Creamy peanut butter oats topped with @nugonutrition Slim Crunchy Peanut Butter bars and fruits! Who says vegans don’t get enough protein? This delicious bowl of goodness has 28 grams of plant based protein, plus fiber, vitamins and minerals. I am ready to conquer whatever comes my way this week! Happy Tuesday my wellness warriors!
Creamy Peanut Butter Oats
Servings size 2
Cook 3/4 cup of steel cut oats with
1 1/2 cup water until oats are soft about 8 min. Add 1/2 tsp of salt.
Stir in 1/2 cup almond milk, and simmer for 5 min. Add 2 tbsp of peanut butter to the oats and stir well. Add 1 tbsp of maple syrup to the oats optional. Serve the oats in a bowl topped with fruits, chopped NuGo Slim Crunchy Peanut Butter bars, cocoa nibs and dollop of peanut butter for extra creaminess. .

As a former runner and cardio bunny, my back/upper body was certainly never something that was “strong”. I had zero definition, no way could do a pull up and was often referred to as having straw arms (ok, so the arms are still a work in progress 🙈). Proud of where my strength has improved, defs got some solid definition going on and again, the arms, well they’re a bit more stubborn haha but slowly growing 💪🏼
Still more to come as the goal right now is putting on some lean kgs, building on my strength and chasing those gains 😈 3 weeks in new program with coach @lmtlsstraining and excited for how things are ticking along 😝

It’s funny how we don’t appreciate things until they’re gone. Everyday I am trying to live in the moment and be happy with where I am. Just a few things I’m grateful for lately to remind myself, this too shall pass, whenever anxiety starts to creep in.

Don’t get me wrong-I know I am truly blessed to have three healthy kiddos in my life, and feel there’s no greater job in the world than raising my babies.
But although it’s the BEST and most rewarding job in the world—it’s also the most challenging. And demanding. And exhausting. You name it...
Many days, there are times I feel I may legit lose my mind. I question if I’m doing things right. The teacher in me “reflects” on what I can do better-how I can handle situations that come up more effectively. There’s always the good and bad days where at the end of the day, you either feel like you’re finally getting this whole parenting thing down, just to turn around and feel like a failure again.
I used to let these “bad” days really get to me, and would get stuck in a mental rut. But I’ve learned that it’s not just me-that’s parenting! And rather than carry the load from one bad day into the next-to look at each day as a fresh new start. And MOST importantly, to do something for ME each day, as a chance to refresh and recharge for the next. .
Lesson: Trying to do it all and running yourself ragged is a guaranteed way to burn yourself out, which helps nobody, especially your loved ones. Your “me time” doesn’t have to be anything fancy...even just ten minutes of something that allows you to relax and come down from it all is better than nothing. You can’t pour from an empty bucket.🙄
Three kiddos later, this couldn’t ring more true. I make a point to take a break from the chaos each and every day, often in the simplest of ways (📚☕️🍷🏃🏼♀️📺), and have learned to ӀíՏԵҼղ to my body and give in when I’m trying to do too much. It’s all about balance.⚖️
