Chef de Cuisine Andrea Alridge at @cincinristorante explains that the essence of their signature Alberta Lamb Rack is derived from their wood-fired grill which gives the meat its signature char and crispiness.
She further contends that people who weren’t fans of lamb had unequivocally changed their minds once they tried it the CinCin way.

The zucchini batons are GONE! I wasn’t sure I would be able to use them all but I did. Of all my zucchini preparations, I think I love them spiralized into noodles the most. I like to prepare them in advance and lightly salt them to remove excess moisture before flashing them quickly over high heat.
I would eat zoodles on their own, but this preparation is another great way to empty your fridge. I sautéed some baby tomatoes, onion, and garlic in some extra virgin olive oil. I added a large bunch of basil, tossed in the zoodles, gave them a quick turn in the pan (about 1 minute) and that was it. I topped mine with some super spice chili pepper oil I made, recipe courtesy of @mangiawithmichele. The tomato bread I made earlier today (see prior post) was the perfect accompaniment to this all veggie meal.

Not a particularly popular part of the Pig but one of my favorites, Intestines are surprisngly delicious!
One of my favorite intestine dishes is from Chili Garden Restaurant in Milpitas. Chili Garden serves Ssechuan food so you can expect tons of spice and flavor in all their dishes
When prepared properly they're actually quite juicy and fatty. These intestines were fried with tons of chili and garlic. The intestines were slightly crispy on the outside and fatty and chewy on the inside. Flavor-wise the chilis and garlic really took point here and who doesnt love fat, chili and garlic flavor notes all together?!

2 scoops @iheartmacros vanilla protein
4 tbsp @crazyrichardspb peanut butter
1/2 tsp vanilla extract
3/4 cup almond flour
2 tbsp chopped dark chocolate
2 tbsp maple syrup or sub a dropper of liquid stevia!
4 tbsp nut milk - combine + scoop + freeze + enjoy!

Tonight was a pizza kind of night as what better way to do it that in traditional local style.
Not your average toppings for pizza, we tried out the tuna pizza and corn pizza.
Interesting I will admit but packed with flavour and the crust had a nice crunch to it which was right up my ally. The marinara had a tangy but sweet kick to it which gave it an awesome balance of sweet and savory.

1 & 1/4 cups Gluten Free All Purpose Plain Flour Blend*
2 Tbsp desiccated coconut
120g frozen raspberry (or apple) purée (or 1 banana sliced)
2 Tbsp granulated stevia/erythritol blend (or natural sweetener of choice - maple, coconut sugar)
1 & 1/2 tsp baking powder
1 Tbsp coconut oil
1 & 1/4 cups unsweetened coconut milk (or milk of choice)
Pinch of salt
1 tsp pure alcohol free vanilla extract
*Add 1/4 tsp xanthan gum if desired to gluten free flour, if yours doesn’t have it for added fluffiness
Mix dry ingredients in a bowl
Mix or blend wet ingredients
Pour wet into dry and stir until just combined
Ladle batter into pan as required
Cook over low heat until bubbles form, then flip and cook on other side
*optional - add a tsp of pink pitaya/dragonfruit powder to the mix for extra pinkness
Top with sweetened almond or coconut yoghurt, berries and a sprinkle of coconut .
