250g/ 8oz strip loin steak
A little olive oil
Salt and pepper
½ red onion
2 handfuls of salad leaves (rocket, spinach, chard, lambs leaf…)
2 whole wheat rolls or your favourite sandwich bread (sourdough, ciabatta, country white, baguette…) Ballymaloe Steak Sauce
Marinate the steak in advance with some olive oil, salt and pepper and refrigerate. When ready allow the steaks to come to room temperature before cooking. Heat a griddle pan until nice and hotand then add the steaks. For medium rare cook 3-4 minutes per side depending on thickness. When the steak is cooked, remove it from the pan and allow to stand for about 10 minutes, the secret to a juicy steak is to let it rest before eating. Slice the onion into half moons. Spread mustard on one side of the roll and add salad leaves and sliced onion. Slice steak and place pieces on top of onions, finish with Ballymaloe Steak Sauce and enjoy!

Two years ago I stood in the same spot cheesing ear to ear while I got a photo snapped from an iPhone as a souvenir memory and present day I’m back representing the Digital Day in Ireland with @stellerstories as the the Wild Atlantic Way regional rep for @tourismireland ... what a trip! Hard work and patience got me here and I couldn’t be more thankful to cover this gorgeous region of the country as it’s my favorite. ☘️⛰⛰⛰🌊✨🌈
Last time I was here the weather was miserable and covered in clouds, so luckily the sun was shining this time around and I saw the green cliffs covered in warmth. Big shout out to the security guard Micheal who allowed me to step in for a few photos (very far from the cliff edge) and helped hold my tripod so the wind didn’t push it over!
