So I made some healthy banana oatmeal cookies today, pepped up with maple extract, dried apricots, and walnut. Still. I don’t know, guys. They taste like a round granola bar, not a cookie. What did I expect with just bananas and oats and an egg as the body? I ate two, and they’re healthful, and filling, and warm, but delicious like a cookie? Probably not. ☀️Morning friends! Carrot Cake Breakfast Cookie recipe for you today! 🥕🍰🍪😋They’re gluten, dairy and refined sugar free...AND they’re delicious and easy to make! (There’s really no reason for you not to try these😉). .
🥕1/4 c.real maple syrup
🥕4 T . coconut oil (melted) .
🥕3 T . almond butter
🥕1 large egg
🥕1 tsp . vanilla extract
🥕1 c . almond flour
🥕1 c . GF rolled oats
🥕1 tsp ½ baking powder
🥕1 tsp ½ cinnamon
🥕1/2 tsp . ground ginger
🥕1/4 tsp sea salt
🥕1 c . shredded carrots
🥕1/2 c . raisins
🥕1/4 c . shredded coconut
🥕1/2 c. chopped walnuts
1️⃣Whisk together first 5 ingredients.
2️⃣Stir in flour, oats, baking powder, cinnamon, ginger, and salt until combined.
3️⃣Stir in carrots, raisins, shredded coconut and walnuts.
4️⃣Preheat oven to 350 F, and line a baking sheet with parchment paper.
5️⃣Using tablespoon, drop dough onto prepared baking sheets and flatten slightly.
6️⃣Bake for 10-12 minutes. Let cookies cool for at least 5 minutes on baking sheet before removing. 😋Enjoy!!!

2 bananas (mashed)
1/4 cup nut butter
1 cup coconut flour
1 tsp baking powder
1/4 cup flax seed
1 handful raisins
1 handful pumpkin seeds
1 handful chopped pecans
1 handful dark choc chips - Mix together eggs, nut butter, and bananas
- Add in remaining ingredients
- Scoop onto baking sheet and bake for 10 minutes at 180 Celsius - Allow to cool and enjoy 😊
I didn’t sleep last night because I was so nervous about going to the dentist first thing this morning 😂 After 4 jaw surgeries and 2 rounds of braces anything related to teeth freaks me out. It wasn’t as painful as I thought, but my teeth hurt so bad all day after just a normal cleaning. Upside? Yummy, soft foods all day long 💗 My fave? These cookies. Oh. My. Goodness. The easiest, quickest and healthiest cookies ever! You may have noticed in my stories that I made them yesterday and then again today - maybe I’m obsessed? .
Anyhow, here’s the recipe if you’re interested - with very rustic measurements 🤫
Simply mash two small or one large banana in a bowl. Add in a squeeze of maple syrup. >
Melt about 1-2 tbsp of coconut oil and add that to the mixture. Then add a sprinkle of raisins (or leave them out if you’re not a fan).
Add in a sprinkle of dessicated coconut (optional), then add in about 1/4cup of flour (we used white rye), and then about 1/2 cup oats (as much until it becomes a more solid spreadable consistency), and about 1/2tsp baking powder. Mix well.
Dollop onto a baking tray and flatten with a fork. Bake at 180c for 15 mins or until the edges start to crisp. >
COOKIES for breakfast. These Banana Blueberry Breakfast Cookies from @paleorunningmomma are delicious! I left out the maple syrup... a few St. Patty’s Day weekend treats awakened my sugar dragon and I’m steering clear of sugar of any kind for a while! But, they still tasted amazing. Here’s the recipe // • 1 banana overripe, mashed well
•1/2 cup smooth almond butter (my fave is @thrivemkt)
• 3 tbsp pure maple syrup (I left this out!) • 2 tbsp coconut oil solid but soft
• 1 tsp pure vanilla extract
• 1 1/4 cups blanched almond flour
•1/3 cup ground flaxseed
•1/2 tsp baking soda
•1/8 tsp fine grain sea salt
•1/2 cup blueberries FRESH. (frozen won’t work!)
• Preheat your oven to 350 degrees and line a large baking sheet with parchment paper.
• Using an electric hand mixer, combine the mashed banana, almond butter, maple syrup (if using) coconut oil and vanilla until smooth
• In a separate bowl, combine the almond flour, flaxseed, baking soda and salt, then add this to the wet ingredients until a sticky dough forms.
• Stir in the blueberries & then chill in the refrigerator for about 10 minutes.
• Drop 16 cookies onto the prepared baking sheet and gently press each one down just a bit in the center.

Spring break started... with food poisoning yesterday 😷 We had plans to come up to the mountains so I am now on the couch while everyone else is skiing (that was the plan anyway, but I’m even more grateful for the rest). I’m finally feeling better this afternoon + regaining my appetite. I am thinking of making my 3 Ingredient Banana Oat Cookies, since they’re easy to digest + really tasty 🍪 Find the recipe in my archives!

Apparently it’s #nationaloatmealcookieday and that’s a random national holiday I can totally get on board with! I’m celebrating with a a twist on my banana bread breakfast cookies: chocolate chip coconut! The recipe is on my blog, just use coconut in place of walnuts. These Sweet Potato Breakfast Cookies are so healthy and SO YUMMY 😋Oats + almond meal + spices galore + sweet potato 🍠 + pumpkin 🎃 + coconut oil 🥥 = 💥 added allspice and nutmeg to the cinnamon and ginger combo, plus pumpkin cause I ran out of sweet potato mash hehe, no regrets! 😜 Seriously delicious and autumn-esque 🍂 Also to make it #sugarfree just substituted a flax egg and some almond butter for the maple syrup 🍁 thanks #runfasteatslow 🏃♀️ 🏃🏼
