Had a beautiful ending of my high school career today at nationals competing against the best hammer throwers in the country. I placed 9th IN THE NATION, just missing finals by 6 inches and All-American by 2 feet. After the hardest season of my life, having no home facility to practice at and hardly getting the chance to throw at other schools, but still having to compete against people that throw everyday. I came to nationals with a clear mind and competed very well throwing a seasons best. I’m proud to be #2 of all time, 2 inches from the Section 1, Westchester county, and Mount Vernon High School record with a throw of 161”9 feet. These past 4 years have shown me so much and molded me into the great athlete that I am today. Through all the hardships, setbacks and losses, I have never given up and remained solid through it all. Which is what has carried me so far and allowed me to even compete at a national level 5 times since 10th grade, be the Eastern State Championships and Regional USATF record holder in the Hammer Throw. Huge thanks to my coach, Charles Winslow! Without him none of this would even be possible. So cheers to the next 4 years of my track career competing on the D1 level at Morgan State University on a full athletic scholarship ❤️
You’ll always be my hero, Dad. You’ve opened my eyes to other cultures with travel, taught me to never take no for an answer, and gifted me with the power of thinking positively. You’re my favorite and despite the evidence of photo #2 , we all know I’m yours ❤️ #HappyFathersDay

This insanely creamy Spinach Lemon Cauliflower Rice Risotto is all things delicious. It’s made with sauteed cauliflower and a healthy cauliflower cream sauce (dairy-free or regular, your choice!) and has lots of fresh lemon flavor. Top with some spicy garlic prawns.
1 tablespoon olive oil
1 medium onion, finely minced
36-ounce Cauliflower “Rice”
1 cup vegetable broth
5 ounces baby spinach
OPTION #1 : CHEESY LEMON CREAM SAUCE
1 cup milk~1 cup white cheddar cheese ~1/4 cup grated parmesan cheese~1 teaspoon sea salt ~Juice of 1 lemon
OPTION #2 : DAIRY-FREE LEMON CREAM SAUCE 1 1/2 cups vegetable broth~1 cup raw cashews or pine nuts 1 tablespoon nutritional yeast~1 teaspoon sea salt~Juice of 1 lemon
THE GARLIC CHILI PRAWNS 1 tablespoon olive oil or butter 2 garlic cloves, very finely minced 1 lb. uncooked, peeled prawns (tail on or off, your choice) 1/2 teaspoon paprika A pinch of chili flakes and sea salt
Heat the oil in a large frying pan over medium heat. Add the onion and cook until it is transparent about 3-4 minutes. Add the cauliflower and broth and bring to a boil. Cook the cauliflower, stirring occasionally, until it is soft, about 8 minutes. Remove the pan from the heat. If you’re using the Cheesy Lemon Cream Sauce: Remove 2 cups of the cauliflower and add it to your blender with the milk. Blend on high until smooth. Add the cheddar, parmesan, sea salt, and lemon juice and blend again until the cheese has melted. If you’re using the Dairy-Free Lemon Cream Sauce: Remove 2 cups of the cauliflower and add it to your blender with the cashews, nutritional yeast, sea salt, and lemon juice and blend on high until smooth. Add the spinach to the cauliflower rice and put the pan back on the heat.
