Thanksgiving is a time for us to give our collective thanks to our forefathers. Today in an empty but oh-so-welcoming National Gallery I wanted to give thanks to the mother who came right before me. No matter if one is immobile, non verbal and deeply asleep..every moment counts because the ears of the soul remain awake and alive, ready to receive the love and gratitude from those they brought into the world.
October is here! Fall season is here...pumpkin posts will explode! Lol. It's #NationalPumpkinMonth 🎃🎃🎃 what's your favorite pumpkin dish? Every thanksgiving I make this stuffed pumpkin for the family. You can basically do it whichever way you want! I prefer a tart filling with maple syrup for some sweetness. I use a small sugar pumpkin, hollow it out (you can save the seeds and toast them!). Then I stuff it with pecans, sliced apples, whole cranberries, blueberries, apple sauce and diced pineapples! Put it on a baking sheet and cook it in the oven towards the middle-lower rack on 350 until it's soft but not caving in. Then just scoop out and serve with dessert!!
