Gambas al ajillo (garlic shrimp) is a popular Spanish dish found principally in the south and center of Spain. The primary ingredients consist of shrimp, garlic and olive oil but there are many variations. It's often served in Spain's tapas bars as an appetizer. However, this dish is so popular that it's occasionally offered as an entrée. INGREDIENTS
2 tbsp. butter, divided
1 tbsp. extra-virgin olive oil
1 lb. medium shrimp, peeled and deveined
1 lemon, thinly sliced, plus juice of 1 lemon
3 cloves garlic, minced
1 tsp. crushed red pepper flakes
2 tbsp. dry white wine (or water)
Freshly chopped parsley, for garnish.
In a large skillet over medium heat, melt 1 tablespoon butter and olive oil. Add shrimp, lemon slices, garlic, and crushed red pepper flakes, and season with salt. Cook, stirring occasionally, until shrimp is pink and opaque, about 3 minutes per side.
Remove from heat and stir in remaining butter, lemon juice, and white wine. Cashel, world famous as the home town of the Rock of Cashel, is a quintessential Irish town that throws up plenty of surprises on its narrow, winding streets in the form of great little cafes, lively pubs or interesting eateries and lots of boutique shopping experiences.
From the Archives: An Irish bog body known as “Cashel Man” was found to date to around 2000 B.C., making him by far the oldest fleshed bog body in Europe.
