginger. Cook for 3 more minutes. * .
* * Add green onions and stir into mixture for 1-2 more minutes. Add salt and pepper as desired. * .
* * Spoon mixture into lettuce leaf as desired. Enjoy 😉!

Got the cauliflower nice and cooked. Ready to pour the melted cheese over it and bake it for about 15 mins or until it’s bubbly brown. Hey everyone🌛 I haven’t posted in ages because I took a good break from social media but I’m back again for a bit. Anyway I made this curry a few days ago literally out of tins and frozen veg because I didn’t have much in my fridge. Took me around half an hour, it’s so easy to make and is really yummy. INGREDIENTS: 1 can of coconut milk, a tin of chopped tomatoes, a tin of chickpeas, 1 onion, 2 garlic cloves, 1/2tsp of the following: cumin seeds, coriander seeds, mustard seeds, 2 tsp ground turmeric, 1 tsp ground cumin, (optional spices: 3 cardamon cloves, 2 star anise), 1 regular spoon size of agave syrup (any other sweetener will do), 1tbs tomato pure and any bits of veg you’ve got going.
METHOD: this is so easy, all you’ve got to do is fry your onion in a bit of oil until golden brown. Then add all of your spices and minced garclic and cook on a really low heat until you can smell the spices aroma. Next add your tinned tomato, chickpeas and coconut milk and cook for around 15 minutes giving everything a good stir. Then add your veggies and once those are cooked through you’re ready to serve. This could probably feed 4 people. I tend to bulk cook and then freeze portions for another time. Enjoy!

Easy & Healthy Dinner: All from Trader Joe’s. Actually the “recipe” came from Scott at my TJ’s years ago when I was sad that they no longer had the pre-made fish tacos. All you do is sauté the salmon burgers and break them up as they cook. Add 1/3-1/2 jar is cilantro dressing and roll up in a Habanero Lime Tortilla. I added a quick mango salad (all from TJ’s too) and I made a simple coconut rice to go with it all. If you used your instant pot for the rice you are seriously looking at a 20 minute meal! #ilovetraderjoes#traderjoesmeals#easydinner#greatforlent
