O-sashimi no moriawase, お刺身の盛り合わせ、Sashimi spread/assortment, or colloquially knows as o-tsumami (おつまみ、lit: snack). Sashi = 刺し = pierced; Mi = 身 = body/flesh/meat. One of my favorite explanation for the origin of the term sashimi: when the fish is caught, brain is immediately pierced with a spike to paralyze and kill it instantly and placing it on ice. This process is known as ikijime (活け締め、魚を漁獲した後の処理方法を指す語。「〆」の字を用いて「活け〆」、「活き〆」). Ikijime minimizes the release of lactic acid keep the fish fresh and toxic free. When spiked correctly, the fish fins flare and the fish relaxes, immediately ceasing all motion. This method is considered to be the fastest and most humane method of killing fish.

Septime is ranked as the world’s 35th best restaurant and they are known for their “sustainable” / “eco-friendly” angle. The food was great, service on point, and the overall experience amazing but getting on these types of lists unnecessarily raises expectations. The restaurant is located in the hip and diverse 11th arrondissement. Foodies and fashionistas flock to the boutiques and vogue charming restaurants around Rue de Charonne.
Chef 👨🏼🍳 Toyomitsu Nakayama (中山豊光) diligently shaving Parmigiano Reggiano on tuna. A French/Italian twist to “zuke”. The Maguro (鮪、tuna) on the counter of Toyo in the 6eme arrondissement of Paris 🇫🇷. Zuke (漬け、lit: "to pickle") is a classic Edomae (江戸前) preparation method for the purposes of preserving the fish during the days when refrigerators were not around. Typically large lean cuts of tuna are immersed in soy sauce (I think olive oil at Toyo) and other ingredients for at least a few hours. As the fish looses its water content the flavor concentrates and texturally it becomes smoother. マグロのサラダ仕立て、パルメザンチーズ 🧀. @9gagnomnom
