Garlic, onion, horseradish, ginger, vinegar, and hot peppers sound like a wonderful line up of ingredients for a savory soup or stew, but as the core ingredients for FIRE CIDER, thinking about drinking all of them combined makes it a bit.. hard to swallow.
Used as a folk remedy for generations, this potent mixer packs a punch to both the taste buds and to pathogens and inflammation. Containing circulation boosting capsaicin from hot peppers which flood areas of your body that need nutrients, pain-taming ginger, anti-microbial garlic and onions, and pH balancing vinegar, sipping on fire cider each day will help boost immune and overall digestive health.
1/2 cup freshly grated horseradish
1/2 cup freshly grated ginger
1 cup chopped onion
2 jalapeños, chopped
juice and zest of 1 lemon and 1 orange
2 sprigs each fresh rosemary and thyme
1-2 tbsp. ground turmeric root
1 tsp. black peppercorns, slightly crushed
1/4 cup local honey
1/4 cup apple cider vinegar
Put ginger, horseradish, onion, garlic, peppers, orange and lemon zest and juice, thyme, rosemary and turmeric in a quart canning jar. Cover with apple cider vinegar by about two inches. Use a piece of parchment paper or wax paper under the lid to keep the vinegar from touching the metal. Shake well. Store in a dark, cool place for one month and shake daily.
After one month, use cheesecloth to strain out the pulp, pouring the vinegar into a clean jar. Add ¼ cup of honey and stir until incorporated. Taste and adjust honey accordingly.
