🥟LASAÑA DE CARNE Y VERDURAS 🥟. No se si os lo comenté alguna vez pero la lasaña es uno de los platos súper 🔝🔝en mi casa.
Y es que es ideal para llevar en el tip pero al trabajo y que sin duda triunfa entre los más pequeños de casa.
🔅600 gr de carne (baja en grasa).
🔅1 cebolla picada.
🔅4 zanahorias picadas.
🔅1 pimiento rojo.
🔅400 gr de tomate frito.
🔅2 cdtas de orégano.
🔅2 cdas de ajo.
🔅2 cdas de albahaca.
🔅2 cdtas de especies italianas.
🔅1 cdta de pimiento De la Vera.
🔅una pizca de pimienta.
🔅1/2 taza de agua.
🔅1 cdta de sal.
🔅queso de Cabra rallado o en polvo.
Sofríe la carne hasta que deje de estar rosa.
Agrega la cebolla, zanahorias, pimiento y saltea durante cinco minutos.
Agrega el tomate , remueve y cocina por dos minutos.
Agrega todas las especies y cocina un par de minutos, que se integren los sabores.
Agrega el agua y cocina hasta que se evapore el agua.
Prepara la bechamel, yo cocino una cucharada colmada de harina de sarraceno o espelta ( puedes utilizar la de tu preferencia ).
Cuando esté tostadora agrega poco a poco leche ( yo utilizo de soja).
No pares de remover, añade una pizca de pimienta y nuez moscada y deja espesar según tu gusto.
Y ahora monta la lasaña en una fuente para horno, coloca una placa de lasaña, cubre con la mezcla, espolvorea queso de cabra y repite el procedimiento hasta terminar la mezcla.
Por último cubre con una placa de lasaña, la bechamel y un poco de mozzarella y orégano.
Hornea a 220 grados durante 20 minutos.

* 1 onion quartered and sliced
* 1 clove garlic crushed
* 750 g ground/mince beef
* 60 g cream cheese full fat
* 3 slices bacon diced
* salt/pepper to taste
Cheats Cheese Sauce
* 3 eggs - medium
* 125 ml heavy cream
* 100 g shredded/grated cheese
* 2 tbsp mustard
* 2 gherkins/pickles sliced
* salt/pepper to taste
* 50 g shredded/grated cheese to sprinkle over
1. Fry the bacon pieces until cooked then remove and set aside.
2. Fry the onion, garlic and beef until thoroughly cooked. Add salt and pepper to taste, stir through the cream cheese.
3. Pour the beef layer into the baking dish. Sprinkle the bacon pieces over.
Cheats Cheese Sauce
1. Mix the eggs, cream, shredded/grated cheese, mustard, salt and pepper together. Pour the cheese sauce over the beef and bacon.
2. Place slices of gherkins/pickles all over the top then cover with the remanning shredded/grated cheese.
4. Bake at 180C/350F for 15 minutes until the cheese is golden and crispy.

happy Monday friends! Trying to shine my positive light even thooooough this cold front is NOT my friend #warmweathergirlforlife
I threw together my favorite way to get in lunch which is a tuna collard green wrap. Yes, I do them ALOT. No, I don’t get sick them one bit.
When I was in college, I honestly had very little money to put towards food so I would eat the same thing every day. Even now 5-6 years later, I can tell you exactly what I ate back then - 2 scrambled eggs for breakfast sometimes with a banana, tuna with a green salad for lunch, and gluten free pasta with steamed vegetables usually broccoli for dinner. I’ve never had an issue with food boredom because I didn’t have any other choice. .
If you feel bad because you see people on social media with their variety of perfectly curated meals and you can only afford a few simple things, please don’t. Feed your body nutrient dense food that’s all that matters. Stay away from processed foods and fast food. Simple, I have found, seems to work best. .
Now I’m going to cozy up with my dogs and finish my lectures for the day

it’s pumpkin spice season, and although it’s fun to be as basic as pumpkinly possible 🎃remember you are unique and you have something special that no one else does ✨there’s something about you that’s different, something unique that you can do for a greater good. If I challenged you to use your super power to help someone else this week, what would you do?
I might bore someone by explaining why pumpkin is not just fun but also very nourishing, But perhaps you’d rather just enjoy this pumpkin pie smoothie 🙃
In my bowl 👇
1/4 cup pumpkin purée
1 cup frozen cauliflower
1/2 frozen banana
1 scoop vanilla protein powder of choice ( I used @livwell_nutrition )
1/2 tbsp @dvashorganics date nectar
1 tbsp nut butter (I used @wild_friends )
A sprinkle of cinnamon and @traderjoes pumpkin pie spice
1/2 cup ish cashew milk
Blended until smooth and topped with 1 @emmysorganics dark cacao coconut cookie crumbled, a handful of @juliesreal grain free granola, pumpkin seeds, & coconut shreds
Happy Monday guys! I had to share this recipe because these basically taste like pumpkin pie bites.
Warning: triple the recipe if you need them to last you more than 3 days 😂
1/2 C coconut flour
2 Tbsp coconut oil
1/2 C pureed pumpkin (unsweetened)
1/4 C tahini
3 Tbsp maple syrup
2 tsp cinnamon
1/4 C sesame seeds
1/3 C vanilla protein powder
1 Tbsp pumpkin pie spice
3 Tbsp hemp seeds
In a bowl combine pureed pumpkin, coconut flour and coconut oil. Mix well. Then add the rest of the ingredients and mix well until doughy. Roll into small 1 inch balls and then roll in sesame or hemp seeds to coat. Store in airtight container in fridge for up to 5 days or freezer for a month!

With the start of term 4 we have different times for Miss 9’s after school activities, with last night being the first night of Development Tumbling from 5 - 630pm, which is a late one for us. Thank goodness for @bargainboxnz and the flexibility to be able to switch your meals around to what suits best on these kinds of occasions! Last night we had the Chilli Con Carne, delish and not necessary low carb but clean as a whistle and full of good carbs. Lower carbified for me with cauli rice (which I surprisingly found at my local Countdown!) but delish brown rice for them. Plenty leftovers for lunch today so winning all the way we reckon!!
PB + Chocolate. Name a better duo, I’ll wait
Halloween’s quickly approaching 🎃 and I decided to make my rendition of my favorite candy: Reese’s. These PB-stuffed, chocolate-covered dates are the perfect healthy substitute for the real deal. What’s your favorite candy that you’d want a healthy version of?
Pitted dates (I bought some from @wholefoods that had the tiniest little hole at the top)
Using a piping bag (or make your own by cutting a hole in the corner of a plastic sandwich bag) to squeeze @justins honey peanut butter into the dates
On stovetop, heat 1/2 cup of @enjoylifefoods mini chips and 1/3 cup of @kitehillfoods plain yogurt until melted and fully combined
Use a fork to dip dates in chocolate, cover both sides completely
Allow dates to dry completely on a wire rack (I refrigerated them overnight to make sure the chocolate stuck)
*Paleo Chicken and Broccoli*
This #instantpot recipe by @lexiscleankitchen is my husband’s favorite. I think it gets better each time I make it.
I follow the recipe exactly until after the steam is released. Then I make several changes.
1️⃣ - Remove the chicken.
2️⃣ - Change to sauté mode and stir in the thickening slurry. It thickens pretty quickly.
3️⃣ - Add back in the chicken and the steamed broccoli florets *that I cooked separately.* I’ve tried cooking as directed, and it just doesn’t turn out as good. I use a microwave steam bag, so it’s still super quick and easy with nothing extra to clean.
Serve over rice 🍚 or cauli rice. It’s delicious! My husband just can’t get enough! He adds hot Sriracha.
Sorry for those of you who don’t have an instant pot. I’m sure this can be made without one. Maybe in a slow cooker until chicken is done and then pour sauce into a small pot and thicken on stove with the slurry? Let me know if you try.

BROCCOLI CAULIFLOWER & BACON w/CREAMY SAUCE
* 150g Broccoli
* 150g Cauliflower
* 3 Strips back bacon
* 3 tbsp Butter
* 1 tsp Nutmeg
* Salt & Pepper to taste
* 1/2 cup Fresh cream
* 1/3 cup Grated white cheddar
* A sprinkle of cayenne pepper
* Cook bacon till nice and brown (or crispy - what every you like) and set aside to cool
* In the same pan, add butter
* When the butter is melted, add salt, pepper and nutmeg and sauté for a minute or so
* Add broccoli and cauli pieces - evenly spaced - and cook for about 2-3min
* Turn the broccoli and cauli to get a nice coat of the butter and spices and brown for another few minutes
* In the mean time, cut up the bacon into snippets - sizes are up to you
* Add cream to the broccoli and cauli and cook for another 2-3 min until heated through
* Add bacon and sprinkle cheese overtop, as well as a little cayenne pepper and cover with a lid
* Let it simmer for a bit until cheese has melted (1-2min)
* Optional: Remove lid to let cream sauce reduce a little more
Finally tried some biltong, South African style air dried beef jerky. This is the slab variety, also comes in prepacked sliced packs. Ib like this style because you can cut it to the thickness that you like. Taste is slightly tangy with a good amount of salt.
There are "natural flavors" which area listed in the ingredients, which I don't like, and makes it not compliant for WLC performance level.
But overall a good protein snack and alternative to jerkys which tend to have a bunch of sugar.
Made a big pot of fall harvest detox soup today for lunch. It’s creamy (even though it’s dairy free), super nourishing and seriously tastes uhhhmazing. Little guy polished off two bowls and asked for a third 💪
How I made it: sauté chopped carrots, onion, cauliflower and celery in a generous amount of coconut oil (or avocado oil) for a couple minutes in a stockpot. Add chicken bone broth and let simmer until the veggies are tender. Pour 2/3 of the soup into a high speed blender and blend until smooth. Pour back into the pot with the rest of the soup. Add chopped fresh garlic, cooked meat if you’d like (I used grass-fed ground beef), chopped greens, (baby kale, chard and spinach), and whatever seasonings you’d like. I added herbs de Provence, Italian seasoning, turmeric powder, a dash of curry powder, fresh ground pepper and pink Himalayan salt.
Ladle soup into each bowl and let cool for a few minutes. Then add a little splash of acv or raw sauerkraut juice. If you haven’t tried this, you need to. It adds beneficial probiotics, and the slight tanginess tastes delicious! Finally, sprinkle with sprouted pumpkin seeds. Bon appétit!

A couple of weeks ago @pawzz_for_a_moment suggested to me that I could use #cabbage as a substitute for rice paper, since I was thinking of making some kind of veggie or spring rolls and I can't have rice paper. I'm happy to report that it worked out swimmingly!!
These rolls contain a veggie mix of carrots, broccoli, cauliflower, mushroom, and onion; almond and cashew fibre (from when I made nut milk yesterday); and leftover chicken. 😄😄😄 *Note: these are raw rolls. Cooked carrots spike up in sugar content. I also cannot have lettuce, so lettuce wraps are not an option
Top on the list of my favorite things to do is to make food that tastes amazing but also has some added health benefits. These chocolate banana muffins are a perfect example. They are gluten-free, grain free, Paleo, dairy free and we have made a vegan version as well with flax eggs. Both versions were delightful. 👉 #grainfree blueberry orange muffins: 1 cup almond flour + 1 Tbsp coconut flour + 1/2 tsp baking soda + 1/2 tsp pumpkin pie spice + pinch salt + 1 egg white + 1 egg + juice & zest of half small orange + 1 Tbsp maple syrup + 1/2 tsp vanilla + 1/4 cup almond milk + 1/2 cup bluebs. Bake @350 for 18-20 min.
