I was really feeling like something hot and spicy since it was so cold and really feeling like soup. I didn't have soup stuff so we did a fridge clean out Thai red curry with lots of stuff and then just eat it like a soup.
It's a great dish because I only need to keep curry pastes, coconut cream and chicken bone broth on hand which we always have in the pantry and freezer, and then I just add whatever protein I like and whatever vegetables are needing to be used up in the fridge.
This one we did a mix of prawns, salmon, tuna, barramundi and scallops. I keep these frozen in small individual portions and that way we can throw in a bit of everything and not break the bank as seafood can be so expensive. For veg I threw in zucchini, kale and some small diced swede!

I generally don't have specific recipes I follow. I usually just take a normal recipe and substitute ingredients for low carb versions. But this time I didn't have to guesstimate. It's absolutely delicious. Just remember, just because it's low carb, doesn't make it carb-free, so still check your portions. It's a treat, but you definitely can overdo it.
Edit: Also, for the locals, if you're looking for a cheaper way to make this (cream cheese is expensive! ), try using Maas. You take a 2l Maas, line a colander with a cheese cloth, put a container beneath it and pour the Maas in. Let it drain for 24 hours. You'll be left with a yummy cream cheese-like consistency. It makes about 900g. I usually use 2/3 of this and 1/3 real cream cheese. It'll obviously be better with all cream cheese, but this is a cheaper alternative and still yummy.
First let me start by saying I have NEVER bought any kind of mct oil, I have done bulletproof coffee and the like but I always use coconut oil.
However the @perfectketo products are well known AND there's this mug cake recipe from @keto.connect I've had my eye on for ages where you can premake a batch mug cake mix with the mct oil powder and then when you want one all you need to do is add an egg.
Not only are these swaps lower in carbs, they’re ALL more nutrient dense than their higher carb replacements!

Another super full plate 😩. Such a huge portion. Carb eater assumes I have to eat loads because I don’t have carbs, lol. But I could eat a quarter of this and be more than satisfied. I left some for the following day. 🥑🥦🍄🍗
