We are just going through some old pictures. We all start somewhere. This picture was taken at Tony’s butcher shop in Haberfield in the early 80’s. We progress and we change. The method of using a wire cage is long gone for us however we improved and evolved over the years. We truly believe the art of Salumi making is exactly that, “an art”, it is not simple, especially the methods we use.
